From one of my favorite local restaurants. Adding 1/2-1 lb of diced smoked turkey breast to the salad mix turns this into a nice light lunch on it's own.

1 1/8 cups extra virgin olive oil
1/2 cup apple cider vinegar or 1/2 cup white balsamic vinegar
1 tablespoon Dijon mustard
4 large garlic cloves, minced
1 teaspoon black pepper
1 pinch salt
1/4 lb blue cheese, finely crumbled
1 head romaine lettuce
1 head red leaf lettuce
2 large carrots, shredded
1/2 small red cabbage, shredded
crouton (to garnish)

Steps:

  • Whisk together olive oil, vinegar, mustard, garlic, pepper, and salt until well blended; fold in cheese.
  • Break the leaves off of both heads of lettuce, tear them by hand; wash and drain.
  • In a large wooden bowl, toss lettuce with shredded carrots and cabbage.
  • Garnish with croutons and top with dressing to taste.

This Tuscan House Italian Pasta Salad is hearty with beans, olives, tomatoes and more-and it's all ready to serve in just 20 minutes.

12 oz. tri-color veggie pasta
1 can (15 oz.) dark red kidney beans, drained and rinsed
1 can (2.25 oz.) black olives, drained
1 cup chopped assorted peppers (I used 2 small sweet and 1 Anaheim)
1 cup diced cucumber
1 diced Roma tomato
1-1/2 cups KRAFT Tuscan House Italian Dressing
1 cup KRAFT Shredded Italian* Five Cheese Blend
1/2 tsp. black pepper
2 oz. pepperoni (about 35 pieces)

Steps:

  • COOK pasta according to package directions. Rinse to cool completely; drain.
  • MIX in kidney beans, olives, cucumber and tomato.
  • ADD dressing and pepper; stir in.
  • SPRINKLE in cheese; blend. Add pepperoni. Refrigerate until serving.
  • Note: After refrigeration, salad may need to be tossed with additional dressing.

This salad is rich and very filling and should be served as a main meal. The dressing makes about 1-1/2 cups but can easily be doubled. Plan ahead the dressing needs to chill for a couple of hours before using, prep time includes chilling time for the dressing. Feel free to add in other ingredients to the salad.

1 cup mayonnaise (do not use salad dressing)
1/3 cup bottled kraft Italian salad dressing
1/3 cup grated parmesan cheese
1 teaspoon fresh garlic (optional)
salt and pepper
1 large head romaine lettuce (torn into bite-size pieces)
1 cup artichoke heart, cut into quarters (or to taste)
1 (6 ounce) can pitted ripe olives (use green or black)
5 firm roma tomatoes, coarsely chopped
1 small red onion, thinly sliced
1/2 lb shredded provolone cheese (or to taste)
salt and black pepper

Steps:

  • For the dressing; whisk all the ingredients together, then season with salt and pepper to taste.
  • Cover and chill for 2 hours before serving.
  • For the salad; place the first 6 ingredients in a large glass bowl; toss to combine.
  • Serve with dressing on the side.

1 large head of lettuce
1 small head of cauliflower
1 small can of sliced black olives
1 purple onion, slice thin
3/4 c. oil
1 tsp. sugar
1 tsp. salt
1/4 tsp. dry mustard
1/4 tsp. pepper
1/4 c. vinegar

Steps:

  • Shred lettuce in large salad bowl. Add chopped cauliflower, drained olives, and onions. Toss. In a separate bowl add oil, sugar, salt, dry mustard, pepper, vinegar and mix. Add to lettuce and toss well.
