1 pound bulk Italian sausage
1 large onion, chopped
2 large carrots, chopped
2 celery ribs, chopped
1 medium leek (white portion only), chopped
1 medium zucchini, cut into 1/2-inch pieces
1/4 pound fresh green beans, trimmed and cut into 1/2-inch pieces
3 garlic cloves, minced
6 cups beef broth
2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic
3 cups shredded cabbage
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon pepper
1/2 cup uncooked small pasta shells
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
3 tablespoons minced fresh parsley
1/3 cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage and onion over medium heat until meat is no longer pink; drain. Stir in the carrots, celery and leek; cook for 3 minutes. Add the zucchini, green beans and garlic; cook 1 minute longer. , Stir in the broth, tomatoes, cabbage, basil, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer for 45 minutes. , Return to a boil. Stir in the garbanzo beans, pasta and parsley. Cook for 6-9 minutes or until pasta is tender. Serve with cheese.

2 ribs celery, chopped
1 small onion, chopped
3 cloves garlic, minced
2 cups chopped cabbage
1 large carrot, chopped
1 (14 oz.) can chopped tomatoes, with juice
1 (11.5 oz.) can tomato juice
4 cups chicken or vegetable broth
1 (19 oz.) can cannellini beans, rinsed and drained
1 (15.5 oz.) can red kidney beans, rinsed and drained
1 (15 oz.) can garbanzo beans (chick peas), rinsed and drained
1/4 cup chopped fresh parsley
1 tbsp. dried oregano
1 tbsp. dried basil
1/2 cup uncooked small elbow macaroni, cooked and drained
1/4 cup grated Parmesan cheese plus more for serving
Salt and pepper to taste

Steps:

  • HEAT oil in large saucepan or Dutch oven over medium heat. Add celery, onion and garlic. Cook and stir until crisp-tender.
  • ADD cabbage and carrots. Cook and stir until crisp-tender. Stir in tomatoes with juice, tomato juice and broth. Bring to a boil. Reduce heat to low.
  • MIX in the three kinds of beans, parsley, oregano and basil. Simmer 30 minutes or until vegetables are tender and flavors have blended.
  • STIR in cooked pasta and Parmesan cheese just before serving. Season with salt and pepper to taste. Serve with grated Parmesan cheese on the side.

2 tbsp. extra virgin olive oil
3 cloves garlic, finely minced
2 med. carrots, peeled and diced, 1/4 inch
1 med. onion, peeled and diced, 1/4 inch
3 cups cabbage, finely shredded
2 med. zucchini, halved lengthwise then 1/4 inch slices
1 large Idaho potato, peeled and diced, 1/4 inch
48 oz. chicken broth
14.5 oz. beef broth
3 tbsp. tomato paste
1/4 cup fresh Italian parsley, chopped and divided
2 tsp. dried oregano
1 tsp. dried basil
1 tsp. course ground black pepper
Salt, to taste
1 15 oz. can dark red kidney beans
4 ripe roma tomatoes
1/2 cup pasta, small size, short macaroni or mini bowtie, uncooked
*Freshly grated parmesan cheese, for garnish

Steps:

  • Cook the sausage links in a large soup pot over medium-low heat. After 4-5 minutes turn the sausages, add 1/4 cup water, cover and cook for another 8-10 minutes or until cooked through. Transfer the sausages to a cutting board and allow to cool before coin slicing.
  • Over medium heat, add olive oil to the same large soup pot. Cook the garlic, carrots and onion until wilted, stirring occasionally. Add the cabbage, zucchini, potato, both stocks and tomato paste. Bring to a boil. Reduce the heat and add 2 tablespoons of the parsley, oregano, basil, pepper and salt to taste. Simmer uncovered over medium heat for about 15 minutes.
  • Add the sausage, beans, tomatoes, and pasta, simmer until the pasta is done (about 8 minutes). Serve with a sprinkling of fresh parsley and grated parmesan cheese.

1 medium yellow onion, diced small
2 garlic cloves, minced
1 can (15 ounces) diced tomatoes
Chicken Soup Base (10 cups broth and 4 cups shredded chicken)
3/4 cup small pasta shells
3 medium carrots, cut into 1/4-inch rounds
1 Parmesan rind, plus grated Parmesan (optional)
1 bunch kale (preferably Tuscan; 3/4 pound), tough stems and ribs removed, leaves cut into 1-inch pieces (4 cups)
1 medium zucchini, diced medium
1 can (15.5 ounces) chickpeas, rinsed and drained
Coarse salt and ground pepper

Steps:

  • In a large pot, heat oil over medium-high. Add onion and cook until softened, 8 minutes. Add garlic and cook until fragrant, 30 seconds. Add tomatoes with juice and cook until liquid is evaporated, 4 minutes. Add broth and bring to a boil. Add pasta, carrots, and Parmesan rind, if using, and cook 5 minutes. Add kale, zucchini, and chickpeas and cook until zucchini is crisp-tender, 5 minutes. Stir in chicken and cook until warmed through, 1 to 2 minutes. Season with salt and pepper and remove rind before serving. Sprinkle with Parmesan, if desired.

½ small red bell pepper

  • Place cranberry beans into a large container and cover with several inches of cool water; let soak, 8 hours to overnight. Drain.

1 lb of your favorite loose Italian sausage
1 onion, chopped
1 bell pepper, chopped
4 garlic cloves
2 tablespoons of jarred pesto sauce (can substitute 1 TBSP dried Italian Herbs)
2 (14 1/2 ounce) cans Italian stewed tomatoes or 2 (14 1/2 ounce) cans Italian-style diced tomatoes
1 (6 ounce) can tomato sauce
1 (14 ounce) can cannellini beans or 1 (14 ounce) can garbanzo beans, drained and rinsed
1 (16 ounce) bag frozen mixed vegetables
1 quart beef stock
1 cup of uncooked elbow macaroni

Steps:

  • In the bottom of your best soup pot, heat up your olive oil and add the sausage, onions and peppers. When the sausage is almost completely cooked, add the garlic and the pesto (or herbs). Let it cook another minute, then add the tomatoes and tomato sauce, frozen vegetables and beans. Let this cook for about 10 minutes on medium heat. Then add your beef stock and bring back to a gentle boil and then add the macaroni. Salt and pepper to taste. If you like it spicy, you might also add a pinch of red pepper flakes. Cook another 10 minutes.

1 1/2 c chopped carrot
1 c diced green pepper
5 c cubed zucchini & yelow squash
4 c fresh diced roma toamatoes
3-4 c chicken or vegetable broth
1/2 tsp freshly ground black pepper
2 tsp dried basil leaves
1/2 tsp dried oregano leaves
1 Tbsp minced garlic from jar
1/2 c whole wheat pasta, elbow, shells or penne
1 can(s) dark red kidney beans, undrained, 15.5 oz
1 Tbsp grated Parmesan cheese for garnish (optional)

Steps:

  • 1. In a large Dutch oven pot, combine the first ten ingredients.
  • 2. Bring to a boil.
  • 3. Then cover and reduce heat to a simmer for 45 minutes.
  • 4. Add beans and pasta. Bring to a boil again. Then cover and reduce heat to a simmer and cook for 20 more minutes.
  • 5. Ladle into bowls and garnish. Enjoy!

1/4 pound fresh green beans, trimmed and cut into 1/2-inch pieces
3 garlic cloves, minced
6 cups beef broth
2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic
3 cups shredded cabbage
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon pepper
1/2 cup uncooked small pasta shells
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
3 tablespoons minced fresh parsley
1/3 cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage and onion over medium heat until meat is no longer pink; drain. Stir in the carrots, celery and leek; cook for 3 minutes. Add the zucchini, green beans and garlic; cook 1 minute longer. Stir in the broth, tomatoes, cabbage, basil, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Return to a boil. Stir in the garbanzo beans, pasta and parsley. Cook for 6-9 minutes or until pasta is tender. Serve with cheese. Yield: 11 servings (about 3 quarts).

1 medium onion, chopped

2 stalks celery, chopped

5 cups low sodium vegetable broth or 5 cups chicken broth
1 tablespoon chopped fresh basil or 1/2 teaspoon dried basil

Steps:

  • In a large soup pot, heat the olive oil over medium heat. Add the onion, carrot and celery and cook for 5 minutes, or until the vegetables begin to soften. Add the garlic, season with salt and pepper and cook for 2 minutes more.
  • Add the tomatoes, vegetable or chicken broth and herbs, bring to a boil and turn down to a simmer.
  • Add the green and cannellini beans and simmer for 2 minutes.
  • Add the zucchini and pasta and simmer for 10 minutes, or until all of the vegetables are tender and the pasta is al dente. Season with salt and pepper.
  • Serve the soup in large bowls with a sprinkling of Parmesan cheese.

1 lb Hot Italian Sausage in casings
1 can diced Italian tomatoes
1 Diced red bell pepper
1 small onion/yellow preferably sliced
1 Serrano Chile diced very small
2 garlic cloves chopped fine
2 large carrots sliced
2 good sized zucchini sliced
½ cup spinach
½ cup chopped cabbage
½ cup Asini de Pepe/pasta or other small pasta shape
1 can garbanzo beans
1 can dark red kidney beans
1 can tomato sauce
Olive Oil
¼ Tsp basil and oregano
Salt and pepper
A pinch of hot red pepper flakes
6 cups of water

Steps:

  • Remove the Italian sausage from its casings rolling them into small to medium sized meatballs. Add the meatballs to a hot stockpot let them brown on all sides then transfer the meatballs to paper towels to drain. Keeping the pot hot with the drippings of sausage add 1 tbsp olive oil and drop in the onions, garlic, red bell peppers, red pepper flakes, salt and pepper and sauté until fragrant and clear. Add the Serrano Chile and the meatballs sauté for another minute or two then add the diced tomatoes, along with the tomatoes add the cans of kidney and garbanzo beans. Let this come to a simmer, add the basil and oregano. Add the water slowly and finishing with a can of tomato sauce. Let the soup come to a simmer then add salt, pepper, and carrots. Simmer the soup on medium low for 30 minutes until flavors marry. Once the soup is simmered add the zucchini, cabbage, spinach, and the pasta. The soup is done when all vegetables are cooked through and pasta is al dente. Add salt and pepper for taste. Serve with parmesan cheese and crusty bread.

2 - medium onions diced
1 - clove garlic diced.(i use more it's optional)
1/2 cup(s) sliced celery
1/2 cup(s) sliced carrots
1/4 cup(s) chopped parsley
1 cup(s) chopped cabbage
1 1/2 cup(s) chick peas
1 16oz can(s) diced tomatoes
1 quart(s) chicken broth (fresh or canned)
1/2 teaspoon(s) basil
1/4 teaspoon(s) thyme
1/2 cup(s) broken spaghetti
- salt & pepper to taste
1 cup(s) grated parmesan cheese
1 cup(s) chopped escarole or 1/4 c chopped frozen spinach
1 cup(s) kidney beans, canned

Steps:

  • Brown salt pork and onions in large pot. Add garlic, celery, carrots, cabbage & parsley Add 4 cups chicken broth and everything else except the last five ingredients Bring to boil, cover and simmer for 30 minutes.
  • Add escarole or chopped spinach & spaghetti. Season with salt and pepper. Cover and simmer for 10 minutes.
  • Serve and sprinkle the cheese on top of each serving Top it off with fresh crusty Italian Bread and butter. You can double or triple this recipe according to your needs.
