- In a small skillet, cook the sausage, onion and red pepper over medium heat until sausage is no longer pink; drain. Remove from the heat. Stir in the rice, basil, soup, water and 1/4 cup cheese., Transfer to an ungreased 3-cup baking dish. Cover and bake at 350° for 25-30 minutes or until rice is tender. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted.

- In 8-inch sauté pan, melt butter over medium heat. Add bread crumbs; toast 2 to 3 minutes, stirring frequently, until browned. Transfer to small bowl; set aside.
- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread rice evenly in baking dish. Top evenly with pork, followed by beans, bell pepper and onions. In small bowl, mix broth, Italian seasoning and salt; pour on top. Cover with foil. Bake 40 minutes.
- Stir cheese and whipping cream into pork mixture. Replace foil; bake 20 to 25 minutes longer or until rice is tender, pork is no longer pink in center and mixture is heated to at least 165°F in center of casserole. Stir; top with toasted bread crumbs and basil.

Inexpensive and easy to make...you can't beat that. Even my pickiest of eaters asks for 2nds. This recipe actually makes enough meat and sauce to freeze half and make the dish a second time saving even more money.

Steps:
- In large skillet heat oil. Add both the diced onions and diced green bell peppers along with the minced garlic, and half the salt and pepper and saute until the onions and peppers are soft.
- Add both the Italian sausage and ground chuck and brown until there is no more pink. While browning the meat make the rice to package instructions.
- Drain most but not all of the excess grease. Add the rustic cut tomatoes, beef broth, Worcestershire sauce and soy sauce and the remaining salt and pepper. Bring to a boil and cook for 10-15 minutes.
- Remove half the meat mixture and place in freezer bag to save for another time.
- Pour rice into large serving bowl and pour remaining meat mixture on top. Mix well then serve.

- Preheat oven to 325 degrees F.
- Saute sausage, onion and red pepper until sausage is no longer pink and the onion, celery and red pepper has softened.
- Drain off fat.
- Put sausage mixture in a 2 quart ovenproof casserole.
- Stir in rice, soup mix and water.
- Bake, covered, at 325 F.

- In a large skillet, cook sausage in oil until a thermometer reads 160°; drain. Cut into 1/2-inch slices. Return to pan; add onion and rice. Cook until rice is lightly browned. Stir in the red pepper, carrots, bouillon and water. Bring to a boil. , Cover and simmer for 30 minutes or until the liquid is almost absorbed, stirring occasionally. - Mix the rice and tomato sauce together place in a microwave safe casserole.
- Take the hamburger that is mixed with a little bacon drippings (this is ok because the hamburger was 90% lean).
- Layer the meat in next.
- Layer in the corn then layer the mushrooms.
- Then the corn then the bacon for flavor and decoration.
- Now the shredded cheese.
- Microwave on high 5 minutes or so until heated through and the cheese is melted.
- This sounds strange, so if you are a health nut remember that the hamburger was 90% lean and the bacon is for garnish so there is only a little (do not use bacon bits). Did you know you can also add chili beans as a layer if you want. The 1/2 envelope of onion soup might be used to add flavor to the tomato sauce if the sauce is a variety that is boring or bland. Use a little and taste to see if you want to add more or use none if not needed.
ITALIAN PORK AND RICE CASSEROLE
Steps:
- Sauce: Make sauce first. Saute onions and garlic in oil until golden. Add gravy: tomato sauce, mushrooms and parlsey. Simmer, uncovered, for 30 minutes.
- Casserole: Cut pork into 1/4 inch slices. Cut peppers into eighths. Sprinkle pork with salt and pepper. Saute pork (few pieces at a time) in oil until brown. When all are brown, remove last from pan. Add a little of the sauce to the pan drippins, stir well and return all to the sauce.
- In a 3-qt casserole dish arrange one half of the pork slices. Top with all the rice, which has been mixed with 1/2 of the sauce. Layer one half of the onions, then layer one half of the peppers. Add remaining pork, remaining onions and peppers. Sprinkle with salt. Pour on remaining sauce and bake at 350 degrees for an hour an a half.

- Put the chicken in the bottom of a 9×13 casserole dish. Sprinkle the rice, red pepper and parsley over the top. Sprinkle on a few frozen peas and carrots (if using). Spread the cheese evenly over the top. In a small bowl, combine the broth, chicken soup, oregano, basil, garlic and pepper. Pour evenly over the top of the other ingredients. Bake at 350 degrees Fahrenheit for 1 hour to 1 hour and 15 minutes. Let it stand for a few minutes before serving.

- 1. Cut chicken into pieces, cook with butter, soy sauce, and dressing to taste. Cook until done. Set aside. Dice vegetables and cook in enough butter mixture to cook. Boil rice and add italian dressing to coat. In 9x13 layer in order: Rice, Chicken, Vegetables, sour cream, then cheese. Repeat second layer. Bake at 350 degrees long enough to heat through.
