An ad on TV sparked the idea for this recipe, and its become a family favorite. I usually serve with fettuccini and Italian bread. It makes a very filling and delicious meal. It also is elegant enough to serve for company.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine 1 1/2 cup Italian cheese blend, garlic, basil, and oregano in a bowl. Combine Parmesan cheese and bread crumbs in a separate bowl.
- Cut one side of each chicken breast through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book. Lightly pound chicken to flatten. Fill each chicken breast with Italian cheese blend mixture and close like a book over the filling. Coat the outside of each chicken breast with egg; press bread crumb mixture over egg layer to coat each chicken breast. Arrange chicken breasts in a 9x13-inch baking dish.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Pour spaghetti sauce over cooked chicken; top with 1/4 cup Italian cheese blend. Bake until sauce is bubbling and cheese is melted, about 5 more minutes.

ITALIAN HAM-AND-CHEESE STUFFED CHICKEN BREASTS
This is a VERY EASY dish to make, I promise. Very elegant dish, as well, and with only about 250 calories per serving. I HIGHLY recommend using good quality prosciutto and Muenster for this. For novice cooks, if you freeze the chicken breasts for a bit before slicing them, they are MUCH easier to slice.

Steps:
- Slice chicken breasts horizontally without cutting all the way through; open so breasts are flat. Place between 2 pieces of plastic wrap; pound gently with flat side of meat mallet.
- In small bowl, stir together parsley and mustard; spread over half of each chicken breast. Top each with half slices of cheese and prosciutto. Fold breasts to enclose stuffing; pressing edges together to seal. Sprinkle with salt. Place flour on plate; dip chicken in flour, tapping to remove excess.
- Heat oil in large nonstick skillet over meium heat until hot. Add chciken, cook 6-10 minutes or until golden brown, no longer pink in the center, and juices run clear. Place of serving platter.
- Increase heat to medium high. Add wine to skillet; cook 30-60 seconds until slightly reduced, stirring to scrape up any browned bits from bottom of skillet. Pour over chicken.

STUFFED ITALIAN CHICKEN WITH SUN-DRIED TOMATO PESTO

- For the roasted tomatoes: Preheat the oven to 375 degrees F. Line a rimmed baking sheet with parchment.
- Arrange the tomatoes cut-side up on the prepared baking sheet. Sprinkle with the salt and pepper and drizzle with the olive oil. Bake for 15 minutes. Set aside and leave the oven on.
- While the tomatoes roast, make the pesto: Combine the sun-dried tomatoes, basil, Parmesan, pine nuts, garlic, red pepper flakes and salt in a food processor. With the machine running, stream in the olive oil and process until the pesto is emulsified.
- For the chicken: Spread 1 tablespoon of the pesto over each chicken breast, sprinkle with Parmesan and then top each with 2 slices of the provolone. Wrap 3 slices of the prosciutto around each chicken breast and the toppings.
- Place the chicken breasts on the same baking sheet with the roasted tomatoes and bake for another 20 minutes. Set aside.
- For the salad: Toss the arugula with the extra-virgin olive oil and lemon juice in a large bowl.
- Divide the tomatoes among plates, top each with the chicken and the arugula salad. Enjoy!

- Preheat oven to 350 degrees. Toast pine nuts 5 minutes, until lightly browned. Reserve.
- Put washed spinach in skillet, cover. Steam about 2 minutes. Place in strainer, rinse with cold water and squeeze as much liquid out as possible. Chop medium fine.
- Heat butter in skillet, saute shallots until soft.
- Increase oven to 375 degrees.
- Butter a shallow baking dish.
- Mix pine nuts, spinach, shallots, ricotta cheese, egg yolk and pepper.
- Pound chicken breasts slightly.
- Place 1/.2 slice prosciutto on each breast, followed by 1/6 of filling. Fold in half. Place in buttered baking dish.
- Mix melted butter and lemon juice. Spoon over chicken breasts. Bake, basting occassionally, for 30 minutes (or until tender). Remove to platter and keep warm.
- Make sauce: Melt butter in skillet, saute mushrooms 3 minutes. Remove mushrooms.
- Add stock to skillet, boil until rediced to 1/4 cup. Add wine, boil until reduced to 1/2 cup. Add cream, boil until reduced to 3/4 cup.
- Return mushrooms to sauce.
- Add whatever juices have accumulated in chicken dish to sauce. Bring to boil, stirring. Add basil.
- Serve chicken breasts on platter. Pass sauce separately.

- Preheat oven to 350°F.
- Place a 10-inch nonstick skillet over medium heat until hot. Coat skillet with cooking spray, add sausage, and cook 3 minutes or until browned, stirring to break.

- Heat oven to 220C/fan 200C/gas 7. Beat the olives or sundried tomatoes, garlic and almost all the herbs into the cheese, then season. Cut a slit along the side of each chicken breast, then use your knife to open it out into a pocket.
- Stuff each breast with a quarter of the cheese mix, then press to close. Lift onto a greased baking tray. Season the top of the chicken, then overlap tomato slices over the top of each piece of chicken. Season, then scatter with the remaining herbs. Drizzle with olive oil.

ITALIAN STUFFED CHICKEN BREAST WITH A MARSALA SAUCE
Yet another experiment and another success I am pleased to say. This is very easy to do and tastes delicious, the only fiddly thing is tying it with the kitchen string and I hate that anyway. Well actually that's not entirely true, it is more if I am stuffing something with cheese as you have to get the string as tight as possible to stop the cheese from melting out. Anyway enough about kitchen string and more about the dish. Feel free to serve it anyway you want I served mine over celeriac mash which was a really lovely accompaniment, but regular mash would be fine, or just vegetables if that is what you are in the mood for. I only made this for 2 so I hope I have guessed right on the amount of cheese, please adjust if this is not enough.

- Pound chicken with a meat mallet until it is close to the same thickness all over about 1/4 inch.
- Lay a slice of prosciutto over breast, 2 if they are thin, top with two sage leaves, laying them top to bottom down the centre of the breast. Distribute cheese equally among the breasts again lay it top to bottom down the centre of the breast.
- Fold breast over to join, secure with kitchen string at close intervals, tying as tightly as you can, to prevent cheese from melting out of the chicken breast during cooking.
- Heat a small amount of olive oil in a pan, add chicken breasts and brown on both sides to give the breast a nice rich colour.
- Transfer breasts to an ovenproof dish and finish cooking in a pre-heated oven 180c. It will take about 30-40 Min's depending in the size of the breasts.
- Sauce.
- Add 1 cup of Marsala, 2 teaspoons chicken stock, heat through, add 1/2 cup reduced fat cream and the double cream, mix a little water with the cornflour add a little at a time, to thicken, add pepper to taste and stir in tarragon.
- To serve: Place a couple of spoonfuls of mash on a plate, slice chicken, and arrange over the top drizzle sauce over.

- Remove casing from sausage; crumble sausage. Heat a large nonstick skillet over medium-high heat. Add sausage, onion, and celery; sauté 5 minutes or until sausage is browned and onion is golden. I got this recipe from a book that was at the check-out line at the grocery store. I leaf through them while waiting and if there are more than four good-looking recipes, I buy it. - Place the bread crumbs in a large resealable plastic bag.
- Place the chicken between two pieces of wax paper and pound the chicken to flatten a little.
- Add this to the bag of crumbs and shake to coat.
- In a large skillet, over medium heat, brown the chicken in the oil.

- 1. Preheat the oven to 400 degrees
- 2. Marinade the chicken breasts in 1/2 cup of italian dressing for at least 30 minutes, I have did it as long as a day before cooking.
- 3. Take the casing off the sausage link, put the sausage in a frying pan and brown the sausage. Then add the chopped pepperoni and chopped onion and cook for about 5 minutes longer. Drain the grease, and mix all of the cheese with the rest of the stuffing.
- 4. Take the chicken breasts out of the marinade and cut a slight incision in the thickest part of the chicken breast.
- 5. Take a regular spoon and start stuffing the chicken breasts. Be sure not to overfill them. (usually takes about 3 or 4 spoon fulls) Then take a tooth pick to seal the chicken breast.
- 6. Place the chicken breasts into a baking dish and then pour the remainder 1/2 cup of italian dressing over the chicken breasts, place some aluminum foil over the baking dish and put in the oven for approximately 1 hour.
- 7. Take the chicken out of the oven, and take the aluminum foil off, baste the chicken in the italian dressing left in the pan and continue to bake them for 15 minutes until golden brown.

- Spread out sheet of cling film on counter top. Put chicken breasts on top and cover with another sheet of film. Now bash the chicken with rolling pin or meat mallet until about 1/5 inch thickness. Season with pepper/salt.
- On another piece of cling film, layer prosciutto so the slices slightly overlap on the edges in a rectangular shape.
- Put 1 oz gorgonzola on each breast, roll up tightly, trying to tuck the cheese in a way so it is no longer exposed. Transfer rolled up breast onto proscuittolayer. wrap prosciutto tightly around breast, and wrap entire package in the cling film. Repeat for 2nd breast. Transfer to freezer for 5-10 minutes until slightly firmed.

- Freezing Day Flatten chicken breasts to 1/8 inch thickness. Sprinkle chicken with salt, pepper, thyme, and marjoram. Wrap each mozzarella stick with 1 slice of prosciutto. Place 2 sun-dried tomatoes and 1 wrapped mozzarella stick in center of each chicken breast. Roll chicken breasts around filling. Wrap each chicken breast individually with plastic wrap, place in freezer bag and freeze. Reheating Instructions Thaw completely. Unwrap chicken breasts, place close together in baking dish, and baste with butter. Bake at 350 degrees for 35-40 minutes, basting every 15-20 minutes. Do not overbake, as chicken will become tough. Bake just until chicken is white and juices run clear. While chicken is baking, prepare tomato cream sauce. For sauce: In a small saucepan, melt butter or margarine. Add tomato paste and blend until smooth. Stir in flour, garlic, basil (if using dried), salt, and pepper. Add cream or milk all at once. Cook and stir over medium heat until more. Makes approximately 1 cup of sauce.
ITALIAN STUFFED CHICKEN
I created this one evening when I wanted to make a romantic meal. It's not very difficult to make but the stuffed chicken is beautiful. Serve on a bed of spinach or with a lovely green salad on the side.

- Heat a little olive oil in a frying pan and sauté half of the chopped onion until soft.
- Add the spinach and continue cooking over a medium heat, adding a touch of water if needed, until the spinach is wilted.
- Take off the heat and let cool for a moment, before stirring in just over half of the mozzarella cheese.
- Cool until you can comfortably handle the mixture.
- Meanwhile, cut a slit lengthways along each chicken breast but be careful not to cut them in half.
- You want to end up with a little pouch in each one.
- When the spinach mixture is cool, stuff each breast with as much of the mixture as you can.
- You may not use it all.
- Cover the chicken with some cling film and set in the fridge while you make the sauce.
- Heat some more olive oil in a saucepan and sauté the remaining onion and jalapeno pepper until soft.
- Add the chopped tomatoes, water, stock cube and oregano.
- Simmer for about 10 minutes until the flavours blend and the mixture starts to thicken.
- Stir in the tomato paste, season with salt and pepper and let simmer a few minutes more until you have a fairly thick sauce.
- Preheat the oven to 180 C or 350 degrees F.
- Put enough sauce in a casserole dish to cover the bottom.
- Lay in the chicken breasts and then cover with the remaining sauce.
- Bake for 40-45 minutes, then pull out of the oven briefly to scatter the remaining mozarella cheese on top.
- Turn on the grill and cook just until the cheese is bubbling and browned.
