IMITATION CRAB CASSEROLE WITH CHEESE
This recipe is easy and quick to make, and offers a good taste of the ocean. It is inexpensive to make if using imitation crabmeat.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat oil in a large saucepan over medium heat; stir in onions and celery. Cook and stir until vegetables have softened and are beginning to turn translucent, about 5 minutes.
- Add crab, condensed soup, water, parsley, seafood seasoning, salt, garlic powder, and pepper; mix to combine. Heat until almost bubbling, about 5 minutes.
- Remove from the heat and blend in Cheddar cheese until melted. Transfer to a 9-inch square casserole dish.
- Mix bread crumbs and melted butter in a small bowl with a fork until combined. Spread over the casserole.
- Bake in the preheated oven until lightly browned and bubbly, 20 to 30 minutes.

TASTY AND EASY LOW FAT SEAFOOD CASSEROLE
The title says it all. And depending on your choice of fillets, can be quite inexpensive. I encourage you to add the optional dry vermouth as it adds greatly to the flavor. Easily doubled and easily spiced up if this is too mild for your tastes.

Steps:
- Spray a 9x9 baking dish or shallow 4 quart casserole with cooking spray; preheat oven to 350°.
- Place half of the fish in an even layer in pan; sprinkle on half the shrimp, bread crumbs, pepper, lemon juice and mushrooms; repeat layers.
- Combine mayonnaise, green onion, garlic and butter; dot over top of casserole; drizzle evenly with dry vermouth if using.
- Bake, covered, for 30 minutes or until fish flakes when tested.

Steps:
- Bring water, wine and dill to a boil.
- Add scallops; simmer 2 minutes.
- Add shrimp; simmer 3-4 minutes longer or until shrimp are opaque.
- Remove from heat.
- Put seafood in a shallow 1 1/2 Quart baking dish. Set aside; reserve liquid.
- Heat 1/4 C butter in skillet; saute mushrooms with chives or green onions.
- Stir in flour continue cooking 1 minute until bubbly.
- Stir in cream and 1 Cup of the reserved fish stock.
- Cook slowly until thick. Add salt and pepper if desired.
- Pour sauce over seafood.
- Mix cracker crumbs and the 3 T melted butter.
- Sprinkle cracker crumbs over the seafood.
- Bake at 400 for 15-20 minutes or until bubbly and lightly browned.

- Preheat oven to 350*.
- Saute shrimp, scallops and spinach in a lightly greased skillet for 10 mins, remove from heat.
- Add artichoke hearts, mayonnaise, sour cream, cheeses and garlic.
- Stir all together gently.
- Put into a baking dish.( Can be made a day ahead if wrapped tightly in cling film and refrigerated ).
- Whan ready to serve, top with the breadcrumbs and bake for 10 mins until golden.
