HOT ITALIAN SAUSAGE AND BROCCOLI RABE FRITTATA



Hot Italian Sausage and Broccoli Rabe Frittata image

This is a substantial baked frittata that feeds a small crowd. Filled with spicy Italian sausage, flavorful greens and four kinds of cheese, it tastes best at room temperature, and it's perfect for a weekend late breakfast or any time of day.

1 pound broccoli rabe, tough stem ends removed
3/4 pound hot Italian sausage, loose or in links
2 tablespoons extra-virgin olive oil
1 medium onion, diced
Salt and black pepper
3 cloves garlic, minced
2 teaspoons roughly chopped rosemary
1 1/2 cups ricotta
3 ounces grated provolone (about 1 1/4 cup)
3 ounces grated Parmesan (about 3/4 cup)
4 ounces grated smoked mozzarella (about 1 1/2 cup)
10 eggs, lightly beaten and seasoned with salt and pepper

Steps:

  • Heat oven to 350 degrees. Bring a large pot of salted water to boil. Add broccoli rabe and cook for 1 minute, just to wilt, then remove, rinse with cold water and drain. Roughly chop greens, then squeeze to remove excess water and set aside.
  • Heat a 10-inch cast-iron skillet over medium-high heat. Add sausage (remove casings from links first) and cook, stirring and mashing, until sausage is in large, well-browned crumbled pieces, 6 to 8 minutes. Remove cooked sausage, blot on paper towels, and set aside.
  • Add olive oil to skillet. When oil is hot, add onion and cook, stirring, until softened and lightly browned, about 5 minutes. Season well with salt and pepper, then add garlic and rosemary and cook for 1 minute more. Turn off heat and stir in chopped greens and reserved sausage. Let mixture cool in pan.
  • Spoon dabs of ricotta over greens mixture, then sprinkle evenly with provolone, Parmesan and mozzarella. Pour seasoned eggs over, tilting pan to distribute.
  • Bake for 30 to 35 minutes, until top is golden and eggs are no longer runny at the center. (Use a skewer or paring knife to check; residual heat will continue to cook frittata as it cools.) Let cool at least 15 minutes, then cut into wedges.

4 eggs, lightly beaten
1 tablespoon diced pimientos, drained
2 teaspoons Italian seasoning

1-1/3 cups sliced fresh mushrooms
4 green onions, finely chopped
2 tablespoons butter
2 teaspoons olive oil

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add spinach; cover and boil for 3-5 minutes or until wilted. Meanwhile, in a large bowl, whisk the eggs, pimientos, Italian seasoning and parsley; set aside., Drain spinach and pat dry. In a 7-in. ovenproof skillet, saute mushrooms and onions in butter and oil until tender. Reduce heat; sprinkle with spinach, cheese and salt. Top with egg mixture. Cover and cook for 4-6 minutes or until nearly set., Uncover skillet. Broil 3-4 in. from the heat for 2-3 minutes or until eggs are completely set. Let stand for 5 minutes before cutting.

This can be served for breakfast, brunch, lunch or dinner. It's a fairly simple recipe with ingredients that are easily found in the grocery store! I personally use the Spicy Turkey Italian Sausages when making this recipe although it calls for mild.

1 1/2 lbs bulk Italian sausage
8 ounces fresh mushrooms, sliced
2 tablespoons butter
1 garlic clove, minced
3 large swiss chard leaves, rolled and sliced thin
1 cup mild cheddar cheese, grated
14 large eggs
1 3/4 cups milk
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 350 degrees.
  • Brown sausage in sauce pan and drain.
  • Spread evenly over bottom of 9 x 13 baking dish.
  • Sauté mushrooms and garlic in butter until almost all liquid is absorbed (you can add a few dashes of white wine at this stage if you prefer.
  • Spread mushrooms over sausage.
  • Layer swiss chard and cheese over mushrooms.
  • In bowl beat the eggs, milk and Dijon mustard and pour evenly over all.
  • Place in oven on middle rack, bake uncovered for 1 hour, (or until middle is firm to touch).
  • Remove from the oven, cover loosely with foil, and let stand 15-18 minutes. Divide and cut into serving sizes.
  • Top with green onions or sour cream (or both) if you desire.

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add onion and parsley stems; cook and stir until onion is translucent, about 5 minutes. Add zucchini and salt; cook and stir until softened, about 5 minutes.

Curing the squash with kosher salt pulls out the bitterness and makes the squash taste sweeter. It's got great texture, taste, and visual appeal and can be served hot, warm, at room temperature or cold for any meal of the day.

2 ½ cups cubed zucchini
2 ½ cups cubed yellow summer squash
2 tablespoons kosher salt
2 tablespoons olive oil, divided
1 slice thick-cut bacon, cut crosswise into 1/4-inch strips
8 large eggs
¼ teaspoon kosher salt, or to taste
freshly ground black pepper to taste
1 pinch cayenne pepper
2 tablespoons sliced green onions, or to taste
⅓ cup diced red onion
1 cup diced sweet peppers
2 ounces grated sharp Cheddar cheese
4 ounces goat cheese, crumbled

Steps:

  • Combine zucchini and summer squash in a bowl and sprinkle 2 tablespoons kosher salt over top; toss until everything is evenly coated. Let sit for 15 minutes, tossing occasionally.
  • Thoroughly rinse squash with cold water to remove all salt; transfer to a colander and let drain for 15 minutes.
  • Heat 1 tablespoon olive oil in a 10-inch, oven-proof skillet over medium heat. Add bacon and cook until browned and almost crisp, about 5 minutes.
  • While the bacon is cooking, mix eggs, 1/4 teaspoon kosher salt, black pepper, cayenne, and green onions together with a fork in a large bowl.
  • Raise the heat on the bacon to medium-high; toss in peppers and red onion plus a pinch of salt. Cook and stir until the peppers just start to soften and the onions turn translucent, about 3 minutes. Add drained squash and carefully stir together; cook until squash is just barely tender, about 5 minutes.
  • Meanwhile, set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Toss Cheddar cheese into the skillet and pour egg mixture over top. Stir with a spatula (like you were making scrambled eggs) until it starts to thicken up, 30 to 45 seconds. Shake the pan gently to settle the contents and turn off the heat. Push the edges down a bit with the spatula and sprinkle goat cheese over top. Drizzle with remaining 1 tablespoon olive oil.
  • Place under the preheated broiler until the surface is lightly browned and frittata is firm to the touch, 2 to 3 minutes.
  • Sprinkle with more green onions and let cool for 5 minutes before transferring it onto a serving plate.

8 eggs
1 tablespoon coarsely chopped fresh sage
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Romano cheese
1 teaspoon olive oil
1 small zucchini, sliced
2 green onions, sliced
2 Italian plum tomatoes, thinly sliced lengthwise

Steps:

  • In medium bowl, combine eggs, sage, salt, pepper and 1/4 cup of the cheese; beat well. Set aside.
  • Heat oil in medium ovenproof nonstick skillet over medium heat until hot. Add zucchini and onions; cook and stir 2 minutes or until zucchini is tender. Add egg mixture; cook 2 minutes or until egg mixture is almost set, lifting edges occasionally to allow uncooked egg mixture to flow to bottom of skillet.
  • Top frittata with tomato slices; sprinkle with remaining 1/4 cup cheese. Broil 4 to 6 inches from heat for 1 to 3 minutes or until top is set and begins to brown.

2 medium russet potatoes
1 large vidalia onion
2 medium red bell peppers
1 large portobello mushroom
4 ½ tablespoons extra virgin olive oil
1 salted butter
2 tablespoons salt
2 tablespoons pepper
2 tablespoons fresh basil, chopped
6 large eggs
2 tablespoons half & half
½ teaspoon salt
1 teaspoon pepper
½ teaspoon adobo
1 tablespoon fresh basil
1 teaspoon parmesan cheese
¼ cup fresh mozzarella cheese, diced

Steps:

  • On a small baking sheet, cut your potatoes into thin vertical segments (half-moon shapes).
  • Drizzle 2 tbsp olive oil over potatoes and season with 1 tbsp salt and 1 tbsp pepper.
  • Next, add 1 tbsp freshly-chopped basil into the mixture and toss together until each potato is coated in oil, seasoning and herbs.
  • Place into a 425°F oven for approximately 35-40 minutes.
  • Chop your red peppers into thin, long segments and slice your onion into thin, half-moon-shaped slices.
  • Remove the stem of your portobello mushroom - cut the mushroom into long, vertical, 1-inch slices- then cut those long slices into horizontal halves.
  • Remove your potatoes out of the oven and allow them to cool for approximately 10-15 minutes.
  • In a large frying pan, heat 2 ½ tbsp olive oil and a pat of salted butter.
  • While your potatoes cool, saute your onions, peppers and mushrooms, until cooked down and tender. Season with salt and pepper. Once your onions, peppers and mushrooms are cooked down, add your roasted potatoes into the pan, with another tsp of olive oil.
  • Saute all vegetables together until the potatoes from a light gold crust on each side. Reduce heat and keep vegetables on low heat.
  • In a large bowl, beat your eggs with a whisk and gradually add in your half-and-half, salt, pepper, adobo and parmesan cheese.
  • Once well-beaten, pour your eggs into the frying pan (that holds the sauteed vegetables) and allow them to cover the entire circumference of the frying pan.
  • Next, place medium diced pieces of mozzarella throughout the frying pan, letting them slightly sink into the egg mixture, followed by adding in sprinkles of chopped basil.
  • Cook on a medium-low flame for 12-15 minutes.
  • Once the bottom of the frittata appears to have solidified, place the pan into the oven and broil the top of the frittata on low for approximately 8-10 minutes, until the entire frittata becomes cohesive - and the top becomes golden brown.
  • Let cool slightly, slice and serve.

Italian Sausage and Ricotta Frittata image

5 piece Egg Whites
6 piece Eggs
1/4 cup Half & half
1/2 cup Ricotta
1/4 cup Parsley- chopped
2 tablespoons Olive Oil
1 sprig Salt and pepper
1 piece Basil

Steps:

  • Preheat your oven to 375º.
  • Whisk your eggs and cream together. Add the parsley after whisking. Season with salt and pepper.
  • Take the casing off of the sausage and heat your pan on medium.
  • Sear the sausage whole for a few minutes on both sides to get some browning, and then use a wooden spoon to break it into pieces. Continue to cook the sausage until it's done and remove it from the pan.
  • Drain the fat from the pan and use a paper towel and some water to wipe out the bottom.
  • Reheat the pan and add the olive oil to it. Swirl it all over the pan and up the sides. Over medium heat, add some of the sausage back to the pan and pour the eggs over it.
  • add the ricotta by large spoonfuls all over.
  • Add the remaining sausage and place in the oven for 20 - 25 minutes.
  • Slice into wedges and garnish with fresh torn basil.

1/2 cup sliced green onions (8 medium)
8 eggs, beaten
1 cup shredded mozzarella cheese (4 oz)
1/2 cup chopped seeded tomato (1 small)
2 tablespoons chopped fresh parsley
1/8 teaspoon pepper
1/2 cup shredded Parmesan cheese (2 oz)
Additional chopped tomato, if desired
Additional chopped fresh parsley, if desired

Steps:

  • In 10-inch nonstick skillet, melt butter over medium heat. Add onions; cook 2 to 3 minutes, stirring frequently, until tender.
  • Stir in eggs, mozzarella cheese, tomato, parsley and pepper. Reduce heat to medium-low; cover and cook 9 to 11 minutes or until eggs are set around edge and light brown on bottom.

1 tablespoon olive oil
1 small onion, minced
1 -2 garlic clove, minced
1 1/2 lbs small red potatoes, scrubbed and finely diced
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 cup chopped portabella mushroom
4 ounces diced prosciutto or 4 ounces diced ham
1/4 teaspoon dried basil
1/4 teaspoon italian seasoning
1 1/2 tablespoons dry nonfat dry milk powder
3 tablespoons light cream
8 large eggs, lightly beaten
salt and black pepper (to taste)
1/4 cup grated parmesan cheese or 1/4 cup asiago cheese
1 cup grated fontina or 1 cup mozzarella cheese

Steps:

  • Preheat oven to 350°F.
  • In a large skillet, melt butter and oil, and cook onion until tender, about 3-5 minutes.
  • Add potatoes, garlic, salt, and pepper, and cook for 10 minutes more, stirring frequently.
  • Add chopped mushrooms, diced prosciutto (or ham), dried basil, and Italian seasoning, and cook for 5-7 minutes more or until potatoes are tender.
  • Allow mixture to cool for 5 minutes.
  • In a small dish, mix together dry milk with light cream until smooth.
  • Add lightly beaten eggs and cream mixture to potatoes, stirring to mix well, and seasoning to taste with salt and pepper.

  • Remove pan from oven, and sprinkle frittata evenly with grated cheeses.
  • Return to oven and bake for 15 minutes more, or until cheeses are melted and eggs are almost set.
  • Preheat oven broiler to high, and cook frittata for 1-2 minutes more, or until cheese is lightly browned.
  • Allow to cool slightly before slicing and serving.
