One dish, kid lovin' ground beef, pasta, tomato casserole. This dish is tasty, easy to prepare with a minimum of effort, inexpensive and my 39 year son still requests it for dinner. He's getting married and I'm giving his fiance' a copy of the recipe. Maybe 25 years ago I was home from surgery and my bible study group brought dinners and this was one of them. It was #1 and I got the recipe. It's been a family favorite since.

1 lb lean ground beef
1 (15 ounce) can tomato sauce
1 (10 3/4 ounce) can tomato soup (do not dilute)
1 (15 ounce) can corn, drained
1 (15 ounce) can diced tomatoes, drained, save juice to add later to casserole as it simmers
8 ounces pasta, such as macaroni, flat noodles, tube, sea shell, etc
3 tablespoons dried onion
2 teaspoons onion powder
2 teaspoons garlic powder
1/2 teaspoon cracked black pepper
1/4 teaspoon oregano
1/8 teaspoon chili powder
1/2 teaspoon cumin

Steps:

  • Brown ground beef in a large frying pan and drain well. Place back in pan, then all the ingredients, except the noodles. Mix well, cover and simmer.
  • While preparing the above, cook the noodles al dente, drain well and add to the meat mixture. Save the noodle water as you will need to add liquid to the casserole as it cooks down, but use the saved diced tomato juice first. I add garlic powder to the noodle water, while cooking, to flavor the water.
  • Add noodles.
  • Cook on low-to-simmer for about 15-20 minutes. Check often and stir. Add tomato juice/noodle liquid, as needed. It can get too thick.

My husband who loves Italian dishes was getting bored with the same ones, so I made this one day for dinner and the whole family loved it! I hope you will too!

6 (3.5 ounce) links hot Italian sausage
1 large onion, chopped
1 red bell peppers, seeded and diced
1 green bell pepper, seeded and diced
1 (4 ounce) can mushrooms, drained
1 (16 ounce) package penne pasta
½ cup Italian salad dressing
¼ cup grated Parmesan cheese for topping

Steps:

  • Bring a large pot of water to a boil. Add penne pasta, and cook until tender, about 10 minutes. Drain.
  • Place the Italian sausage links in a small skillet over medium heat. Cook, turning occasionally until firm and cooked through.
  • In a separate larger skillet, combine the red and green bell peppers, mushrooms, and Italian dressing. Cook and stir until the vegetables are tender, about 5 minutes. Slice the Italian sausages into rounds, and stir into the vegetables. Continue to cook and stir for another 5 minutes.
  • To serve, place servings of pasta onto plates. Top with the sausage and vegetable mixture. Sprinkle liberally with Parmesan cheese.

1 lb ground beef
1 (26 ounce) jar chunky spaghetti sauce
1 cup cottage cheese
1/4 cup grated parmesan cheese
1 egg, slightly beaten
2 tubes crescent rolls
1 cup grated mozzarella cheese

Steps:

  • Preheat oven 375 degrees.
  • In a large frying pan, brown beef.
  • Drain.
  • Stir spaghetti sauce into beef.
  • Simmer 5 min over low heat.
  • In a bowl, combine cottage cheese, parmasean cheese, and egg.
  • Lay on tube dough along bottom of 9x13 in pan.
  • Press to form a crust sealing cracks.
  • Layer half meat mixture, cheese mix, then remaining meat mix.
  • Sprinkle mozzerella cheese over top.
  • Lay remaining dough over the top, covering as much as possible.
  • Bake 25 min or until golden brown.
  • *Make sure the dough is not 'doughy' or soggy!

1 lb ground chuck
1/2 lb bulk sausage
1 large onion, chopped
1 pinch garlic powder
1/2 tsp salt
1/8 tsp pepper
4 oz canned mushrooms with juice
8 oz egg noodles
10 3/4 oz tomato soup
6 oz tomato paste, italian
17 oz tomatoes, canned italian style with juice
1 c cheddar cheese, shredded

Steps:

  • 1. Combine beef, sausage, onion, garlic powder, salt, and pepper. Steam 3-5 minutes in covered heavy skillet, until redness disappears from beef. Do not brown. Add mushrooms with juice. Transfer to greased 2 quart baking dish. Cook noodles and drain. Add soup, tomato paste, and tomatoes with juice to noodles. Stir well. Add noodles and half the cheese to meat, mixing well. Sprinkle remainder of cheese over top. Bake at 350 degrees for 30 minutes, or until casserole bubbles and cheese is melted.

1 lb eggplant, thinly sliced
salt and pepper
1 cup tomato sauce
3 medium tomatoes, thinly sliced
2 tablespoons dried basil
2 tablespoons dried Italian seasoning
1 cup fat-free ricotta cheese
1/2 cup low mositure part-skim mozzarella cheese, shredded

Steps:

  • Preheat over to 400.
  • Season eggplant with salt and pepper, and roast for 15 minutes, covering the bottom of a cooking spray-coated glass dish with slices.
  • Layer with half the sauce and half the tomatoes. Sprinkle with 1 tablespoon each of basil and italian seasoning, salt and pepper to taste.
  • Top with half the ricotta and half the mazzarella. Repeat layers.
  • Bake for 20 minutes, heating to broil until cheese is golden.

1 cup cauliflower, chopped
1 cup broccoli, chopped
1/2 cup onion, chopped
1 cup carrots, sliced
1 cup cucumbers, sliced
1 small pack cherry tomatoes
1 cup green peppers, chopped
1 cup celery, chopped
8 oz bottle Kraft Creamy Zesty Italian Dressing
1/4 cup Kraft Ranch Dressing
1 tsp ground black pepper

Steps:

  • Put cooked pasta in a large bowl then combine all ingredients and stir.
  • Refrigerate for at least two hours.
  • You can add more or less salad dressing according to taste. Also use the veggies you like.

  • Saute Italian sausages, until done over low heat.
  • Add onion, peppers, saute in garlic and olive oil until tender, about medium done. Generously use olive oil, and garlic!!!!
  • Add portabellas and do not overcook mushrooms.

This takes a little work, but well worth it!

2 pkg hillshire farms mild and/or spicy italian sausage
2 large white onions
4 medium green bell pepper
1 Tbsp cooking oil
ALL EASILY AVAILABLE

Steps:

  • 1. First, quickly brown all of two packages of sausage in a skillet, using about a tbsp. of cooking oil, High Heat. DO NOT cook through. I prefer the Hillshire Farms Hot Italian, my family prefers a mixture, one package of hot, one package of mild. Place browned sausage in large, slightly oiled pan.
  • 2. Cut onions and green peppers into strips. I cut onions into slices, then cut in half.
  • 3. Add onion and green pepper to large pan.
  • 4. Simmer...DO NOT boil, checking and stirring frequently, until vegetables are all tenderized and the entire mixture is soupy. Smells good huh? Give it a taste with a bit of salt and pepper.

1 1/2 lb hamburger
1 small onion, diced
1 bell pepper, diced
1/2 teaspoon pepper
1 regular size can cream corn
1 small can sliced olives
1 can tomato soup

Steps:

  • In separate pot start boiling your noodles.
  • Fry hamburger until brown. While cooking hamburger, put in the onion, bell pepper and pepper. When hamburger is fully cooked, drain hamburger.
  • Add the cream corn, sliced olives, and tomato soup. Now the last thing is to add the noodles and you're done!

1 egg
3/4 cup Italian breadcrumbs
salt and pepper
garlic powder
1/2 cup olive oil
2 (8 ounce) cans tomato sauce
1 tablespoon butter
1 tablespoon basil
parmesan cheese
mozzarella cheese, sliced thin and in triangles

Steps:

  • Dip chicken into beaten egg, coating well, then roll in bread crumbs.
  • Brown in olive oil.
  • Drain chicken and place in casserole dish in a single layer.
  • Using olive oil left in skillet, add tomato sauce, salt, pepper, butter, basil, and garlic powder.
  • Simmer and pour over chicken.
  • Sprinkle with parmesan cheese.
  • Cover with aluminum foil.
  • Bake at 350 for 30 minutes, uncover, top with triangles of mozzarella cheese and return to oven for 10 minutes.

1 can(s) corn,drained
1 small can sliced black olives (can use more)
1 c shredded sharp cheese

  • 1. Brown meat & drain.Remove from pan and brown onions & green peppers in butter.Add all other ingredients except macaroni.
  • 2. Cook macaroni & drain. Mix with meat mixture. Put in a 9" X 13" baking dish. Bake in a preheated 350 degree oven...1 hour

1 onion large, chopped
1 green bell pepper large, chopped
1 clove garlic minced
1 pound ground beef
2 (10 1/2-ounce) cans tomato soup
1/2 pound mushrooms fresh, sliced
1 (16-ounce) can cream style corn
1 teaspoon Worcestershire sauce
2 teaspoons salt
Freshly ground pepper to taste
12 ounces spaghetti broken up and cooked until almost tender
Cayenne pepper to taste
1 cup mozzarella cheese grated

Steps:

  • Heat oven to 375° F. In a large skillet combine oil, onion, green pepper, garlic, and ground beef. Sauté until vegetables are tender and beef is nearly brown. Add all remaining ingredients except cheese and stir until spaghetti is well-blended. Place mixture into a lightly-greased 2-quart casserole and sprinkle with cheese. Bake for 30 minutes or until cheese is melted and bubbly.
