A chili that's just about as classic and universally loved as it gets-but made faster than ever in your Instant Pot®! We based this recipe on our ultra-popular Slow-Cooker Family Favorite Chili to take the guesswork out of preparing an easy, warming chili that's right for any occasion-including the next chili competition you want to win!

1 tablespoon vegetable oil
1 lb extra lean (at least 90%) ground beef
1 cup chopped onions
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
3/4 teaspoon salt
1/2 teaspoon pepper
2 cloves garlic, finely chopped
1 can (19 oz) Progresso™ kidney beans, drained, rinsed
1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
3/4 cup water
Shredded Cheddar cheese, sliced green onions and chopped fresh cilantro leaves, if desired

Steps:

  • On 6-quart Instant Pot®, select SAUTE; adjust to normal. Heat oil in insert. Add beef, onion, chili powder, cumin, salt and pepper; cook 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Select CANCEL.
  • Stir in garlic. Stir in beans, tomatoes and water. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 5 minutes. Select CANCEL. Keep pressure valve in SEALING position to release pressure naturally. Top with cheese, green onions and cilantro.

Use your Instant Pot to make this classic, beef-and-bean chili. Canned chipotles in adobo give it an extra kick of smoky, spicy flavor.

3 tbsp. vegetable oil
1 1/4 lb. lean ground beef
2 tsp. ground cumin
2 tsp. chili powder
2 tsp. salt, divided
1/2 small yellow onion, chopped
3 garlic cloves, finely chopped
2 c. reduced-sodium beef stock
2 (15 oz.) cans black or kidney beans, drained and rinsed
1 (15 oz.) can diced fire-roasted tomatoes
2 tbsp. tomato paste
1 tbsp. pureed chipotles in adobo (optional)
Shredded cheddar cheese, sour cream, chopped green onion, and corn chips, for serving

Steps:

  • Add the oil to the liner of a 6- or 8-quart Instant Pot and set to sauté. Add the beef then sprinkle with cumin, chili powder, and 1 teaspoon of salt. Cook, stirring often to break up the meat, until browned, about 7 minutes. Stir in onion and garlic; cook, stirring often, until onion is slightly softened, about 3 minutes more.
  • Add the beef stock to the Instant Pot, stirring to release any browned bits from the bottom of the liner. Gently stir in the remaining 1 teaspoon salt, beans, tomatoes, tomato paste, and chipotle puree, if using. Press the cancel button to reset the Instant Pot.
  • Cover the Instant Pot with the lid and lock it into place. Seal the steam release handle. Select high pressure and set the timer for 14 minutes. When the timer is up, let it rest for 10 minutes, then manually release the pressure (unseal the steam release handle). Unlock and remove the lid, being careful of any remaining steam.
  • Give the chili a good stir to recombine all of the ingredients. Serve topped with cheese, sour cream, green onion, and corn chips.

1 tablespoon smoked paprika
1 ½ teaspoons firmly packed light brown sugar
1 teaspoon salt
½ teaspoon ground black pepper
2 pounds boneless pork loin roast, cut into 1-inch cubes
1 tablespoon olive oil
1 ½ cups barbeque sauce
1 cup water
2 (12 count) packages Hawaiian bread rolls (such as King's®)

Steps:

  • Whisk smoked paprika, brown sugar, garlic powder, salt, and black pepper together in a large glass or ceramic bowl. Add pork and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 30 minutes.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil and cook pork in batches until browned, 5 to 7 minutes. Pour in barbeque sauce and water. Close and lock the lid; select Manual function and set timer for 60 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove lid; transfer pork to a separate plate. Reselect Saute function and simmer sauce until thickened, about 10 minutes. Shred pork with 2 two forks; mix with sauce.
  • Slice bread rolls in half and fill with pulled pork; cover with tops.
