This is a fun version of nachos, using waffle fries instead of tortilla chips. Every year at our annual St. Patrick's Day party, this is the first appetizer to go!

1 (14 ounce) package frozen waffle fries
1 pound ground beef
1 (1 ounce) package taco seasoning
1 (8 ounce) package shredded Mexican cheese blend
1 cup diced tomatoes
½ cup sliced black olives
½ cup sliced jalapeno peppers
3 leaves romaine lettuce, chopped
3 tablespoons sour cream, or to taste
3 tablespoons guacamole, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Arrange waffle fries in a single layer on a rimmed baking sheet.
  • Bake in the preheated oven until light golden in color, 12 to 20 minutes.
  • Meanwhile, cook and stir ground beef in a large skillet until browned and crumbly, 5 to 7 minutes. Drain excess grease. Stir in taco seasoning and cook for 1 to 2 minutes more.
  • Transfer baked fries to a 9x13-inch baking pan. Spread ground beef evenly over fries. Cover beef with cheese.
  • Return to the oven until cheese has melted, about 5 minutes.
  • Remove from the oven and garnish with tomatoes, olives, jalapenos, and lettuce. Dollop sour cream and guacamole on top.

Not the healthiest snack, but one of my favorites for Sunday football! Feel free to tweak ingredients to suit your personal taste. Serve with your favorite condiments; I recommend blue cheese dressing or barbeque sauce.

1 (32 ounce) package frozen French fries
6 slices bacon
4 ounces Cheddar cheese, shredded
4 ounces Monterey Jack cheese, shredded
2 jalapeno peppers, seeded and sliced

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Arrange fries in a single layer on a rimmed baking sheet.
  • Bake in the preheated oven until light golden in color, 17 to 25 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Dice.
  • Remove fries from the oven. Preheat the oven's broiler. Lightly grease a 9x13-inch baking dish. Add a layer of fries, diced bacon, cheeses, and jalapeno peppers. Repeat layers until all ingredients are used.
  • Broil until cheese is melted, about 5 minutes.

3 russet potatoes, sliced 1/8-inch thick
1 tablespoon minced garlic
¼ cup vegetable oil
salt to taste
½ cup shredded Cheddar cheese, divided
½ cup shredded Monterey Jack cheese, divided
½ cup shredded mozzarella cheese, divided
4 green onions, chopped, divided
2 cooked chicken breasts, thinly sliced, divided
½ cup jalapeno peppers cut into rings, divided
1 large tomato, chopped
¼ cup salsa, or to taste
¼ cup sour cream, or to taste

Steps:

  • Place potatoes and garlic in a bowl and cover with several inches of cool water; let soak for 4 hours or overnight.
  • Preheat oven to 400 degrees F (200 degrees C). Drain potatoes and pat dry.
  • Combine potatoes and vegetable oil in a bowl and toss to coat. Spread potatoes slightly apart in a single layer on a baking sheet.
  • Bake potatoes in the preheated oven until golden brown, about 25 minutes.
  • Sprinkle salt over potatoes. Spread 1/2 the Cheddar cheese, 1/2 the Monterey Jack cheese, and 1/2 the mozzarella cheese over the potatoes. Sprinkle 1/2 the onions, 1/2 the chicken, and 1/2 the jalapeno peppers respectively over the cheese. Repeat layering with remaining cheeses, onion, chicken, and jalapenos.
  • Bake nachos in the oven until cheese melts and chicken is hot, 10 to 15 minutes. Top nachos with tomato, salsa, and sour cream.

  • Heat oven to 450°F.

1 jar nacho cheese sauce (your choice, hot or mild)
1/4 cup green onion, sliced thin (more or less to taste)

  • Layer potato chips on large platter (do not use regular or wavy potato chips, as they do not hold up to the cheese sauce).
  • Pour cheese sauce over chips. Add sliced onion and bacon (and jalapenos if desired). Microwave 1 minute (or until hot) or heat in slow oven until warmed through.

  • Heat oven to 450°F. Place waffle fries on ungreased cookie sheet.

5 potatoes, sliced thick with skin on
5 slices of bacon
1 c cheddar cheese, shredded
4 pickled jalapenos, sliced - (jar)
1/4 sweet onion, chopped
1 1/2 Tbsp seasoned salt
3/4 c corned beef, cooked and chopped
vegetable oil, for frying
TOPPINGS (optional):
sour cream
green onions, sliced
tomatoes, chopped
salsa
additional jalapenos

Steps:

  • 1. Fry potato slices in vegetable oil until golden & tender; drain paper toweling and sprinkle with seasoned salt.
  • 2. Cook bacon until crispy, then remove and set aside; Add onion to bacon drippings, then cook until transparent and tender.
  • 3. Layer potatoes on the bottom of an 8" or 10" cast iron skillet; add corned beef, crumbled bacon, onion, shredded cheddar cheese and jalapenos in that order.
  • 4. Place under broiler for 10-15 minutes or until hot and delicious.
  • 5. Finish with your choice of toppings and enjoy!

This aired yesterday and I ran out and HAD to try it. I LOVED IT! I had to post it. Even if no one here ever tried this and reviews this - at least I know if I ever want to find this recipe again - it will be here.

20 -24 ounces potato waffle-shaped French fries
1 lb deli-sliced corned beef, chopped
1/2 small head green cabbage, thinly sliced (about 2 cups)
1 cup shredded irish farmhouse cheddar cheese
1 cup guiness beer
1 cup chicken stock
2 tablespoons evoo extra virgin olive oil
1 small onion, thinly sliced
salt & fresh ground pepper
2 tablespoons butter
2 tablespoons flour

Steps:

  • Preheat oven to 450ºF.
  • Arrange the waffle fries on a baking sheet and cook according to package directions, adding about 10 minutes onto the baking time to make them extra crispy.
  • When the fries have about 10 minutes left, place a medium skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Add the corned beef to the skillet and sauté until light golden brown and heated through, 2-3 minutes.
  • Add the onions and cabbage to the pan, and cook until the onions have softened and cabbage has wilted, 4-5 minutes. Season with salt and pepper and reserve warm.
  • While the veggies are cooking, place a medium pot over medium-high heat and melt the butter. Add the flour to the pot and cook for about a minute.
  • Whisk the beer into the mixture and cook for about 30 seconds to cook off the alcohol. Whisk the chicken stock into the pan and bring up to a bubble. Simmer until thickened, 2-3 minutes, then remove from heat and stir in the cheese to melt. Season the sauce with salt and pepper.
  • To serve, arrange the crispy waffle fries on a platter, top them with the corned beef and cabbage mixture and douse with a good helping of cheese sauce.

3 large red skinned potatoes, scrubbed and sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 yellow onion, sliced
1/2 pound ground turkey
Salt
Pepper
2 teaspoons paprika
3 teaspoons garlic salt
2 tablespoons olive oil
1 cup cheddar cheese
1/2 cup salsa
Guacamole

Steps:

  • In a tart pan with a removable center, line the sliced potatoes in circles, making sure to cover as much as the bottom of the pan as possible. Season with salt, pepper, 1 teaspoon paprika and garlic salt and drizzle with olive oil and bake at 350°F for about 35 minutes. Once baked, remove from the oven and set aside. In a medium sized skillet drizzle olive oil to coat the pan and bring to medium high heat. Add the peppers and the onions and saute for 5 minutes. Transfer vegetable mixture on top of potatoes. Next add the ground turkey and remaining 1 teaspoon of paprika to the same skillet and saute until the turkey is fully cooked. Season with salt and pepper. Transfer the turkey mixture on top of the vegetables and then top with cheddar cheese. Put the pan back into the oven for 7 minutes until the cheese has melted. Once removed from the oven, top with Guacamole and Salsa and serve immediately.

An old friend of mine posted on Facebook that his daughter had hit it out the ballpark with Irish Nachos. The basic premise was potatoes rather than tortilla chips. She topped with sauteed onions, mushrooms, etc. I baked my potato slices, altho they could be fried, and my other toppings were not greasy, altho, ultimately we ARE talking messy nachos when you get down to eating. I fried the bacon and drained it before topping. Do make your sauce ahead of time as it needs to thicken. These are good and no trouble to put together.

1 - potato
- grated cheese
- fried bacon to taste
- sliced pickled jalapeno
1 - tomato
- chopped onion to taste

SAUCE ...
1/2 cup(s) miracle whip (don't use mayo)
1/2 teaspoon(s) regular paprika
1/2 teaspoon(s) garlic powder
1/2 teaspoon(s) white pepper
1 1/2 teaspoon(s) sugar
1/2 cup(s) milk

Steps:

  • Slice the potato. I use a russet and slice it with a mandolin. Wash it and don't peel it. Soak in cold water for one hour.
  • Fry bacon crispy while potato soaks
  • You can either bake the potato slices in 350 degree oven or fry them quickly in small batches in canola oil and drain on paper towels.
  • Layer your potatoes on a cast iron skillet (or some oven proof baking dish). Top with cheese ... I just make sure all the potatoes are liberally covered. Add crumbled bacon, chopped tomato, chopped onion and jalapeno slices.
  • Place under broiler until cheese is melted.
  • Top hot nachos with sour cream and sliced green onions. Serve with sauce (which is addictive)for slathering. You need to make the sauce ahead of time as it needs to refrigerate for two hours to thicken.
