ITALIAN DRESSING SEASONING DRY MIX

Italian Dressing Seasoning Dry Mix image

This is a delicious all-purpose dry seasoning that is good in spaghetti sauce, chicken and dumplings, in pasta salads, or sprinkled on fresh, ripe sliced tomatoes. It also makes a good Italian Salad Dressing for salads or marinade. Omit salt if you like.

ITALIAN ESSENTIALS: PIZZA DOUGH SEASONING MIX

Italian Essentials: Pizza Dough Seasoning Mix image

I think that we can agree that the pizza crust can make or break a good pie. Whether it is the crispness of a thin-crust, or the doughiness of a thick crust, the dough is an important part of the experience. Years ago, I came up with a combination of dry spices that I add when making pizza dough. Not a lot, but just enough to...

PLAN/PURCHASE
THE SPICE MIX
1 Tbsp dried oregano
1 Tbsp nutritional yeast
1 Tbsp dried basil
2 tsp dried dill weed
2 tsp garlic powder
2 tsp dehydrated onions crushed to a powder
1 tsp black pepper, freshly ground
1 tsp dried parsley
1/4 tsp white pepper, freshly ground
1/4 tsp salt, kosher variety, fine grind
1/4 tsp mustard powder, i prefer coleman's
OPTIONAL INGREDIENTS
1/4 c powdered milk
1 Tbsp dried marjoram
1 Tbsp dried rosemary, crushed
1 Tbsp crushed red pepper flakes

Steps:

  • 1. PREP/PREPARE
  • 2. OPTIONAL INGREDIENTS Many pizza makers add a bit of powdered milk to their dough. It mellows out the flour taste and makes for a more delicate crust. The marjoram and rosemary just give it a bit more of an Italian flavor, and the pepper flakes are for some kick.
  • 3. Storage of homemade condiments and spices Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am making a dry spice, I love to use old spice bottles that I have run through the dishwasher. If I am doing homemade sauces, I love using Weck jars. They are all glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, and type in "Weck Jars" and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. If properly stored, this spice mix should last 6 - 8 months.
  • 4. Gather your ingredients (mise en place).
  • 5. Add all the ingredients together, and then store, as mentioned above.
  • 6. Make your pizza dough, then add a teaspoon or two of this seasoning to the dough as you are kneading it.
  • 7. PLATE/PRESENT
  • 8. Bake your pie. Enjoy.
  • 9. Keep the faith, and keep cooking.

ITALIAN SEASONING MIX (SALT FREE)

Italian Seasoning Mix (salt free) image

This is the recipe I keep on hand and use in many dishes...Italian or not. Most recipes I found call for Marjoram. I always forget to pick it up so my recipe does not use it. I also don't add salt but feel free to use them in yours. And as always adjust to fit your taste.

COPYCAT DRY ITALIAN SEASONING AND DRESSING MIX

Copycat Dry Italian Seasoning and Dressing Mix image

This is a fabulous seasoning and herb mixture that can be mixed with 2/3 cup of oil and 1/4 cup cider or red wine vinegar and 2 tablespoons of water for a tasty salad dressing. I use it more often than not, for a seasoning on pork chops, roasts, chicken and vegetables. Yesterday I used it as a brine seasoning when preparing pounded out boneless chicken breasts, it was very successful. NOTE: I use 2-1g packages of Splenda instead of sugar, your choice. You will want to double up on the recipe once you have used it a couple of times!

HOMEMADE ITALIAN SEASONING MIX

Homemade Italian Seasoning Mix image

My family loves Italian dishes. I made this spice mix recipe for them to have, so they don't have to always ask me what they should use. When I make this up, it is a big help to have it on hand. If it's all gone, it's easy to refer them to this recipe to make some more! Also, good for kids moving away for home to have as well. I...

Number Of Ingredients 9

1/2 c onion, dried or 1/4 cup of onion powder
1/2 c garlic powder
1/2 c basil, dried
1/4 c oregano, dried
1/8 c parsley
1/8 c marjoram, dried
1/8 c thyme, dried
2 Tbsp rosemary, dried
2 Tbsp sage, dried

Steps:

  • 1. Put all of the above ingredients into a labeled Zip-Lock bag (name and date packed). Seal it up tight. Shake well to combine. On the outside of the bag make a note that spices will be better if they are rubbed together before being added to the meat/sauce/bread, etc. Enjoy!
  • 2. WHAT I DO: I save spice containers; wash and dry them, their little sprinkle tops and their lids. Then, I pour the mix into one that I have labeled Italian Seasoning, with the contents and date.If you want, you can make nice labels... Refill from Zip-Lock bag when empty!! This can be dressed up to make a great gift too!
