1/2 cup low-fat sour cream
1/2 cup low-fat mayonnaise
1/4 cup low-fat milk
4 ounces blue cheese (about 1 cup)
1 tablespoon lemon juice (fresh)
1/2 teaspoon salt
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 1/2 lbs large shrimp, shelled, deveined and tails intact
1 tablespoon olive oil
1 tablespoon unsalted butter
2 teaspoons hot pepper sauce
1 tablespoon parsley, chopped

Steps:

  • In a bowl, combine first six ingredients to make blue cheese dip; cover and refrigerate.
  • In a shallow bowl, combine flour, salt and cayenne pepper.
  • Add shrimp, tossing to coat.
  • In a large skillet, heat oil, butter and hot sauce.
  • Add shrimp and cook, stirring constantly until lightly browned, about 3 to 4 minutes.
  • Sprinkle blue cheese dip with parsley; serve with shrimp.
  • Serve with carrot and celery sticks on side if desired.

1 (10 ounce) package penne pasta
1 tsp canola oil
3 Tbsp margarine,divided
1 Tbsp minced garlic
1 lb jumbo shrimps,peeled and deveined
2 tsp old bay seasoning
1 3/4 c wing sauce,divided
1 Tbsp all purpose flour
1 c heavy cream
3/4 c chunky blue cheese dressing
1 large tomato,seeded and chopped
1 packet dry onion soup mix
2 tsp italian seasoning
1 tsp ground black pepper
1 c shredded parmesan cheese
1 c shredded monterey jack cheese

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Bring a large pot of lightly salted water to a boil.Add penne and cook,stirring occasionally,until tender yet firm to the bite,about 11 minutes.Drain.
  • 3. Heat one tablespoon margarine and canola oil in a large oven-safe skillet over medium heat.Add garlic;cook until fragrant,about 30 seconds.Add shrimps and old bay seasoning.Cook and stir,flipping shrimp halfway,until pink,3 to 4 minutes.
  • 4. Meanwhile,pour 1 cup wing sauce into a medium bowl.Grab the shrimps out of the skillet and onto a bowl of wing sauce,mix well and let it marinade for 30 minutes.
  • 5. Melt remaining margarine in the same skillet,stirring into the shrimp juices.Add flour;whisk until fully combined and starting to turn golden,30 seconds to 1 minute.Add heavy cream,blue cheese dressing and remaining wing sauce;whisk to continue.
  • 6. Stir in tomatoes,dry onion soup mix,italian seasoning and pepper.Bring the sauce to a simmer.
  • 7. Stir 1/2 cup parmesan and monterey jack cheese into the sauce until the cheeses begin to melt and the sauce is creamy.
  • 8. Mix in about 1/2 the cooked penne pasta to start;add more if there enough sauce to coat.Add shrimps and stir to combine.Top with remaining parmesan and monterey jack cheeses.
  • 9. Bake in the preheated oven and bake until the top is golden and sauce is bubbles around the edges of the skillet,8 to 10 minutes.

5 tablespoons butter, melted
1/2 cup hot pepper sauce
1 egg, beaten
1/2 teaspoon garlic salt
1 cup breadcrumbs
20 extra large shrimp, peeled and deveined
3 tablespoons vegetable oil
4 tablespoons hot pepper sauce
4 tablespoons melted butter

Steps:

  • Combine 5 tablespoons of melted butter, 1/2 cup of the pepper sauce and egg.
  • Add garlic salt to bread crumbs.
  • Dip shrimp in egg batter, then in bread crumbs.
  • Heat oil in skillet, add shrimp and cook about 3 to 4 minutes on each side until just cooked through.
  • Combine the 4 tablespoons of hot pepper sauce and the remaining 4 tablespoons of melted butter and warm over low heat.
  • Place shrimp on serving platter and serve hot sauce and blue cheese dressing on the side for dipping.

GARLICKY BUFFALO SHRIMP

Way better than buffalo wings, and lower in fat! Sooo quick and easy, too! Shrimp are sauteed right in the buffalo sauce for optimum flavor, rather than deep fried. Adjust hot sauce amounts to suit your taste, and a dash or so of your favorite BBQ sauce added will mellow it if you'd like it milder. Below is a medium spicy recipe.

1 teaspoon olive oil
4 garlic cloves, minced
2 tablespoons butter
1 dash salt
1 dash ground pepper
2 tablespoons hot sauce (recommended Frank's or Texas Pete)
1 teaspoon barbecue sauce (optional)
1 lb large shrimp, peeled and deveined
2 tablespoons parsley, chopped

Steps:

  • Saute garlic in olive oil and butter over medium heat until translucent, being careful not to brown it, about 2 minutes.
  • Add a dash of salt and pepper, then hot sauce, and cook until garlic is softened, about a minute or two more. Again, do not brown it or it will become bitter!
  • Taste and adjust seasonings. Add BBQ sauce if desired, or more hot sauce if you'd like it spicier. More butter can be added if desired, to make it milder as well.
  • Add shrimp and saute until done. (Pink and slightly curled).
  • Remove from heat, toss with parsley.
