Steps:
- Coat a large nonstick skillet with cooking spray and set over medium heat. Sauté sausage until browned, about 5 minutes; remove to a plate and cover to keep warm.
- Add oil to same skillet and heat for about 45 seconds; add garlic and sauté until golden, about 30 seconds. Add onion and sauté for 3 minutes. Add peppers and sauté until vegetables are softened, about 6 to 8 minutes more.
- Stir in vinegar and then return sausage to skillet; toss to combine.
- Split bread lengthwise-almost, but not all the way through; fill with sausage mixture. Cut into 4 equal pieces and serve. Yields 1/4 of hero per serving.

- Preheat oven to 375°. Place sausage pieces in a 15x10x1-in. sheet pan, arranging peppers and onion around sausage. Drizzle olive oil over sausage and vegetables; bake, stirring mixture after 15 minutes, until sausage is no longer pink and vegetables are tender, 30-35 minutes., During the last 5 minutes of baking, arrange buns cut side up in a second sheet pan; top each bun bottom with a cheese slice. Bake until buns are golden brown and cheese is melted. Spoon sausage and pepper mixture onto bun bottoms. Replace tops.

Steps:
- Bring large pot of lightly salted water to boil.
- Meanwhile, to make sauce, in large nonstick skillet over medium high heat, cook sausage stirring and breaking up meat with back of wooden spoon, until cooked through, about 3 to 5 minutes; remove to a plate.
- Heat oil in same skillet. Add yellow peppers and onion; cook, stirring frequently, until vegetables are lightlycolored and crisp tender, about 5 minutes.
- Add wine and garlic; cook until most of liquid evaporate, about 1 minute. Add tomatoes, crushed red pepper, salt and browned sausage; bring to a boil. Reduce heat to medium low, cover and simmer until vegetables are tender and sauce is heated through, about 10 minutes.
- While sauce simmers, add pasta to boiling water and cook according to package instructions. Drain pasta; return to pot. Add sauce and basil; toss to mix and coat. Yields about 1 1/3 cups per serving.

- Arrange 2 racks in middle and upper thirds of oven and preheat to 425 degrees F (220 degrees C). Line two 10x15-inch baking pans with foil.
- Toss bell peppers, onion, and tomatoes together in a large bowl with 1 tablespoon oil, balsamic vinegar, Italian seasoning, 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Transfer to one of the prepared pans.
- Roast in the preheated oven for 30 minutes.
- Meanwhile, drizzle bread slices with remaining olive oil and sprinkle with remaining salt and black pepper. Arrange on the other prepared pan.
- Remove the vegetables from the oven; push to one side of the pan. Add sausage to the exposed portion of the pan.
- Roast until vegetables are tender and sausage is heated through, 10 to 15 minutes more, adding the pan with bread in the last 5 minutes of roasting time. Sprinkle vegetables and sausage with oregano and serve with bread.
