DATE NUT LOAF CAKE



Date Nut Loaf Cake image

An easy and quick date nut loaf served with a warm brown sugar sauce.

1 cup dates, pitted and chopped
1 cup water
½ cup butter
1 cup white sugar
1 teaspoon baking soda
1 ½ cups all-purpose flour
1 egg, beaten
1 teaspoon vanilla extract
1 cup chopped walnuts
¼ cup butter
⅓ cup heavy cream
½ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. In a saucepan over medium heat, bring dates and water to a boil. Stir in 1/2 cup butter and 1 cup sugar until melted. Remove from heat and stir in baking soda. Let cool for 10 minutes.
  • Place date mixture into a large bowl. Blend in flour, eggs and vanilla. Stir in chopped walnuts. Pour batter into prepared pan.
  • Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Serve slices with Warm Sauce.
  • To make Warm Sauce: In a saucepan over medium heat, combine 1/4 cup butter with cream and brown sugar. Heat, stirring constantly, until mixture boils and sugar is dissolved.

1 1/2 cups chopped dates
6 tablespoons water
2 tablespoons honey
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
3/4 cup chopped walnuts
1 tablespoon dry breadcrumbs
1 1/4 cups semolina (can use farina or regular Cream of Wheat)
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 cup granulated sugar
1/2 teaspoon vanilla
1/2 cup butter, plus
1 tablespoon butter, melted

Steps:

  • Combine dates and water in a small saucepan. Bring water to a boil; simmer 5 minutes, stirring constantly. Stir in honey, lemon juice, cinnamon, and nuts. Remove from heat.
  • Preheat oven to 400ºF. Butter a round 8-1/2" cake pan; sprinkle with breadcrumbs.
  • In a large bowl, combine semolina (or farina, or Cream of Wheat), flour, baking powder and sugar. Sprinkle vanilla over the mixture. Stir in butter.
  • Spoon half of the mixture into the buttered cake pan; press over bottom and up side of pan. Spoon date mixture evenly over the top. Sprinkle the remaining flour mixture over the date mixture.
  • Bake in center of the oven for 35 to 40 minutes, or until golden brown. Cool, then slice.

Yield makes one 8-inch (20-cm) square cake; 8 to 10 servings

2 cups (12 ounces/340 g) pitted dates, quartered
1 cup (100 g) walnuts, toasted and coarsely chopped
1 cup (140 g) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 teaspoon aniseed
3 large eggs, at room temperature
1 cup (200 g) granulated sugar
3 tablespoons (45 ml) orange juice (freshly squeezed or store-bought)
1 teaspoon vanilla extract
Powdered sugar, for dusting the cake

Steps:

  • Preheat the oven to 350°F (175°C). Butter the bottom and sides of an 8-inch (20-cm) square cake pan, dust it with flour, and tap out any excess.
  • In a small bowl, use your fingers to toss together the dates, walnuts, and 1 tablespoon of the flour, breaking up the sticky date pieces.
  • In another small bowl, whisk together the remaining flour, the baking powder, and salt. Crush the aniseed in a mortar and pestle or seal them inside a sturdy plastic bag and crush with a rolling pin. Add the crushed seeds to the flour mixture and stir to combine.
  • In a large bowl, whisk together the eggs, granulated sugar, orange juice, and vanilla. Stir in the flour mixture, then the date-nut mixture just until combined.
  • Scrape the batter into the prepared cake pan and bake until the top is light golden brown and the cake feels just barely firm in the center, about 40 minutes.
  • Heavily dust the warm or room-temperature cake with powdered sugar. Cut into squares right in the cake pan.

  • The cake will keep for up to 3 days at room temperature.

DATE TRUFFLES (MADGOOGA)



Date Truffles (Madgooga) image

This recipe is easy to make and popular in Iraq since one of the things that Iraq is famous for is dates. We have lots of varieties and kinds of dates from chewy to very hard. It is better to use this recipe with hard type of dates (called kasab) not soft, but you could use soft dates if you didn't find hard dates. Sometimes Ii use already-crushed dates from the market and it goes well too. There are lots of varieties for the coating of the truffles, use as many coatings as you like according to your personal taste.

2 cups pitted dates, hard type
1/2 cup sesame paste
1/2 teaspoon ground cardamom
plain cocoa powder
icing sugar
ground coffee, not espresso
sesame seeds
shredded coconut
ground nuts (pistachio, walnuts, hazelnuts, cashew nut, peanuts and almonds)
whole anise seed
ground cinnamon
sugar candy sprinkles
chopped Oreo cookies

Steps:

  • Put all ingredients in a bowl.
  • Grind the mixture with meat grinder finely.
  • Shape the dates into small balls 2 cm in diameter with slightly oiled hand with vegetable oil (I like to shape them roughly so they are not so perfect balls).
  • Roll the truffles in your selected coating and place on parchment paper or tray.
  • Put the truffles in small decorative paper cups and arrange them in the serving plate.
  • If you bought dates that are already ground and pitted, you don't need to grind them in the meat grinder, simply knead ingredients together by hand or you can grind it again by the meat grinder.

4 cups nuts
1 lb dates, chopped
1 cup candied cherry
1 cup flour
1 cup sugar
1 teaspoon salt
3 teaspoons baking powder
4 eggs, beaten
1 teaspoon vanilla

Steps:

  • Mix nuts, dates and cherries in a large bowl.
  • Combine flour, sugar, salt, and baking powder.
  • Sprinkle flour mixture over fruit; mix well.
  • Add beaten eggs and vanilla.
  • Mix throughly.
  • Bake in tube pan at 275 degrees fahrenheit for 1 hour and 15 minutes.

This was my favorite birthday cake growing up as a young boy. Everytime my Grandma Laura would come to visit us in Taos, NM, she'd pick one up from Dory's Bakery and bring it over. I was able to get ahold of Dory long after she'd sold the place and surprisingly she still remembered me and my mother, Joan, who was her friend. She gladly gave me the recipe although the measurements were obviously for multiple cakes, I quartered it and came up with the right increments for just one really large one or a couple regular ones. This cake doesn't include frosting but was sprinkled with powdered sugar and served. Believe me when I tell you the frosting is not missed! This coming from a former little boy with a hell of a sweet tooth!

2 cups chocolate chips
4 cups flour
1 1/3 cups margarine

4 eggs

1 1/2 cups sugar
1 cup powdered sugar

Steps:

  • Preheat oven to 325°F.
  • Grease (2) 9" x 13" cake pans.
  • Combine flour, coco powder, baking soda, salt and sugar whisk, then add eggs and margerine in electric mixer bowl and combine.
  • Add water and dates.
  • Combine walnuts and chocolate chips and reserve 1/2 for cake topping.
  • Add the other half to the batter and mix inches.
  • Spread batter into pans and add the reserved nuts and chocolate chips as a topping for the cakes.
  • Bake for 40 minutes.
  • Sprinkle with powdered sugar after cakes are cool and before serving.
