A flavored fudge that is Oh s-o-o-o-o good. I usually make this around the Holidays for gifts. Seems as though everyone loves it.

Steps:
- Melt chips in a glass mixer bowl in the microwave.
- Add remaining ingredients(except the nuts) and blend.
- Add the nuts.
- Pour into a 13" x 9" waxed paper lined pan.
- Chill & cut into pieces.
BAILEY'S TRUFFLE FUDGE
Here's one of my favorites. If you like chocolate truffles and you like Bailey's Irish cream, you'll enjoy this mix making the best of both worlds combined.

Steps:
- Melt chocolates with butter until chocolates are soft enough to stir smooth. Do not overheat. Add chocolate and butter mixture to powdered sugar and Baileys. Stir until smooth, add nuts and mix well. Place fudge in an 8 x 8 pan, oiled. Lay a sheet of plastic wrap on top and gently press to smooth fudge.
- Truffle Topping:.
- Melt chocolates until soft. Remove from heat. With a fork, beat in butter and Baileys until smooth. Spread topping over fudge with knife. If a very smooth top is desired, place plastic wrap over top as in above.
- Refrigerate until firm; 1-2 hours. Can be frozen.
BAILEY'S IRISH CREAM FUDGE

- Line an 8 x 8 - inch or 9 x 9 - inch baking dish with parchment paper. Set aside.
- Combine all the ingredients in a large saucepan, and heat over low heat. Stir constantly making sure to reach the bottom of the pan to ensure no chocolate chips stick and burn.
- Continue stirring for approximately 5 to 6 minutes or until the chocolate chips melt completely and all the ingredients are well mixed.
- Pour the mixture into the prepared baking dish, and use a silicone spatula to smooth into an even layer. Transfer to the refrigerator to cool for at least 3 to 4 hours.
- Cut into squares, and serve. Store any leftovers in the refrigerator for up to 5 days.

IRISH CREAM FUDGE
This delicious treat makes a great gift and family dessert. This recipe makes about 5 pounds of fudge. You wouldn't believe how much people loved this fudge. I have requests for it alot but is rather expensive to make and makes alot but is so easy to make. You can use any kind of Irish Cream you choose. Also nuts are optional and if you choose to add them, any type your like will work well with this recipe.

- In a very large bowl, combine the 2 packages of milk chocolate chips, the one package of semisweet chocolate chips, both jars of marshmallow cream, 2 teaspoons of vanilla extract, the Irish Cream, and nuts if you are adding them.
- Set this mixture aside.
- Line a 10-x-15-inch pan with foil and spread lightly with butter or margarine.
- In a medium sized saucepan, combine 4 1/2 cups of granulated sugar, 1 can of evaporated milk, and 1/2 pound of butter.
- Bring to a gentle boil over medium heat first and then cook slowly, stirring constantly for about 10 minutes.
- Pour the milk mixture into the very large bowl holding the chocolate chip mixture.
- Stir slowly by hand to combine.
- It is very important to do this by hand and NOT use any kind of mixer.
- Pour the fudge into the prepared pan and chill until set.

- In a saucepan, melt the butter, brown sugar, golden syrup, and double cream over a low-medium heat and mix gently until combined.
- Once combined, place a sugar thermometer into the saucepan and heat the mixture until it reaches 116˚C (240˚F), stirring every now and then.
- Take off the heat and mix in the dark chocolate and Irish cream.
- Pour into a baking tin and then pour the white chocolate in the middle.
- Using a cocktail stick or the handle of a spoon, swirl the white chocolate into the dark chocolate mixture.
- Chill in the fridge until solid. Cut into squares.
- Enjoy!

- Whisk heavy cream and sugar together in a small saucepan over medium heat. Heat until the edges of the cream show fine bubbles but mixture does not boil, allowing sugar to dissolve. Remove from heat.

I found this recipe a while ago and decided to share. It is so rich--the recipe originally called for nuts, but honestly you do not need them. This fudge is heavenly and besides, not everyone likes nuts. Of course you may add them by stirring in the fudge mixture or pressing into topping. I hope you enjoy! 8)

Steps:
- To make: Melt the chocolates together, stirring until smooth; remove from burner.
- Blend in the 2 tbsp butter then Irish cream, beating until smooth.
- When fudge is even, spread over and chill.
- Spray a 8-inch square pan with cooking spray, setting aside for now.
- In a saucepan, melt the chocolate and butter until soft the smooth.
- You do NOT want to over-heat!
- Stir mixture.
- Combine the chocolate mixture with the sugar and cream.
- Continue stirring until mixture is smooth.
- Pour mixture into pan.
- Smooth the top of fudge by laying piece of plastic wrap, pressing carefully and evenly.
- Prepare the topping as noted above.
- Evenly spread topping over fudge and chill for a few hours before cutting.
