Meet the Cook: Back when I was teaching elementary school (I'm now a busy stay-at-home mom to our two youngsters, 7 and 2), my class would put together a Mother's Day cookbook. Many of the dishes are still my favorites - this one included. -Linda Wheeler, Harrisburg, Pennsylvania

4 large baking potatoes (8 to 10 ounces each)
2 tablespoons butter
1-1/4 teaspoons salt, divided
Dash pepper
1/4 to 1/3 cup milk
1 pound ground beef
1 small onion, chopped
6 bacon strips, cooked and crumbled
1/2 cup sour cream
1/4 cup shredded cheddar cheese

Steps:

  • Wash potato skins and prick with a fork. Bake at 400° for 60-70 minutes or until tender; cool. Cut a thin slice off the top of each potato. Carefully scoop out the pulp, leaving a 1/4-in. shell. In a large bowl, mash the pulp with butter, 1/2 teaspoon salt, pepper and milk; set aside. , In a large saucepan cook the beef and onion over medium heat until meat is no longer pink; drain. Cool 10 minutes. Add bacon, sour cream and remaining salt. , Spoon into potato shells. Top each with a fourth of the mashed potato mixture; sprinkle with cheese. Place potatoes on an ungreased baking sheet. Bake at 400° for 20-25 minutes or until heated through.

These potatoes are so filling. You can eat them as a side dish or a full meal. Creamy and cheesy, we couldn't get enough of these. Italian dressing mix adds a tangy flavor. The skin crisps up nicely while the middle remains wonderfully creamy. These are seriously delicious.

Number Of Ingredients 9

2 1/2 lb red potatoes
3/4 c sour cream
1 pkg Italian dressing mix
1/2 stick butter
16 slice turkey pepperoni; chopped
1/4 c green onion; chopped
1/4 c Italian parsley; chopped
1/2 c Italian blend cheese or mozzarella
2 Tbsp olive oil; light

Steps:

  • 1. Wash potatoes and prick with a fork. Microwave until just soft. Time will vary according to your microwave. Let cool.
  • 2. Cut potatoes in half and slice off just enough from the bottom so it will sit flat. Gently scoop out the potato center to leave a hollow potato bowl. Place potato pieces in a medium mixing bowl.
  • 3. Set aside 1/4 cup of the cheese and olive oil. Add the rest of the ingredients to the mixing bowl and blend together with a fork. Add salt and pepper to your taste. Put filling into hollowed out potato bowl.
  • 4. Pour olive oil in a large skillet, with a lid, over medium heat. Put flat side of potato in hot oil. Place lid on skillet and reduce heat. Cook for 15 minutes. Moving the potatoes halfway through cooking time. Sprinkle the remaining 1/4 cup of cheese over the top of potatoes. Place lid back on the skillet and cook an additional 5 minutes.
  • 5. The bottoms will be brown and crispy and the inside will be soft and creamy!

8 large potatoes
1/3 cup margarine or 1/3 cup butter
1/2 cup milk
1/2 cup sour cream
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons melted butter
1/3 cup chives, diced
cheddar cheese, for topping

Steps:

  • Preheat oven to 400 degrees F.
  • Scrub potatoes.
  • rub with a little vegetable oil to make skins softer.
  • Pierce skin with fork to allow steam to escape.
  • Bake at 400 degrees until tender for about 50 to 60 minutes.
  • Cool potatoes for 10 minutes.
  • Cut potato in half and carefully scoop out pulp, leaving shells intact.
  • In a large bowl, mash potatoes using a potato masher to remove lumps.
  • Heat margarine and milk until margarine melts and beat into potatoes.
  • Beat in sour cream, salt and pepper.
  • Spoon into potato shells and brush with melted butter.
  • Top each potato with cheddar cheese and chives.
  • Place in oven until cheese melts on top.

This Southern Italian Potato Recipe, with crushed tomatoes and sliced onions, is an easy Mediterranean side dish. Serve this baked potato dish with meat, chicken or fish.

Number Of Ingredients 12

3 pounds red potatoes (9 medium )
1 onion (thinly sliced)
28 ounces whole peeled canned tomatoes (796 mL can)
1 cup water
4-5 garlic cloves (minced)
2 teaspoons oregano (dried)
1½ teaspoons paprika
1½ teaspoons salt
⅛ teaspoon black pepper
4 tablespoons olive oil (extra virgin)
3 tablespoons Italian flat-leaf parsley (fresh and finely chopped)
pecorino romano cheese or parmesan cheese (to garnish, if desired)

Steps:

  • Peel and cut potatoes into wedges.
  • Place the potatoes in a large bowl of cold water while prepping the rest of the ingredients.
  • Thinly slice the onion. Set aside.
  • Mince the garlic. Set aside.
  • Preheat oven to 425° F (220° C).
  • Place oven grate on the lower center rack.
  • Empty the can of whole peeled canned tomatoes in a large bowl.
  • Add one cup of water to the can, swirl and empty contents in the bowl.
  • Hand crush the tomatoes.
  • Add the minced garlic, dried oregano, paprika and salt and pepper. Feel free to adjust seasonings. Combine together and set aside.
  • Drain the water from the potatoes.
  • Add the sliced onions and crushed tomatoes and combine.
  • Toss the sliced onions with the potato wedges in a large deep baking dish (10.5 x 14.75 inches).
  • Arrange the potatoes and vegetables in a single layer, in the baking dish.
  • Drizzle olive oil over the top.
  • Cover with aluminum foil and bake for about 45-60 minutes or until a knife can easily pierce through the potato. Gently move the potatoes to the baking pan.
  • Bake for another 15-20 minutes, without the foil or until most of the moisture has evaporated from the tomato sauce. Stir occasionally.
  • Transfer to a serving dish, garnish with fresh chopped parsley and serve.
  • OPTIONAL: Garnish with grated pecorino romano cheese or parmesan cheese.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Darlene Strohecker. Cooking time doesn't include time it takes to bake the potato.

4 baking potatoes
1/4 cup butter
4 ounces cream cheese
1/2 teaspoon garlic salt
1/2 teaspoon salt
1 teaspoon parsley flakes
4 slices cheese

Steps:

  • Bake potatoes until done.
  • When cool, cut in half and scoop out middles.
  • Place shells on baking tray.
  • Mix remaining ingredients with the scooped-out potato and mash.
  • Heap the mixture in the shells and put a slice of cheese on top.
  • Bake at 350 degrees for 25 minutes.
