FAT FREE ITALIAN DRESSING

I tweaked our favorite Italian Dressing recipe so it was healthier and more WW friendly. The original recipe (which is Recipe #20158) is fantastic, but it is 2 points plus per Tablespoon. This version is 1 point plus for the WHOLE recipe! We use it on salads, Italian subs, pasta, chicken and even as a dip for bread. You can use red or white wine vinegar. I actually prefer the taste of the red, but it looks more like Italian dressing if you use the white.

1 tablespoon cornstarch
1 cup cold water
1/3 cup wine vinegar
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dry mustard
1/4 teaspoon paprika
1 garlic clove, minced (or 1/8 tsp. garlic powder)

Steps:

  • Mix the cornstarch and water together in a small saucepan. Cook, stirring constantly, over high heat until it begins to thicken and is clear. (It will thicken even more once it is cool.).
  • Combine all the ingredients, including the cornstarch mixture, in a jar with a lid. Cover and shake to mix thoroughly.
  • Let stand for at least 2 hours to blend flavors. Shake well before using. Store at room temperature.

I LOVE this dressing on a salad of mixed greens, onion, tomato, cucumber, green pepper, celery....oh, heck...just about anything!!! I created this one a while back when I was experimenting to find a good dressing without oil, and I have been using it ever since. If I am making only a single-serve salad, I estimate the amounts and add more swetener or spices to fit my taste. Super-healthy and super-tasty!!!

1/4 cup balsamic vinegar
1 (1 g) packet sugar substitute
1/4 teaspoon fresh ground black pepper
1/4 teaspoon garlic powder
grated fat free parmesan, for sprinkling on salad

  • Combine all ingredients except Parmesan and whisk well.
  • Pour over salad,toss to coat, and top with grated Parmesan cheese.

1 1/3 cups water
1 1/2 tablespoons granulated sugar
2 teaspoons cornstarch
1 teaspoon salt or 1 teaspoon salt substitute
1/2 teaspoon dried onion flakes
1/2 teaspoon instant minced garlic
1/2 teaspoon finely minced red bell pepper
1/2 teaspoon italian seasoning
1/4 teaspoon gelatin
1/2 cup white vinegar
1 teaspoon dry non-fat buttermilk

Steps:

  • Combine water, sugar, cornstarch, salt, onion, garlic, bell pepper, Italian seasoning, and gelatin in a small saucepan.
  • Whisk to dissolve cornstarch, then set pan over medium/low heat.
  • Heat mixture until boiling, stirring often.
  • When mixture begins to boil, cook for 1 additional minute, stirring constantly, then remove from heat.
  • Add vinegar and dry buttermilk to saucepan and stir.
  • Transfer dressing to a covered container and refrigerate--preferably overnight--before serving.
