SEASONING FOR GROUND PORK (ITALIAN-STYLE SAUSAGE)
This recipe is to be used in place of Italian sausages without the casings, the amount of spice blend is good for 2 pounds of ground pork, I most always add in an a small onion and 2 tablespoons fresh garlic to the pork mixture in place of the dried, you might want to adjust the seasonings to suit taste, and for spicy add in 1-2 teaspoons crushed chili flakes or to taste --- if desired you may cover and refrigerate the uncooked pork mixture overnight to blend the flavors even more!

- Dissolve salt and sugar in 1 quart of water in a bowl. Add meat and let stand 45 minutes. Rinse, then pat dry.
- Meanwhile, in a small pan, reduce orange concentrate by half over low heat. Stir in garlic and Italian seasoning. Brush pork with glaze and set aside.
- Either build a charcoal fire in half the grill or turn gas grill burners on high for 10 minutes. Lubricate hot grill rack with an oil-soaked rag using tongs.
- Place tenderloins on hot grill rack and close lid; grill until well-seared, about 7 minutes. Turn meat and close lid; grill until well-seared on second side, about 6 minutes longer. Turn off gas grill (or move meat to the charcoal grill's cooler side) and let tenderloins sit in covered until the internal temperature reaches 145 degrees (63 degrees C) on a meat thermometer, about 5 minutes longer.

- 1. PREP/PREPARE
- 2. OPTIONAL INGREDIENTS Many pizza makers add a bit of powdered milk to their dough. It mellows out the flour taste and makes for a more delicate crust. The marjoram and rosemary just give it a bit more of an Italian flavor, and the pepper flakes are for some kick.
- 3. Storage of homemade condiments and spices Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am making a dry spice, I love to use old spice bottles that I have run through the dishwasher. If I am doing homemade sauces, I love using Weck jars. They are all glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, and type in "Weck Jars" and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. If properly stored, this spice mix should last 6 - 8 months.
- 4. Gather your ingredients (mise en place).
- 5. Add all the ingredients together, and then store, as mentioned above.
- 6. Make your pizza dough, then add a teaspoon or two of this seasoning to the dough as you are kneading it.
- 7. PLATE/PRESENT
- 8. Bake your pie. Enjoy.
- 9. Keep the faith, and keep cooking.

- Heat oven to 250 degrees. Toss herbs and seasonings in olive oil. Spread ingredients in a single layer on a nonstick pan. COPYCAT DRY ITALIAN SEASONING AND DRESSING MIX
This is a fabulous seasoning and herb mixture that can be mixed with 2/3 cup of oil and 1/4 cup cider or red wine vinegar and 2 tablespoons of water for a tasty salad dressing. I use it more often than not, for a seasoning on pork chops, roasts, chicken and vegetables. Yesterday I used it as a brine seasoning when preparing pounded out boneless chicken breasts, it was very successful. NOTE: I use 2-1g packages of Splenda instead of sugar, your choice. You will want to double up on the recipe once you have used it a couple of times!
