olive oil flavored cooking spray
4 thick midloin pork chops, well trimmed
1/2 cup chicken stock
1/2 cup Chinese wine
1/4 cup soy sauce
1 tablespoon palm sugar or 1 tablespoon brown sugar
6 star anise
1/4 teaspoon five-spice powder
1 -2 teaspoon sambal oelek
1 tablespoon honey
2 garlic cloves, crushed
coriander (to garnish) or green onion (to garnish)
salt and pepper, taste

Steps:

  • Heat oil in a Dutch oven or heavy bottomed pot and brown chops.
  • At the same time combine, stock, wine, soy, sugar, star anise, 5-spice, sambel, honey and garlic.
  • Pour over the chops and bring to the boil.
  • Then cover and cook very very slow for 1-1/4 hours until very tender, turning once or twice.
  • Serve over boiled rice garnished with the coriander or green chopped onions.

Pork chops make a great weeknight dinner, and this dish is no exception. It looks and feels special, but comes together in about 20 minutes with very minimal prep. Selecting bone-in pork chops is beneficial beyond appearance: The bones protect the meat to keep it moist. However, you could also use boneless chops or even chicken breasts, if you'd prefer; just be sure to reduce the cooking time accordingly.

2 tablespoons olive oil
4 bone-in, 1-inch-thick pork chops (about 3/4 pound each)
Kosher salt and black pepper
1 1/2 cups small, seedless red grapes
1 shallot, minced
1 garlic clove, minced
2 teaspoons all-purpose flour
1 1/2 teaspoons chopped fresh thyme leaves or 1/2 teaspoon dried thyme
1/4 cup dry white wine
2/3 cup chicken stock
2 teaspoons grainy mustard
1 tablespoon heavy cream or unsalted butter

Steps:

  • In a large skillet, heat the olive oil over high. Pat the chops dry with paper towels, and season well with salt and pepper. Cook the chops until just cooked through, about 5 minutes per side. Transfer to a plate and cover with foil to keep warm.
  • Add the grapes to the skillet, and sauté until brown in spots, about 2 minutes. Use a slotted spoon to transfer to the plate. Reduce the heat to medium-high. Add the shallot and garlic, and cook until softened, about 2 minutes. Stir in the flour and thyme, and cook for 1 minute.
  • Add the white wine and cook, stirring, until mostly evaporated, about 1 minute. Add the chicken stock and mustard, and cook, stirring frequently, until slightly thickened, about 3 minutes. Stir in the heavy cream. Season with salt and pepper.

Mix together water, grainy mustard and any fruit preserve that's good with pork like cherry, fig, peach or apricot. Sear bone-in pork chops mostly on one side to prevent overcooking, then pour the fruit-mustard mixture into the skillet while they rest. The pork will stay moist, and its juices will have time to mingle with the sauce. Then just slice the pork and drape it in the velvety two-ingredient glaze. Eat with mashed or roasted potatoes and a green salad.
