PORK CHOPS ALLA PIZZAIOLA

Tomatoes, onions and Italian seasonings gives these pork chops a wonderful flavor all in one pot. It's and easy, low-carb, weeknight dinner ready in 30 minutes with few ingredients!

2 lbs bone-in pork chops (4)
3 tbsp extra virgin olive oil
1 1/2 cup onion (1 small onion)
4 cloves garlic
28 oz canned diced tomatoes with juice
1 tsp Italian seasoning
salt and pepper to taste

Steps:

  • In a large 3 inch deep skillet on high heat, add oil. Meanwhile, sprinkle both sides of pork chop with salt and pepper to taste.
  • Add pork chops to the skillet and brown on each side for 2-3 minutes.
  • Meanwhile, slice the onion thinly.
  • Remove pork chops and place on a plate. Add onions and garlic to the skillet and cook for two minutes.
  • Place pork chops back in skillet with onions and garlic. Pour tomatoes on top of the pork chops. Sprinkle with Italian seasoning and cover for 5 minutes. Remove lid and allow to cook for an additional 10 min uncovered.

2 thick cut bone-in pork chops (about 3/4 to 1-inch thick and approx 1-3/4 pounds total)
Salt and pepper, to taste
1 tablespoon olive oil
1 small zucchini, thinly sliced
1 medium red bell pepper, cored, seeded and thinly sliced
1 small yellow onion, thinly sliced
2 teaspoons freshly minced garlic
2 cups marinara sauce (or your favorite pasta sauce)
1 (14.5-ounce) can diced tomatoes with juices
Pinch crushed red pepper
1-1/2 teaspoons Italian seasoning
1 bay leaf
Fresh chopped parsley, for garnish (if desired)

Steps:

  • Season pork chops with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium high heat. Brown pork chops, cooking approximately 2 minutes on each side. Remove pork chops from skillet, place on a plate and set aside.
  • In the same skillet, cook zucchini, red bell pepper and onion until zucchini is crisp-tender (about 3-4 minutes), stirring frequently.
  • Add garlic and cook an additional 30 seconds.
  • Add marinara sauce, diced tomatoes, crushed red pepper, Italian seasoning and bay leaf. Stir to combine.
  • Return pork chops to skillet and coat with sauce mixture. Reduce heat to maintain a simmer, cover and simmer for 15-20 minutes, or until pork chops are fully cooked. Remove and discard bay leaf.
  • Serve topped with fresh chopped parsley, if desired.

1-1/2 cups uncooked penne pasta
1 pound ground pork
1/2 cup chopped onion
1 can (14-1/2 ounces) stewed tomatoes, undrained
1 can (8 ounces) tomato sauce
1 teaspoon Italian seasoning
1 medium zucchini, cut into 1/4-inch slices

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, cook pork and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, tomato sauce and Italian seasoning. Bring to a boil. Reduce heat; cover and cook for 5 minutes to allow flavors to blend., Drain pasta; add to skillet. Stir in zucchini. Cover and cook for 3-5 minutes or until zucchini is crisp-tender. Freeze option: Transfer individual portions of cooled pasta mixture to freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little tomato sauce if necessary.

1 teaspoon olive oil
2 cups sliced mushrooms
2 tablespoons olive oil
6 (3/4 inch thick) pork loin chops
2 cloves garlic, crushed
1 cup chopped onion
1 (14.5 ounce) can diced Italian tomatoes, undrained
1 teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup water, if necessary
1 large green bell pepper, cut in 6 pieces

Steps:

  • Heat 1 teaspoon olive oil in a skillet over medium heat. Stir in mushrooms; cook and stir until mushrooms are tender, 5 to 7 minutes. Transfer the mushrooms to a bowl and set aside.
  • Heat the remaining 2 tablespoons olive oil in the skillet over medium heat. Add the pork chops, browning on both sides, 7 to 10 minutes. Place the pork chops on a plate, then drain all but 1 tablespoon of drippings from the skillet. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Pour in the tomatoes, then season with basil, oregano, salt, and pepper. Transfer the pork chops back to the skillet; cover and simmer until the pork chops are tender and no longer pink in the center, about 45 minutes. Stir in some water if the mixture becomes too dry. Place the bell pepper on top of the pork, then add the reserved mushrooms. Continue to simmer until the bell pepper is tender, 5 to 10 minutes.

An Italian-style version of pork chops was one of the first recipes I tried making in the early years of my marriage. 2 medium green peppers, cut into 1/4-inch strips
1/2 pound sliced fresh mushrooms
1 tablespoon plus 1-1/2 teaspoons olive oil, divided
4 boneless pork loin chops (6 ounces each)
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
2 cups marinara or spaghetti sauce
1 can (3-1/2 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, saute peppers and mushrooms in 1 tablespoon oil until tender. Remove and keep warm., Sprinkle chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In the same skillet, brown chops in remaining oil. Add the marinara sauce, olives, remaining salt and pepper, and reserved pepper mixture. Bring to a boil. Reduce heat; cover and simmer until a thermometer inserted in pork reads 145°, 10-15 minutes. Let stand for 5 minutes before serving.
