Olive and Celery Salad with Roasted Red Peppers image

One 12-ounce jar roasted red peppers, drained and chopped
1 1/2 cups pitted olives of any kind (green, black, kalamata, stuffed with anything), chopped
4 celery ribs, thinly sliced
1 romaine heart, thinly sliced
3 tablespoons olive oil
2 tablespoons white wine vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Combine the red peppers, olives, celery and romaine in a large bowl.
  • In a cruet, add the olive oil, vinegar and 1/2 teaspoon each salt and pepper. Shake to combine. Pour over the salad in the bowl, toss together and serve.

Italian style roasted pepper salad recipe made with smoky roasted sweet or bell peppers, marinated in a true Italian dressing of extra virgin olive oil and red wine vinegar.

2.5 lb sweet or bell peppers (- mixed colors)
1/3 cup extra virgin olive oil
1/4 cup red wine vinegar (+ more to taste)
3/4 tsp sea salt ((or to your taste))
1 sprig fresh basil or thyme (-for garnish)
1 tbsp capers ((optional))
1 clove garlic (-grated)
1/2 tsp red pepper flakes

Steps:

  • Heat up a cast iron plate on medium high flame.
  • Roast the peppers on all sides until charred. Transfer to a bowl and cover tightly with plastic wrap. Allow them to sit at room temperature until cool enough to handle.
  • Once the peppers have cooled down, gently start peeling away the charred skins and discard.
  • Optional but not needed: in the case of small sweet peppers, you can cut the peppers in half lengthwise and with a pairing knife remove the seeds and the core.
  • In a small bowl whisk together the olive oil and vinegar and season to taste with the sea salt. Adjust with more red wine vinegar until the magic balance is attained. Add the grated garlic and taste again, even ten times if you must. Alternatively you can use a small jar with a tight lid to shake up the dressing.
  • Pour the Italian dressing over the roasted peppers making sure sure they are coated evenly. Sprinkle with the red pepper flakes.
  • Garnish with the basil or thyme and capers (optional), then serve as a side dish, on top of bruschetta or on the antipasto platter.

2 each large sweet yellow, red and green peppers
1 small red onion, thinly sliced
6 tablespoons olive oil
3 tablespoons balsamic vinegar
1 tablespoon each minced fresh oregano, rosemary, basil and parsley
1 garlic clove, minced
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
1/4 teaspoon salt
1 cup cherry tomatoes, halved
1 carton (8 ounces) fresh mozzarella cheese pearls
5 fresh basil leaves

Steps:

  • Broil peppers 4 in. from the heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a large bowl; cover and let stand for 20 minutes., Peel off and discard charred skin. Remove stems and seeds. Cut peppers into thin strips; place in a large bowl. Add onion., In a small bowl, whisk the oil, vinegar, herbs, garlic, garlic powder, cayenne, pepper and salt; pour over pepper mixture and toss to coat. 2 cans (6 ounces each) pitted ripe olives, drained
1 jar (5-3/4 ounces) pimiento-stuffed olives, drained
2 tablespoons finely chopped celery
2 tablespoons finely chopped onion
2 tablespoons capers, rinsed and drained
1/4 cup olive oil
2 tablespoons red wine vinegar
2 garlic cloves, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
1/4 teaspoon salt

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, whisk the oil, vinegar, garlic, basil, oregano, pepper flakes and salt; pour over olive mixture; toss to coat. , Cover and refrigerate for at least 3 hours before serving. Store in the refrigerator for up to 3 days.

1 (10 ounce) jar olives or 1 (10 ounce) jar pimento stuffed olives
1 (16 ounce) can ripe olives, pitted or 1 (16 ounce) can pitted kalamata olives
1 (8 1/2 ounce) jar marinated artichoke hearts
1 (3 ounce) bottle capers
1/2 bunch celery, chopped
1/2 cup Italian parsley, chopped
1 teaspoon garlic powder
1 tablespoon dried oregano, in my house this is optional
1/2 cup olive oil

Steps:

  • Drain olives, capers and artichokes.
  • Coarsely chop.
  • Add parsley, celery, garlic and oregano and olive oil.
  • Stir to mix.
  • Put in refrigerator for at least 2 days.
  • Will last for several weeks in the refrigerator.
  • Great on italian hoagies or muffletas or spooned on top of a green salad.

  • In a large sieve rinse olives and drain well. Thinly slice celery, carrot, onion, and garlic and in a bowl stir together with remaining ingredients. Marinate salad, covered and chilled, at least 1 day and up to 3 days. Bring salad to room temperature before serving.
