I received this recipe from a friend, and it's great! I use the convection bake setting on my oven, so it's usually 50 degrees hotter than normal ovens. you may want to add 50 degrees depending on your oven.

½ cup butter at room temperature
1 cup white sugar
2 eggs
1 tablespoon orange zest
1 teaspoon orange extract
¼ teaspoon almond extract
2 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 (6 ounce) package sweetened dried cranberries (such as Craisins®), or more to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
  • Beat butter and sugar together in a bowl until mixture is creamy. Beat in eggs, orange zest, orange extract, and almond extract.
  • Whisk flour, baking powder, baking soda, and salt in a separate bowl; mix dry ingredients into moist ingredients to make a stiff dough. Mix sweetened cranberries into dough. Form dough into a ball, cut into halves, and shape each half into a log. Place logs onto prepared baking sheet.
  • Bake in the preheated oven until the edges are lightly browned, 20 to 25 minutes. Let logs cool completely on wire racks.
  • Cut logs into slices on a slight diagonal and lay the slices on the parchment-lined baking sheet. Bake biscotti until crisp and lightly golden brown, about 7 minutes.

Number Of Ingredients 15

1-2/3 cups warm whole milk (70° to 80°)
2 large eggs
3 tablespoons butter, softened
3/4 cup mashed potato flakes
1/4 cup sugar
2 teaspoons salt
1-1/4 teaspoons ground cinnamon
1 teaspoon grated orange zest
4 cups bread flour
1 tablespoon active dry yeast
1 cup dried cranberries
ORANGE GLAZE:
1 cup confectioners' sugar
2 to 3 tablespoons orange juice
3 tablespoons chopped dried cranberries, optional

Steps:

  • In bread machine pan, place the first 10 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). Just before final kneading (your machine may audibly signal this), add cranberries. , When cycle is completed, turn dough onto a lightly floured surface. Cover and let rest for 15 minutes. Roll or pat to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter. Place in a greased 15x10x1-in. baking pan. Cover and let rise in a warm place until almost doubled, about 40 minutes. , Bake at 375° for 10-15 minutes or until golden brown. For glaze, combine confectioners' sugar and enough orange juice to achieve a glaze consistency. Drizzle over warm biscuits. Sprinkle with chopped cranberries if desired.

1 packed tablespoon orange zest from about 1 orange
1/3 cup sugar
2 cups flour
Scant 1/2 teaspoon salt
1 tablespoon baking powder
3/4 cup dried cranberries
1 1/4 cups heavy cream
1 teaspoon vanilla
1 tablespoon butter, melted

Steps:

  • Adjust oven rack to middle position and preheat oven to 400°F. Line two baking sheets with parchment paper. In a small bowl, rub together orange zest and sugar until fragrant; set aside.
  • In a large bowl, whisk together flour, baking powder, and salt until combined. Stir in sugar and cranberries.
  • Add heavy cream and vanilla extract and stir until combined (I find this to be easiest using my hands.)
  • On a lightly floured surface, pat dough down into 3/4-inch thick circle. Use a 1-inch biscuit cutter to cut out circles. Place circles on baking sheets. Brush each biscuit with melted butter. Bake until golden on top and just cooked through, about 12 minutes. Let cool 5 minutes then transfer to a wire rack to finish cooling.

1 1/4 cups (150 g) whole wheat flour, preferably homemade
1 cup (125 g) unbleached all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 1/4 cups (300 ml) plain 0% Greek yogurt, stirred
1/4 cup (60 ml) fresh orange juice
1/3 cup firmly packed (73 g) light brown sugar
1 tablespoon grated orange zest
1 teaspoon vanilla extract
1 cup (100 g) frozen cranberries, coarsely chopped
1/4 cup (60 ml) reduced-fat (2%) milk

Steps:

  • 1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • 2. Combine the flours, baking powder, baking soda, and salt in a medium bowl.
  • 3. Place the yogurt, orange juice, brown sugar, orange zest, and vanilla into the Vitamix container in the order listed and secure the lid. Select Variable 1. Turn the machine on and slowly increase the speed to Variable 10, then to High. Blend for 20 seconds.
  • 4. Pour the yogurt mixture into the flour mixture and fold in the cranberries.
  • 5. On a floured surface, pat the dough into a 9-inch (23-cm) round about 1/2 inch (1.3 cm) thick. Cut into 12 wedges.
  • 6. Place the wedges on the baking sheet and brush the tops with the milk. Bake for 30 to 35 minutes, until lightly browned.
  • 7. Remove from the baking sheet and cool on a wire rack.
