O'KEE'S IRISH SODA OATMEAL BREAD



O'Kee's Irish Soda Oatmeal Bread image

Number Of Ingredients 8

1 cup regular rolled oats
2 cups buttermilk
3 tablespoons dark molasses
3 cups whole wheat flour
1 cup all-purpose flour, plus extra for dusting
1 ½ teaspoons salt
1 ½ teaspoons baking soda
1 teaspoon cream of tartar

Steps:

  • Mix rolled oats, buttermilk, and molasses in a large bowl until thoroughly combined.
  • Whisk together whole wheat flour, all-purpose flour, salt, baking soda, and cream of tartar until combined; pour flour mixture into buttermilk mixture and stir just until moistened.
  • Turn dough out onto a lightly-floured work surface and knead 3 or 4 times until dough holds its shape.
  • Cut dough in half; pat each half into a 6-inch round loaf.
  • Use a sharp knife to deeply score each loaf in quarters, cutting 1-inch deep.
  • Wrap each loaf in plastic wrap and allow to stand at least 12 hours at room temperature to ferment. (Loaves can be refrigerated up to 2 more days after this, if desired.)
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place loaves on an ungreased baking sheet.
  • Bake loaves for 15 minutes and reduce heat to 350 degrees F (175 degrees C). Continue to bake until loaves are browned and make a hollow sound when tapped on the bottom, about 20 more minutes.
  • Allow breads to cool for 10 minutes before slicing. To serve, slice loaves 3/4-inch thick all across the loaf, then cut slices in half.

There are several different recipes for Irish Oat Bread, and I have about six recipes in my own recipe collection. But this is the one I use the most often because it's really easy to prepare, it uses common pantry items that I usually have on hand, and it's great with a variety of different meals.

cooking spray or butter (to grease pan)
3 c all-purpose flour
1 1/4 c dry oatmeal
1 1/2 Tbsp baking powder
1 tsp salt
1 large egg
1/4 c honey
1 1/3 c milk
1 Tbsp melted butter (optional)

Steps:

  • 1. Preheat oven to 350°F. Grease or spray 9x5-inch loaf pan; set aside.
  • 2. In a large bowl, mix together the flour, oatmeal, baking powder, and salt.
  • 3. In a medium bowl, beat together the egg, honey and milk. Pour egg mixture into the dry mixture, and mix until moistened.
  • 4. Spread the batter into the prepared baking pan, and brush melted butter on top (if using).
  • 5. Bake at 350° for 1 hour and 15 minutes or until top has formed a very lightly browed crust. Let cool a few minutes in the pan, then invert onto a wire rack to cool.

This came from an old Irish Cookbook. It is totally different from the Irish Soda Bread. We love it because we like oatmeal.It is chewy and moist. I like to eat it at breakfast. Hope you enjoy it!!!!!!!!!!!!!!!!! Thank you Genny Culver Miller for sharing a picture.

3 c all purpose flour
1 1/2 Tbsp baking powder
1 tsp salt
1 1/4 c rolled oats
1/2 c raisins, optional
1 large egg
1/2 c honey
1 1/2 c milk
1 Tbsp melted butter

Steps:

  • 1. Sift together flour, baking powder, and salt. Add oats and raisins, if using. Beat egg lightly, Then add honey and milk and beat until well blended. Add dry ingredients and stir just until all is moistened. Turn into greased 9x5 loaf pan. Brush top of loaf with melted butter and bake at 350 degrees for 1 hour to 1 hour and 15 minutes.

I found this in Sunset a couple of years ago and it is my favorite bread recipe now! This bread is light and fluffy if you follow the directions exactly (be sure to soak the oats in the boiling water) Love ya- Grace!

Number Of Ingredients 10

2 1/4 cups boiling water
1 3/4 cups steel cut oats
1 tablespoon salt
3 tablespoons olive oil
3 tablespoons light brown sugar
1 dash granulated sugar
2 1/4 ounces dry yeast (about 2 1/4 teaspoons each)
1/2 cup warm water (100 to 110)
5 1/4 cups all-purpose flour, divided
1 cup whole wheat flour

Steps:

  • Combine the first 5 ingredients in the bowl of a stand-up mixer, and let stand 25 minutes.
  • Dissolve granulated sugar and yeast in warm water; let stand 5 minutes or until foamy. Add to oat mixture. Lightly spoon flours into dry measuring cups; level with a knife. Gradually add flour to oat mixture. Beat at medium speed until well blended.
  • Turn dough out onto a floured surface. Knead until smooth and elastic (about 8 minutes); add enough of the flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel sticky).
  • Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size. (Gently press two fingers into dough. If indentation remains, dough has risen enough.) Punch dough down; cover and let rest 5 minutes.
  • Divide in half. Working with one portion at a time (cover remaining dough to prevent drying), roll each portion into a 14 x 8-inch rectangle on a floured surface. Roll up each rectangle tightly, starting with a short edge, pressing firmly to eliminate air pockets; pinch seam and ends to seal. Place each loaf, seam sides down, in a 9-inch loaf pan coated with cooking spray. Cover and let rise 30 minutes or until doubled in size.
  • Preheat oven to 350º. Bake at 350º for 45 minutes or until loaves are browned on bottom and sound hollow when tapped. Remove from pan, and cool on wire racks.

Embrace your Irish side with this heart-healthy Irish oatmeal bread. Steel-cut oats and whole wheat fiber provide you with 3g of fiber and 5g of protein per slice!

1 cup + 2 tablespoon boiling water
1 cup steel-cut oats, not quick-cooking
1/2 tablespoon salt
1 1/2 tablespoons butter
1 1/2 tablespoons light brown sugar
Pinch of granulated sugar
1 teaspoon package instant yeast, 2 1/4-oz pkg
1/4 cup warm water, 100° to 110°
1 1/2 cups all-purpose flour, divided
1 1/2 cups whole wheat flour
Cooking spray

Steps:

  • Combine the first 5 ingredients (boiling water through light brown sugar) in the bowl of a stand mixer, and let stand 25 minutes.
  • Dissolve the granulated sugar and yeast in warm water; let stand 5 minutes or until foamy. Add to the oat mixture. Combine 1 1/4 cups of the all-purpose flour and all of the whole wheat flour. Gradually add the flours to the oat mixture. Beat at medium speed until well blended. Turn dough out onto a floured surface. Knead until smooth and elastic (about 8 minutes), adding enough of the remaining all-purpose flour, 1 tablespoon at a time, to prevent dough from sticking to hands if necessary (dough will still feel moist).
  • Place dough in a large bowl coated with cooking spray, turning to coat top. Cover with plastic wrap, then a clean kitchen towel, and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size.
  • Punch the dough down; cover with plastic wrap and let rest 5 minutes. Roll the dough into a 14 x 8-inch rectangle on a floured surface. Roll up the rectangle tightly, starting with a short edge, pressing firmly to eliminate air pockets; pinch the seam to seal.
