This recipe contains no potatoes. It gets it name from the look of the candy. I have not tried this recipe myself. It is for an ISO request. Recipe says you can also dip in melted chocolate for Easter eggs.

1/4 cup softened butter
4 ounces cream cheese, softened
1 teaspoon vanilla extract
1 (16 ounce) package confectioners' sugar
7 ounces sweetened flaked coconut (2 1/2 cups)
1 tablespoon ground cinnamon

Steps:

  • NOTE: Be sure to use regular cream cheese, not whipped or reduced fat type.
  • In a large bowl, cream together the butter and cream cheese.
  • Add vanilla and confectioners' sugar.
  • Beat until mixture forms a ball.
  • Stir in coconut with a spoon.
  • Roll the mixture between your hands to form small potato-shaped candies or roll into small balls.
  • Place cinnamon in a shallow dish and roll the balls in it.
  • Place the balls on a cookie sheet and chill for about 1 hour or until firm.
  • If you prefer "dirtier potatoes" roll the candy a second time after they have chilled.
  • Alternatively dip in melted chocolate for Easter eggs.

6 whole peeled new potatoes
2 tablespoons unsalted butter
1/4 cup sour cream
1/2 teaspoon salt
1/8 teaspoon white pepper
1 slightly beaten egg
1 tablespoon finely minced scallion
1 tablespoon finely minced parsley
2 tablespoons melted unsalted butter
1/4 cup grated parmesan cheese
parsley sprig, as garnish

Steps:

  • Combine potatoes and water to cover in a saucepot, over medium heat. Bring to a
  • boil and simmer until potatoes are tender. Drain well and mash until smooth.
  • Add 2 tablespoons butter, sour cream, salt, white pepper, egg, scallions, and
  • minced parsley, mix well. Shape into 2-inch diameter balls (2 per portion).
  • Cover and chill for 2-24 hours. Place into an ungreased baking pan. Brush with
  • melted butter and sprinkle with parmesan cheese. Bake 375 degrees for 15-20
  • minutes, until browned lightly. Arrange onto a serving platter. Garnish with
  • parsley sprigs. Serve hot.
