4 Greek Pocketless Pita Bread
1 cup Ricotta Cheese
1/2 tsp Garlic Powder
10 oz Frozen Chopped Spinach (thawed and squeezed dry)
2 medium Tomatoes (chopped)
3/4 cup Feta Cheese (crumbled )
3/4 tsp Dried Basil

Steps:

  • Preheat the oven to 400°F. Place the pita breads on a baking sheet.
  • In a small bowl, combine the ricotta cheese and garlic powder. Spread evenly over each pita bread.
  • Top each pita bread with spinach, sliced tomatoes, feta cheese and basil.
  • Bake for 12 to 15 minutes or until bread is lightly browned.

6 mini whole wheat pitas or sandwich thin halves
1 tablespoon olive oil
1/2 cup homemade or store-bought hummus
1/2 cup quartered cherry tomatos
1/3 cup chopped cucumber
3 tablespoons sliced kalamata olives
3 tablespoons finely chopped red onion
1/4 cup crumbled feta cheese

Steps:

  • Preheat oven to 400 degrees F. Place 6 mini whole-wheat pitas or three sandwich thin halves on a baking sheet. Brush some olive oil evenly over each pita.
  • Bake in the oven for 10 minutes or until lightly browned and crispy.
  • Remove from oven and spread a thin layer of hummus over each round, going close to the edge.
  • Top each round with equal amounts of diced tomato, cucumber, olives, red onion and feta. Serve immediately.

12 (2 1/2-inch) mini pitas (from 6-oz package), split in half horizontally
2 tablespoons olive oil
1/2 cup canned Muir Glen™ organic tomato sauce
1/4 cup quartered, thinly sliced red onion
1/4 cup roasted red bell peppers (from a jar), thinly sliced and cut into 1-inch pieces, patted dry
10 kalamata olives, pitted and quartered
3/4 cup crumbled feta cheese (4 oz)
3 tablespoons thinly sliced pepperoncini
3 tablespoons diced cucumber

Steps:

  • Heat oven to 350°F. Place mini pita halves, split side up, on parchment paper-lined cookie sheet. Brush with olive oil.
  • Spoon tomato sauce onto each pita; sprinkle with onion, roasted pepper, olives and feta cheese. Bake 8 to 10 minutes or until toppings are hot and cheese softens. Transfer to serving platter. Top with pepperoncini and cucumber.

6 pita breads
1 (6.5 ounce) can tomato sauce
1 (4 ounce) can sliced black olives, drained
1 ounce diced pimento peppers, drained
2 small tomatoes, thinly sliced
4 ounces shredded mozzarella cheese
4 ounces blue cheese, crumbled
1 pinch dried basil
1 pinch dried oregano
1 pinch crushed coriander seed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Warm pitas in the preheated oven or in a microwave for 1 minute, or until soft. Spread lightly with tomato sauce, pressing to flatten while spreading. Sprinkle with black olives, pimento peppers, tomatoes, mozzarella cheese, blue cheese, basil, oregano and coriander.
