IMITATION CRAB (SURIMI) SALAD
If you're short of time and still want something nice for lunch, try this salad. It is better when chilled for an hour or so but can be eaten immediately. It keeps well in the fridge for a couple of days. Also nice as an appetizer on crackers or as a cucumber stuffing.

Steps:
- Mash the eggs.
- Flake and cut the surimi.
- Mix eggs, surimi, mayonnaise, lemon juice, dill weed, salt and pepper.
- Chill.

Steps:
- Hand knead Surimi in mixing bowl until large pieces are broken down into shreds. Set aside. Mix all remaining ingredients in separate mixing bowl until well blended. Add to Surimi and mix well. Cover and refrigerate at least 1 hour to infuse flavors. (Can be made the day before and left overnight). Serve chilled.
