1¼ pounds chicken tenders
1¼ pounds boneless skinless chicken breasts, cut into strips
2 teaspoons McCormick® Perfect Pinch® Italian Seasoning
2 teaspoons Lawry's® Seasoned Salt
1 cup grape tomatoes
½ cup cut-up string beans
½ cup cut-up asparagus
½ cup sliced yellow squash
½ cup sliced zucchini
½ cup bell pepper strips
½ cup sliced onion

Steps:

  • 1. Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 to 6 minutes or until golden brown.
  • 2. Stir in vegetables, Italian seasoning and seasoned salt. Cook and stir 5 minutes or until vegetables are tender-crisp. Add tomatoes; cook and stir 1 to 2 minutes or until tomatoes are slightly softened and chicken is cooked through.

4 skinless, boneless chicken breast halves, cubed
2 cloves garlic, chopped, or to taste
½ cup red cooking wine
1 (28 ounce) can Italian-style diced tomatoes
8 ounces small seashell pasta
5 ounces fresh spinach, chopped
1 cup shredded mozzarella cheese

Steps:

  • Heat the olive oil in a large skillet with a lid over medium heat, and cook and stir the chicken and garlic until the chicken is no longer pink in the center, 5 to 8 minutes. Pour the wine and diced tomatoes with their juice into the skillet, and bring to a boil over high heat while scraping any browned bits of food off of the bottom of the pan with a wooden spoon.
  • Stir in the shell pasta, and return to a boil. Cook uncovered, stirring occasionally, until the shells have cooked through, but are still firm to the bite, about 10 minutes. Spread the spinach over the top of the pasta, cover, and simmer until the spinach leaves are cooked, about 5 minutes. Sprinkle the mozzarella cheese evenly over the skillet, and simmer until the cheese has melted and the pasta is bubbling, about 5 minutes.

4 bone-in skin-on chicken thighs (about 1 1/2 lb total)
3/4 teaspoon salt
1/2 teaspoon pepper
1 medium onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 cup uncooked regular long-grain white rice
1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 1/3 cups Progresso™ chicken broth (from 32-oz carton)
4 tablespoons chopped fresh basil leaves
1/4 cup grated Parmesan cheese

Steps:

  • In 12-inch nonstick skillet, heat oil over medium-high heat. Season chicken with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Place chicken in skillet; cook 6 to 8 minutes, turning once, until browned on both sides. Remove chicken from skillet. Reserve 2 tablespoons drippings in skillet.
  • Reduce heat to medium. Add onion, garlic, remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook 3 to 4 minutes, stirring occasionally, until vegetables are softened. Add rice; cook and stir 1 minute. Stir in tomatoes and broth; heat to boiling. Reduce heat to low.
  • Place chicken thighs on top of rice; cover and cook 35 to 40 minutes or until chicken is cooked through (at least 165°F) and rice is tender. Transfer chicken to serving plates. Stir 2 tablespoons of the basil into rice; serve with chicken. Garnish with Parmesan cheese and remaining 2 tablespoons basil.

1/2 green pepper, sliced into strips
1/2 red pepper, sliced into strips

garlic powder
3 stalks celery, chopped
1 green bell pepper, chopped

3 -4 cups fresh sliced mushrooms (can use 2 4-ounce cans mushrooms, sliced also)

Steps:

  • In a large skillet or Dutch oven, season chicken with seasoning salt pepper and garlic powder (can use regular salt).
  • Brown the chicken in oil on medium heat (about 3 minutes on both sides) remove to a plate and set aside.
  • In the same skillet, saute onion, bell pepper, celery, fresh garlic, dried basil, dried oregano and mushrooms until soft, about 5 minutes (add in crushed hot pepper flakes, if using).
  • Add in the tomato paste and stir for about 1 minute.
  • Add in the stewed tomatoes and wine (if using) stir until combined.
  • Season with more salt and pepper if desired; cover and simmer tomato mixture for for about 20-25 minutes.

  • First I set up my microwave rice cooker, two cups rice and 4 cups water- 25 minutes on high... 1. Saute the chicken in a tbsp of olive oil on medium heat till golden and then set it aside. 2. Add a fresh tbsp of olive oil to the skillet and when its hot add the garlic & onions. 3. While the aroma is filling the kitchen wash two small to medium potatoes and slice or cut them into small bite size pieces, add to the skillet. 4. Stir it all good and make sure the potatoes aren't sticking then toss in the frozen veggies. 5. You may need to add some more olive oil at this point (the potatoes drink it up.) 6. put a lid on and let it steam a little, the moisture from the frozen veggies should do the trick, if not add a few tbsp water, stir occasionally (about 20 minutes.) 7. Drain the can of sweet potato and add toward the end since they are already soft. 8. Add the chicken to the skillet, give it a good stir, add more oil if necessary, and heat thru. 9. Meanwhile heat up some spaghetti sauce, (i use canned and don't bother to heat it as long as its room temperature) 10. To serve heap a nice mound of hot rice on a plate. Top with the stir fry and drizzle some spaghetti sauce on top (adds moisture to the dish), garnish with a little grated Parmesan cheese and hot buttered bread on the side.

Steps:

  • Heat oven to 425°F.

2 Tablespoons butter or margarine
1 cup onion, chopped
2 cloves garlic, chopped
2 cups fresh mushrooms, sliced
One 14.5 oz. can stewed tomatoes - Italian style, undrained, coarsely chopped
2/3 cup water
3/4 cup milk
12 oz. boneless, skinless chicken breasts, cut into 1/2-inch cubes
1/2 cup grated Parmesan cheese

Steps:

  • Melt butter in medium skillet over medium heat. Add onion and garlic and cook until soft, about 4 minutes, stirring frequently. Add mushrooms and cook about 5 minutes. 1 can (14 oz.) fat-free reduced-sodium chicken broth
1/4 cup flour
3 cloves garlic, minced
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
2 cups frozen peas and carrots
1 pkg. (17.5 oz.) refrigerated gnocchi, uncooked
2 Tbsp. chopped fresh parsley

Steps:

  • Heat 2 Tbsp. dressing in large skillet on medium heat. Add chicken; cook and stir 4 min. or until lightly browned. (Chicken will not be done.) Spoon chicken into bowl; set aside.
