INSTANT POT STICKY HOISIN BABY BACK RIBS

Instant Pot Sticky Hoisin Baby Back Ribs image

Cooking ribs under pressure means they get incredibly tender without falling apart or shredding-in a fraction of the time as braising and with no attention needed.

Provided by Mark Bittman

Categories     Instant Pot     Pork Rib     Honey     Soy Sauce     Wine     Ginger

Yield 4 main course or 8 appetizer servings

Number Of Ingredients 12

4 lb. baby back pork ribs (about 2 racks)
2 tsp. kosher salt
1 tsp. freshly ground black pepper
1/3 cup hoisin sauce
1/3 cup honey
1/3 cup soy sauce, preferably dark
2 Tbsp. Shaoxing rice wine or dry sherry
1 Tbsp. finely chopped fresh ginger
1/2 tsp. five-spice powder
Flaky sea salt
Special Equipment
An Instant Pot

Steps:

  • Cut meat between bones into individual ribs; season with kosher salt and pepper. Let sit at room temperature at least 30 minutes and up to 1 hour.
  • Whisk hoisin, honey, soy sauce, rice wine, ginger, and five-spice powder in cooker insert. Toss ribs in sauce to coat, then fit as many as possible in a single layer; set remaining ribs on top. Lock on lid, making sure steam release valve is in the proper sealed position. Select "Manual" and program for 12 minutes at high pressure.
  • As soon as the time has elapsed, turn off cooker, "Quick Release" the steam, and unlock lid. The ribs should be tender enough to easily pierce with a sharp knife. Transfer ribs to a platter.
  • Select "Sauté" and let cooking liquid simmer until reduced by about half, 10-15 minutes.
  • Meanwhile, prepare a medium direct fire on a gas or charcoal grill (or preheat broiler). Brush ribs with sauce. Place ribs on grate directly over fire, meaty side down. Close lid and grill until browned and crisp in places, about 5 minutes (or transfer them to a baking sheet, meaty side up, and broil the same way).
  • Return ribs to platter. Top with sea salt. Serve with remaining sauce alongside.
  • Cooks' Note: For a fruitier spin on the sauce, substitute pineapple or orange juice for the honey and use a pinch of cayenne or crushed red pepper flakes instead of the five-spice powder.

INSTANT POT BABY BACK RIBS RECIPE - (4.6/5)

Instant Pot Baby Back Ribs Recipe - (4.6/5) image

Number Of Ingredients 15

RUB:
1 (4-pound) rack of baby back pork ribs
rub (recipe below), or 1/2 cup Neely's BBQ Seasoning or to taste
1 cup water
1/2 cup apple cider vinegar
1/4 teaspoon liquid smoke, optional
1/2 cup BBQ sauce
1/4 cup brown sugar
1 teaspoon chili powder
2 teaspoon dried parsley
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper

Steps:

  • Remove the lining from the bottom side of the ribs by running a butter knife under the skin and then using a paper towel to grip and remove completely. Mix rub ingredients together and rub onto the ribs. Or rub Neely's BBQ Seasoning onto the ribs. Place the rack in your pressure cooker and place the ribs inside the pot, standing on their side, wrapping around the inside of the pot. Pour in the water, apple cider, and liquid smoke (if using), being careful to not wash off any of the seasonings. Secure the lid, making sure the vent is closed. Press the Meat button and set to 25 minutes. Let the pressure naturally release for 10 minutes, then quick release the rest of the way. Carefully remove the ribs from the pressure cooker and set on a foil-lined baking sheet. Brush down with your favorite BBQ sauce, and pop under the broiler for 5 minutes, but keep an eye on it so it doesn't burn. NOTE: You can double the recipe, by wrapping the second rack of ribs around the first. Just double the spices, but keep the same amount of liquid underneath.

BABY BACK RIBS - INSTANT POT

Baby Back Ribs - Instant Pot image

I love my new Instant Pot ! There are so many things I want to cook in it and the winning choice for tonight was Baby Back Ribs ! So super simple and they turned out really tender and fall off the bone delicious. We did put them under the broiler when they were done because we enjoy the caramelized BBQ sauce. Next time we make them we will pop them onto the BBQ grill for crisping !

the sauce - see below
3 pound(s) baby back ribs
salt and pepper to taste
water

Steps:

  • Start with the sauce. This is my recipe and I made a double batch for the ribs. https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/no-cook-bbq-sauce-by-maggie.html
  • Cut the ribs into sections .. I did 3 or 4 bones per section. Salt and pepper to taste if desired.
  • I sprayed the inside of my pot with cooking spray simply because I am so used to spraying when using a sugary sauce due to it's admirable ability to stick and burn. As it turned out I'm not so sure I needed to do that .. so you choose .. to spray or not to spray !
  • Place the rack inside the instant pot. Lay the ribs on top of the rack. I just laid them kind of sprawled out and overlapping each other.
  • Pour half of the sauce over the ribs. Grab each section of ribs and roll them over in the sauce. Add about 1/3 cup of water to the bottom of the pot.
  • Set the control panel to pressure cook .. set the timer for 22 minutes. Place the lid on and lock in place. Be sure the vent is moved to the seal position.
  • Walk away and let it do it's thing.l
  • When the 22 minutes is up .. leave everything alone for 12 minutes. After that 12 minutes is up, turn the valve to release and when it's done open the lid.
  • At this point you can either serve them as they are .. or you can do as we did and pop them under the broiler for a couple of minutes to caramelize that delicious sauce.
  • You will have diluted sauce in the bottom of the pot and I suggest using that to baste those ribs while they are under the broiler. If you prefer you can use some of the leftover sauce that you made.
  • Serve hot with copious amounts of napkins and wet wipes!

INSTANT POT BABY BACK RIBS

Instant Pot Baby Back Ribs image

We love barbecued spare ribs and I wanted to see if I could make tender, well flavored ribs an easier way then using the outside grill or relying on baking. My Instant Pot has given me the perfect way to make ribs any time of the year, inside and to give a finished product that beats all our other methods!

Provided by Diana Perry @Empebi

Categories     Pork

Number Of Ingredients 10

2 - baby back rib racks (4-5 pounds total)
1 cup(s) apple juice or cider
1/2 cup(s) water
2 tablespoon(s) cider vinegar (optional
DRY RIB RUB
3 tablespoon(s) dark brown sugar
2 tablespoon(s) chili powder
1 teaspoon(s) each: onion powder; garlic powder; kosher salt; freshly ground pepper
1/2 teaspoon(s) ground red pepper (or more or less to taste)
1 teaspoon(s) liquid smoke flavoring

Steps:

  • Remove the clear skin from the underside of the ribs. I use a paring knife to get an opening under the skin on the wide end of the rack, Then I use my finger to enlarge opening. When I can grab it with a paper towel I pull toward the narrow end.
  • Put a cooling rack into a large pan to keep ribs above the pan. Sprinkle liberally on both sides of the ribs and rub to get seasoning well distributed. Place ribs on the rack and place in the refrigerator, uncovered for a minimum of 2 hours or up to overnight.
  • Mix liquid ingredients.
  • Place ribs into the Instant Pot with the meaty side against the side of the pan and on their edge. I curled the racks to fit into the pot.
  • Carefully pour the liquid into the pot making sure to not pour over the rub on the ribs.
  • Put the lid on the pot, and be sure your valve is set to "Sealing". Select the "pressure Cook" setting for 30 minutes (add another 5 minutes if you want "fall off the bone" ribs.) When pressure cook time beeps allow the pot to do a natural release for another 15 minutes. Carefully manually release the remaining pressure.
  • Heat your oven to "Broil". Place ribs back onto the cooling rack in the pan, lined with foil, that you used to let them air dry. Use your favorite barbecue sauce (I use "Sweet Baby Ray's Brown sugar and Hickory sauce.)
  • Broil the ribs about 8-10 minutes. Watch closely. You want a nice char, but do not want the surface to start to burn.
