IRISH PUDDING CAKE
Steps:
- Combine fruit and 1 cup of the whiskey in large bowl, cover tightly with plastic wrap; stand at room temperature overnight.Preheat oven to 120/100 fan-forced.Line deep 20 cm round cake pan with two thicknesses baking paper, extending paper 5cm above side.Combine remaining whiskey and 1/2 cup of the sugar in small saucepan.Stir over heat until sugar dissolves; bring to a boil; cool syrup 20 minutes.Meanwhile, beat butter and remaining sugar in small bowl with electric mixer until just combined (do not overbeat).Add eggs, one at a time, beating until combined between additions.Add butter mixture to fruit mixture; stir in hazelnut meal, sifted dry ingredients and ½ cup of the cooled syrup.Spread mixture into pan.Bake about 3 hours.Brush cake with reheated remaining syrup, cover with foil; cool in pan.

- Preheat the oven to 325 degrees F (165 degrees C). Grease 6 mini loaf pans with cooking spray.
- Combine cake mix, pudding mixes, and 1/2 cup walnuts in a large bowl.
- Whisk 1/2 cup Irish whiskey, milk, and oil together in a separate bowl. Whisk in eggs. Pour over cake mixture and stir until blended. Divide batter among the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.
- Meanwhile, melt butter in a small saucepan over medium heat. Whisk in brown sugar. Add remaining walnuts, 1 tablespoon whiskey, and water. Cook over medium heat, whisking constantly, until smooth, 3 to 5 minutes. Remove from heat and whisk in remaining whiskey.
- Cool cakes for 5 minutes before inverting a wire rack set over a baking sheet. Use a toothpick to poke small holes across the tops. Pour whiskey topping over cakes and leave to soak in as they cool.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Grease and flour a 10-inch fluted tube pan (such as a Bundt®).
- Cream butter and sugar together in a mixing bowl until thoroughly combined.
- Beat in eggs, one at a time, beating each egg until fully incorporated before adding the next one.
- Mix in cream cheese and vanilla extract.
- Mix in flour, about 1/2 cup at a time, until batter is smooth and velvety. Pour batter into prepared pan.
- Bake cake in the preheated oven until top is golden brown, about 1 1/2 hours.
