Our family's favorite meatloaf is stuffed with mozzarella.

1 ½ pounds ground beef
1 medium onion, chopped
1 (8 ounce) can tomato sauce, divided
½ cup bread crumbs
1 egg
2 cloves garlic, minced
1 teaspoon dried oregano, divided
1 teaspoon salt
⅛ teaspoon ground black pepper
1 ½ cups shredded mozzarella cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix beef, onion, 1/2 of the tomato sauce, bread crumbs, egg, garlic, 1/2 teaspoon oregano, salt, and pepper in a large bowl. Pat into a 1/2-inch-thick rectangle on a sheet of waxed paper. Sprinkle mozzarella cheese on top.
  • Lift up the short side of the waxed paper to start rolling up the meatloaf. Roll tightly, peeling back paper as you go. Seal edges in place. Transfer meatloaf to a loaf pan.
  • Bake in the preheated oven for 1 hour. Combine remaining tomato sauce and 1/2 teaspoon oregano; pour over meatloaf and sprinkle with Parmesan cheese. Bake until cheese is melted, about 15 minutes more. Let stand for 5 minutes before serving.

Meatloaf filled with Cappicola and Mozzarella roll is seasoned with spices and store bought pesto and sundried tomatoes in oil which you puree. Please take note that the pesto and sundried tomatoes have seasoning and garlic added so adjust to taste.

3/4 cup breadcrumbs
1/2 cup slightly warm broth
2 tablespoons prepared pesto sauce
3 tablespoons pureed sun-dried tomatoes packed in oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon dried Italian seasoning
1 small onion, diced
2 garlic cloves, minced
hot pepper flakes
1/2 lb ground pork
1 lb ground beef or 1 lb ground turkey
2 large eggs, slightly besten
1/2 lb capicola-mozzarella roll
3 -4 slices bacon (optional)

Steps:

  • Preheat oven to 350 degree`s.
  • In a large bowl add the bread crumbs and broth and let soften.
  • Add the next 8 ingredients mix in well(Pesto to pepper flakes).
  • Add the meats and eggs mix together.
  • On a damp counter place plastic wrap down. Then the meat mixture in one layer 9 x 12.
  • Lay the ham & cheese roll in one row across the long lenght of the meat. Press the Cappicola into the meat.
  • With the aid of the plastic wrap pull up the long side meat over the cheese and continue to roll sealing in the cheese.
  • Roll onto a large baking pan. Adjust the roll so seam is down and cheese is seal inches. removing the plastic wrap, add discard wrap.
  • Place the bacon slices over meat if using.
  • Bake in oven for 40-50 minutes. Or until internal temp is 160 degrees when inserted in center of loaf.
  • Let the meat rest room temp for 15-20 minutes. Important for the juices to redistribute.
  • Serve with your favorite tomato sauce.

2 pounds lean ground beef
1 cup pasta sauce
½ cup Italian-style bread crumbs, or more as needed
¼ cup minced onion
¼ cup ketchup
1 egg, beaten
2 large cloves garlic, minced
½ teaspoon oregano
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups shredded mozzarella cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Thoroughly mix beef, pasta sauce, bread crumbs, onion, ketchup, egg, garlic, oregano, salt, and ground black pepper together using your hands in a large bowl.
  • Spread 1/2 the meat mixture into the bottom of a loaf pan. Spread mozzarella cheese over the center of the meat. Spread remaining meat mixture over the cheese, pressing edges of meat together on the sides to seal in the cheese.
  • Bake in the preheated oven until meat is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Not much harder to make than plain meatloaf, this dressed-up version is nice enough for company.

1 1/4 lb extra-lean (at least 90%) ground beef
3/4 lb bulk Italian sausage
1 egg
1 can (8 oz) pizza sauce
1/4 cup Progresso™ Italian style bread crumbs
1/4 teaspoon pepper
2 cups shredded 6 cheese Italian cheese blend (8 oz)
2 cups loosely packed fresh spinach leaves

Steps:

  • Heat oven to 350°F. In large bowl, mix ground beef, sausage, egg, 1/2 cup of the pizza sauce, the bread crumbs and pepper.
  • On foil, pat mixture to12x8-inch rectangle. Sprinkle evenly with cheese; gently press into meat. Top with spinach. Starting at short end, roll up tightly, using foil to start roll and tucking in spinach leaves; seal ends. Place seam side down in ungreased 12x8-inch (2 quart) glass baking dish.
  • Bake 1 hour. Spread remaining pizza sauce over top. Bake 15 minutes longer or until thermometer inserted in meatloaf reads 160°F. Let stand 5 to 10 minutes before serving.

1 1/2 lb lean (at least 80%) ground beef
2 cups soft French bread crumbs
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 cloves garlic, minced
1 can (8 oz) pizza sauce
1 1/2 cups shredded provolone cheese (6 oz)
1 jar (7.25 oz) roasted red bell peppers, drained, chopped
1/4 cup chopped ripe olives

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
  • On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.
  • Bake 40 minutes. Remove from oven; spoon remaining pizza sauce over loaf. Insert meat thermometer so bulb reaches center of loaf.
  • Return to oven; bake 15 to 20 minutes longer or until loaf is thoroughly cooked in center and thermometer reads 160°F. Let stand 10 minutes before slicing.

5 ounces chopped and drained spinach (if frozen)
1 lb hamburger
2 eggs
3/4 cup breadcrumbs
1/4 cup ketchup
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon oregano
1/4 lb sliced ham (optional)
1/4 lb sliced mozzarella cheese

Steps:

  • Mix hamburger, eggs, bread crumbs, ketchup, salt, pepper and oregano.
  • Spread flat on a sheet of aluminum foil.
  • Top with spinach; spread flat.
  • Top with layer of ham; roll up mixture (don't roll up with aluminum foil) and seal foil around roll.
  • Cook at 350°F for 45 minutes.
  • Open up pocket, place cheese on and return to oven until cheese is melted.

1 cup chopped onion
½ cup chopped green bell pepper
½ cup chopped celery
1 (14.5 ounce) can whole peeled tomatoes with juice
1 (8 ounce) can tomato sauce
1 ½ teaspoons Italian seasoning
1 teaspoon white sugar
1 ½ teaspoons dried oregano
¾ teaspoon garlic powder
1 teaspoon Worcestershire sauce
2 cups water
¼ cup chopped fresh parsley
1 ½ pounds ground beef chuck
½ cup Italian seasoned bread crumbs
1 teaspoon garlic powder
1 teaspoon Creole seasoning
1 pinch cayenne pepper
½ teaspoon salt
1 ½ cups shredded mozzarella cheese
¼ cup chopped fresh parsley
2 teaspoons Italian seasoning

Steps:

  • To make tomato sauce, heat olive oil in a saucepan over medium-low heat; cook and stir the onion, green pepper, and celery in the hot oil until the onion is soft, about 5 minutes. Pour the undrained whole tomatoes, tomato sauce, 1 1/2 teaspoons Italian seasoning, sugar, oregano, 3/4 teaspoon garlic powder, Worcestershire sauce, and water into a blender and blend until smooth. Pour the tomato mixture into the saucepan and simmer over low heat for 1 1/2 hours, stirring occasionally. Stir in 1/4 cup parsley. Set aside.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, mix together the ground beef, bread crumbs, 1 teaspoon garlic powder, Creole seasoning, cayenne pepper, and salt until the mixture is thoroughly combined; spread into the bottom of the prepared baking dish.
  • Scatter the mozzarella cheese over the meat; spread 1/4 cup of the sauce over the cheese. Sprinkle the sauce with 1/4 cup chopped parsley and 2 teaspoons of Italian seasoning. Pick up one end of the meat layer (short side), and gently roll the meat around the filling. Reposition the meat roll in the center of the dish, and pour the remaining tomato sauce over the roll.
  • Bake in the preheated oven until the roll is no longer pink in the center, 45 minutes to 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
