An easy Italian-Style Baked Haddock recipe

1/4 cup (1/2 stick) butter
1 small onion, chopped
1 green bell pepper, chopped
1/4 teaspoon dried basil, crumbled
1 14 1/2-ounce can tomatoes, drained, chopped
Salt and pepper
N/A pepper
1 1/2 pounds haddock or lingcod fillets
2 cups grated mozzarella

Steps:

  • Preheat oven to 350°F. Grease 9-inch glass baking dish. Melt butter in heavy large saucepan over medium-high heat. Add onion, bell pepper and basil and sauté until vegetables are tender, about 10 minutes. Stir in tomatoes. Season with salt and pepper and cook until saucelike, stirring constantly, about 5 minutes. Arrange fish in prepared dish. Pour sauce over. Sprinkle mozzarella. Bake until fish is cooked through and top is golden, about 25 minutes.

This dish is easy and flavor packed. The recipie came from our local Food Market, Cub Foods. Even my kids, when toddlers, would beg for more - we seldom have leftovers yet if we do, I find myself heating this up for breakfast!

1/4 cup butter
1/2 cup chopped onion
1 green bell pepper, chopped
1/4 teaspoon dried basil, crumbled
1 (14 1/2 ounce) can tomatoes, drained,chopped
salt and pepper, to taste
1 1/2 lbs haddock fillets
2 cups grated mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 9 inch glass baking dish.
  • Melt butter in heavy large saucepan over medium-high heat.
  • Add basil, onion, and bell pepper and saute until vegetables are tender, about 10 minutes.
  • Stir in tomatoes, salt and pepper and cook until saucelike, stirring constantly, about 5 minutes.
  • Arrange fish in prepared dish.
  • Pour sauce over.
  • Sprinkle with mozzarella.
  • Bake, uncovered, until fish is cooked through and top is light golden, about 25 minutes.

This is a "spruced-up" way to serve haddock. The fish turns out moist and tasty with a fresh, flavorful topping of fresh garlic, onion and tomatoes. I normally cook with olive oil but choose to use butter with haddock, as I feel it best compliments the flavor of the fish.

2 filets haddock
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper, freshly ground
2 tablespoons butter, divided into quarters
1 garlic clove, minced
1/2 onion, small, sliced into thin rings
1/2 tomatoes, medium-sized, sliced thin
2 tablespoons seasoned breadcrumbs

Steps:

  • Preheat oven to 375°F.
  • In a baking pan, place ½ tbs. butter in the space where each filet will be laid. Season filets on both sides with seasoning salt and pepper and lay atop each ½ tbs. butter.
  • Sprinkle minced garlic evenly atop each filet. Then layer each filet with onion slices, then tomato slices, then remaining butter and finally sprinkle with seasoned breadcrumbs.
  • Bake for 15-20 minutes uncovered or until fish flakes easily when forked. If you desire extra crispy breadcrumb topping, broil on low heat for 2 minutes.
