INSTANT POT SAUERKRAUT AND SAUSAGE
This Instant Pot Sauerkraut and Sausage is an easy recipe and delicious way to enjoy pork and sauerkraut.Smoked and savory sausage, hearty potatoes and unique sauerkraut notes are wonderfully balanced with beer and fresh rosemary.

Steps:
- Browning sausage on saute setting in Instant Pot is optional. Some enjoy the flavor that browning brings out. Brown sausage in 2 tablespoons of oil if doing this step.
- Drain most of the liquid from sauerkraut and place in the bottom of a 6 or 8 quart Instant Pot.
- Add cubed potatoes, chunks of sausage and sprigs of Rosemary.
- Pour one cup of beer evenly over the top of all ingredients.
- Seal the pot and cook on high pressure for 9 minutes or stew for 30 minutes. When the timer beeps and cooking is done perform a quick release to remove all pressure.

- In a 3- or 4-qt. slow cooker, combine the potatoes, carrots and onion. Combine the sauerkraut, brown sugar, mustard and caraway seeds; spoon over vegetables. Top with sausage and broth. Cover and cook on low for 8-9 hours or until vegetables are tender.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon; cook until crispy, 8 to 10 minutes. Pull bacon out with tongs and set in a bowl. Add kielbasa to the pot; lightly brown on all sides, 5 to 7 minutes. Remove with tongs and place in the bowl with the bacon.
- Saute onions in the pot until soft, 2 to 3 minutes. Crumble the bacon and add to the pot. Stir in brown sugar. Add potatoes, sauerkraut, chicken broth, apple, beer, and salt. Mix gently.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 12 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method for 10 minutes according to manufacturer's instructions. Release remaining pressure carefully using the quick-release method. Unlock and remove the lid.

INSTANT POT® SAUERKRAUT SOUP WITH SAUSAGE
Emeril Lagasse's sauerkraut soup with sausage has been one of my favorites for years. While it is not hard to make on the stovetop, it does take an hour and a half. This is my adaptation for the Instant Pot®. Serve with crusty bread, if desired.

Steps:
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add sausage and cook until caramelized and fat is rendered, about 4 minutes. Add onion, celery, garlic, thyme leaves, and pepper. Cook for 3 more minutes. Cancel Saute mode.
- Add sauerkraut, potatoes, chicken broth, and hard cider to the pot. Close and lock the lid. Select High pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes.
