1 tablespoon Worcestershire sauce

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter and cook beef chuck cubes in batches until browned on all sides, about 5 minutes per batch.
  • Return all beef chuck to the pot. Add potatoes, mushrooms, onion, carrots, and garlic; cover with beef broth. Stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary. Close and lock the lid. Select Meat/Stew function according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.

1 tablespoon vegetable oil
2 1/2 pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes
2 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1/3 cup dry red wine
3 carrots, cut into 2-inch pieces
3 celery ribs, cut into 1-inch pieces
1 sprig fresh thyme
1 cup frozen pearl onions

Steps:

  • Add the oil to the Instant Pot® and set to saute (see Cook's Note).
  • Meanwhile, toss the beef with the flour, 2 teaspoons salt, and a generous amount of pepper in a medium bowl. Add the meat and all the flour to the Instant Pot® in a single layer and cook, undisturbed, until golden brown on the bottom, about 3 minutes. Stir once and allow to brown for another 2 to 3 minutes. Add the tomato paste and stir to coat. Add the wine and bring to a boil. Cook for 1 minute, scraping up browned bits from the bottom of the pot with a wooden spoon.
  • Add the carrots, celery, thyme and onions and stir to coat. Follow the manufacturer's guide for locking the lid and set to pressure cook on high for 40 minutes. After the pressure cycle is complete follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Careful of any remaining steam, unlock and remove the lid.

Instant Pot® Beef and Mushroom Stew image

This hearty stew is cooked in the Instant Pot®. It relies on potatoes and aromatics breaking down during the cook to form a rich gravy for tender meat and delightful mushrooms. If you want to add a thickener, use the optional directions for cornstarch. We liked it over wide egg noodles, but it would also work on top of rice or mashed potatoes. My guys liked it, so I guess it is a man-pleaser!

2 pounds chuck roast
salt and ground black pepper to taste
1 tablespoon avocado oil, or more as needed
2 medium onions, chopped
½ cup minced celery
4 cloves garlic, minced
1 teaspoon herbes de Provence
2 large bay leaves
½ cup red wine
1 ½ cups beef stock
3 tablespoons tomato paste
1 tablespoon soy sauce
1 tablespoon fish sauce
2 cups diced russet potatoes
3 (8 ounce) packages mushrooms, quartered
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Cut roast into pieces that will fit the inner pot and pat dry with paper towels. Season one side with salt and pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add enough oil to cover the entire bottom surface of the pot and wait until indicator reads "Hot". Carefully add a piece of beef to the pot, seasoned side down, and saute until nicely browned, about 6 minutes. Season the other side with salt and pepper and turn, using tongs. Brown for an additional 6 minutes and remove to a plate to keep warm. Repeat with remaining beef.
  • Add onions and saute in the drippings until softened, about 3 minutes. Add celery, garlic, herbes de Provence, and bay leaves, and saute until garlic is fragrant, about 1 minute. Pour in red wine and use a wooden spoon to stir all the browned bits off of the bottom of the pot, and cook for about 2 minutes. Turn off Saute function.
  • Cut browned beef into cubes about 1 1/2 inches thick, removing fat and any gristle. Return to the pot.
  • Stir beef stock, tomato paste, soy sauce, and fish sauce together in a small bowl. Add to the pot and stir in potatoes. Gently push meat pieces until they are at or below the liquid level.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 22 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully, about 5 minutes. Unlock and remove the lid.
  • Stir in mushrooms. Make sure most of the mushrooms are partially submerged in the liquid. Adjust seasonings, if desired. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully, about 5 minutes. Unlock and remove the lid.

Steps:

1 small onion, chopped
1 poblano chile pepper, halved, seeded and thinly sliced

1 15-ounce can diced tomatoes with chiles
1/2 cup corn chips, finely crushed, plus more for topping
1 tablespoon apple cider vinegar
1/2 cup fresh cilantro, roughly chopped, plus more for topping

Shredded cheddar cheese and sliced scallions, for topping

Steps:

  • Mix the chili powder, cumin, coriander, paprika and cinnamon in a small bowl. Put the beef in a medium bowl; add 4 teaspoons of the spice mixture, season generously with salt and pepper and toss until coated. Set aside.
  • Set an Instant Pot to saute at normal heat. When the display indicates "hot," add the olive oil, then add the onion, poblano, garlic and a generous pinch of salt. Cook, stirring often, until tender and lightly browned, about 5 minutes. Stir in the remaining spice mixture and cook, stirring, until lightly toasted, about 1 more minute.

Steps:

  • On a cutting board, pat the cubed chuck roast dry with paper towels. Season all over with the salt and pepper.
  • Set the Instant Pot to sauté and add 1 tablespoon of olive oil. Once the oil begins to shimmer, add the beef, working in batches to avoid overcrowding, and brown on all sides, about 2 minutes per side. Transfer the browned beef to a plate to rest.

2 tablespoons all-purpose flour
1 pinch salt and ground black pepper to taste
1 pinch garlic powder, or to taste
1 pinch seasoned salt (such as LAWRY'S®), or to taste
3 pounds cubed beef stew meat
2 tablespoons butter, or as needed
½ onion, chopped
2 cloves garlic, chopped
2 tablespoons tomato paste
3 cups beef broth
¾ cup red wine
1 ½ pounds potatoes, cut into chunks
3 carrots, cut into chunks
3 stalks celery, cut into chunks
3 parsnips, cut into chunks
½ teaspoon dried thyme
1 small bunch fresh parsley, chopped

Steps:

  • Mix flour, salt, pepper, garlic powder, and seasoned salt together in a shallow bowl. Add beef and toss to coat.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter in the pot. Add beef in small batches and cook until browned, about 5 minutes. Transfer beef to a plate.
  • Add onion to the pot and saute for 4 minutes. Add garlic and tomato paste and cook until melded together, about 30 seconds. Pour in broth and wine; bring to a simmer, about 5 minutes. Scrape cooked bits from the bottom of the pot. Add browned beef, potatoes, carrots, celery, and parsnips. Add thyme and adjust seasoning, if desired.
  • Close and lock the lid. Choose Manual and high pressure; set the timer for 20 minutes. Allow 10 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Unlock and remove the lid.
  • Transfer meat and vegetables to a serving plate. Select Saute function and simmer liquid in the pot until reduced by half, about 10 minutes. Serve alongside stewed meat and vegetables.

½ teaspoon granulated garlic
½ teaspoon granulated onion
½ teaspoon salt
½ teaspoon Italian seasoning (such as Trader Joe's® 21 Seasoning Salute)
1 pound beef stew meat
1 tablespoon salted butter
1 tablespoon extra-virgin olive oil
1 (8 ounce) package white mushrooms, quartered
1 (8 ounce) package portobello mushrooms, quartered
¾ cup beef broth
2 tablespoons balsamic vinegar
2 teaspoons tomato powder
1 teaspoon arrowroot powder

Steps:

  • Combine 2 tablespoons arrowroot powder, garlic, onion, salt, and seasoning in a quart-sized resealable bag. Add beef stew meat and toss to coat.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter and olive oil and allow to get hot. Add meat and cook until browned on all sides, in batches if necessary, 5 to 10 minutes per batch. Add mushrooms and stir to combine. Mix in beef broth, vinegar, and tomato powder. Cancel Saute function.

Steps:

2 pounds Stew Meat/Chuck Roast Cut into 1.4 inch cubes Beef or Bison
3 tablespoons Vegetable Oil
1 cup Onion
2 teaspoon Garlic (I used Penzy's Roasted Garlic)
1 cup Carrot
2 pounds Potatoes
2 cups Beef Broth (or bullion equivalent)
1 cup Red Wine
1 tablespoon Worcestershire Sauce
2 pieces bay leaf
2 tablespoons Thyme
1 teaspoon Chervil
2 tablespoons Tomato Paste
1 tablespoon Wondra Flour

Steps:

  • Saute Meat. Heat Pan, add oil, do not crowd meat, probably need three batches, adding oil as needed. Bison and lean beef will need more.. Brown well.
  • While meat is cooking, dice onions, slice carrots and celery, peel and cut up potatoes. Set aside individually.
  • Once the meat is done, saute onions until soft. Salt onions a bit to make them sweat. You can also add the carrots and celery if you want.
  • Add garlic for the last 30 seconds (do not burn)
  • If the bottom of the pan is too brown burned, scoop out onions and garlic on top of the meat and wash pan. Once clean and try, put back on the heat, heat up and add oil. Then add some of the meat and onion to cook just a bit.
  • Deglaze pan with wine, scraping up the small bits. Make sure it is clean so it doesn't give you a burn warning. Cook for a couple minutes
  • Add broth (or water plus bullion), Worcestershire sauce, and tomato paste. Mix well. Add meat, onion, celery, carrots, thyme, bay leaf, chervil, pepper. Give it a single stir. Optional, add a pinch of red pepper flakes.
  • Potatoes. You can add the potatoes now. Or if you don't like them mushy cook it for 15 minutes, instant release, add potatoes cook another 20 minutes, didn't try this. You could do this will all the veges.
  • Cook on high pressure for 35 minutes, then natural pressure release for 10 minutes. Then Vent.
  • Discard bay leaves. Take a cup or two out of the broth and add wondra flour. How much depends on how watery the broth is, how cooked the potatoes are, etc. I would guess 1 - 2 tablespoons Wondra. Mix in with the broth really well, and then add to stew. Cook on saute until it is the desired thickness.

  • saute onions, garlic, shallots and meat together until lightly browned (about 4 or 5 minutes). don't burn it.
  • mix in broth, wine, balsamic vinegar and dates.
  • cancel saute mode, put lid on and seal valve. use manual mode to cook for 40 minutes.
  • when done, allow depressurize using 'natural release' method.
  • serve over rice, mashed potatoes, or calliflower.

This is my regular recipe for beef stew that I've been making for years on the stove top. This is a super simple, pretty basic recipe that lends itself well to additions that you may personally prefer, including adding some dumplings on top at the end ! The result in the Instant Pot is far superior to the many times I've done...

1 Tbsp butter
1/2 c chopped onion
1 c small button mushrooms or larger ones cut in half or quarters
1 lb beef - stew meat, round steak .. any cut you want to use
2 c carrot chunks - no bigger than 1" in length1/2" thick
1 c thickly sliced celery - no bigger than 1" in length
2 medium size russet potatoes or 4 little red potatoes
2 tsp montreal steak seasoning
1 can(s) beef consomme
2 Tbsp tomato paste
1/2 c frozen baby peas - optional
1/2 c corn - canned or frozen - optional
1 pkg low sodium beef gravy mix or a roux of 2 tbsp butter and 1 tbsp flour

Steps:

  • 1. Turn Instant Pot on to Saute and add the butter. Once the butter is melted add the onions and saute for 3 minutes - stirring frequently. Toss in the mushrooms and continue to stir and cook for another 3 minutes.
  • 2. Add the meat to the pot and stir for 2 minutes then hit cancel to stop the saute.
  • 3. Toss in the carrots, celery, potatoes and then sprinkle with Montreal Steak Seasoning. Pour the beef consomme over all and stir. Add the tomato paste and 1 soup can of water and stir again to incorporate. The contents should be almost - but not entirely - covered by the liquid.
  • 4. Attach the lid and set the the vent to seal. Set the Instant Pot control to pressure cook then set the timer for 24 minutes.
  • 5. Once the stew is finished stir in the optional frozen peas and the corn if you are using those allow to set for 5 minutes.
  • 6. If you prefer your stew to have a thicker sauce/gravy then now is the time to prepare the package gravy by using only half of the liquid on the instructions. Whisk together then add the liquid from the stew. Once you have it well blended pour over the stew and stir. If you are making your own roux use the liquid from the stew to complete your sauce/gravy.
  • 7. Serve hot and season with salt and pepper to taste.

1 cup coarsely chopped onion

7-8 whole allspice berries
2 bay leaves
1/4 cup Wondra flour or all-purpose flour
1/4 cup cold water
1/2 cup milk
Mashed potatoes for serving

Steps:

  • Season beef generously with salt and pepper.
  • Select Sauté on the pressure cooker and add oil and butter to the pressure cooking pot. When butter is melted, brown the meat in batches for about 5 minutes per batch until all meat is browned on all sides. Do not crowd the pot. Transfer to a plate.
  • Add the onion to the pot. Sauté for about 3 minutes, stirring frequently, until softened.
  • Stir in a small amount of the beef broth to deglaze the pot. Be sure and scrape up any brown bits from the bottom of the pot. Add the remaining broth and return the beef and any juices to the pot.
  • Add the allspice and bay leaves. Lock the lid in place. Select High Pressure and 15 minutes cook time.
  • When the cook time ends, allow the pressure to release naturally for 10 minutes before finishing with a quick pressure release. When the valve drops, carefully remove the lid. Remove and discard the bay leaves and allspice.
  • In a small bowl, whisk the flour and cold water until smooth. Add 1/2 cup of the hot broth to the flour mixture and stir to combine, then add the flour and broth mixture to the pressure cooking pot.
  • Select Sauté and bring the gravy to a boil, stirring constantly, until thickened and there's no more raw flour taste. Stir in the milk. Taste and add salt and pepper if needed.
  • Serve over mashed potatoes.

Salt & pepper, to taste
Brussel sprouts, quartered
Carrots, chunked
Celery tops, chopped fine
Cabbage, chopped fine
Broccoli stems, chopped fine
8 ounces fresh baby portobello mushrooms, sliced
1 cup dry barley, rinsed
1 tablespoon honey, optional

Steps:

  • Brown meat. Add garlic, onion, and cook a little. Add water, bullion, soup mix, salt and pepper - beef stock as needed Put in Instant Pot on High Pressure for 35 minutes Natural pressure release 15 minutes Add b. sprouts, carrots, celery tops, cabbage, broccoli stems, mushrooms, barley, and dried basil Add beef stock as needed Put in Instant Pot on high pressure for 11 minutes Quick Release. Taste and season as needed. A little Cavenders is good! I also add about 1 tablespoon honey. Serve with cornbread.
