2 oranges, juice of
2 oranges, peel of cut into pieces
1 cup water
1 cup sugar (or less)
4 cups cold coffee, made with 6 teaspoons instant coffee
1/2 cup whipping cream

Steps:

  • Place the orange peel,water and sugar in a saucepan.
  • Boil for 5 minutes.
  • Remove the peel and let the syrup cool.
  • Mix the orange juice with the coffee and syrup.
  • Add the whipping cream.
  • Pour over crushed ice in tall glasses.

CHOCOLATE-ORANGE TRUFFLES

Infuse heavy cream with orange zest, then mix it with chocolate for truffles that deliver a burst of citrus flavor.

8 ounces semisweet chocolate, finely chopped (not chips)
1/3 cup heavy cream
2 tablespoons honey
Finely grated zest of 2 oranges
2 tablespoons unsalted butter, at room temperature
1/3 cup turbinado sugar

Steps:

  • Bring about 1 inch of water to a very slow simmer in a medium saucepan. Put the chocolate in a medium heat-safe bowl that can sit on top of the pan without touching the water. Put the bowl over the water and let the chocolate melt, stirring occasionally until smooth. Remove from the heat.
  • Meanwhile, bring the heavy cream, honey and half of the orange zest to a simmer in a small saucepan over medium heat, stirring occasionally to dissolve the honey. Strain the cream mixture through a fine-mesh sieve into a small bowl and then gradually whisk into the chocolate until smooth and shiny. Whisk in the butter until melted. Cover the bowl with plastic wrap and set aside in a cool spot until slightly firm, about 1 hour.
  • Line a baking sheet with parchment paper. Rub together the sugar and remaining orange zest in a small bowl until combined. Transfer the truffle mixture to a piping bag or resealable bag fitted with a plain 1/4-inch tip. Holding the bag about 1/4-inch over the baking sheet, pipe 3/4-inch truffles. Sprinkle with the orange sugar. Refrigerate until set, about 15 minutes.

1 package (11-1/2 ounces) milk chocolate chips
1 cup (6 ounces) semi-sweet chocolate chips
3/4 cup heavy whipping cream
zest of one orange
2-1/2 teaspoons orange extract
Outer Coating:
1 lb [chocolate candy coating

Steps:

  • Pour milk chocolate chips and semi-sweet chocolate in a large bowl and set aside.
  • In a small saucepan over medium heat, mix together cream and orange zest and bring to a boil; immediately pour over chocolate chips in the bowl.
  • Let stand for 1 minute then mix until the chocolate is completely smooth. Add in orange extract.
  • Cover the bowl with plastic wrap and place in the fridge for about 45 minutes or until mixture begins to thicken.
  • With a large wooden spoon, stir mixture for 10-15 seconds or just until it lightens in color (do not overbeat or it will not be the right texture).
  • Spoon rounded teaspoonfuls onto waxed paper-lined baking sheets (they don't have to look pretty). Place baking sheet in the fridge and let chill for at least 10 minutes.
  • Using your hands, gently roll each spoonful into a ball.
  • Follow the directions on the candy coating packaging and melt chocolate (I melted mine in the microwave according to the package directions).
  • Dip each chocolate orange ball in the candy coating and push around until completely covered; allow excess to drip off (I use two forks when I dip these truffles and that way the excess chocolate can drip through before I remove it from the bowl).
  • Place each truffle on wax paper; let stand until set. Store in an air-tight container in the fridge.

ORANGE SPICE ICED COFFEE

With two hits of orange (once in the syrup and then a few pinches of zest in the drink itself), it's decidedly orange flavored, yes - but not cloyingly so. It's just right. The spices - cinnamon, cloves, and nutmeg - lend warm fuzzy notes that help bring this all together in a swirl of creamy, caffeine-packed, entirely-too drinkable pure goodness.

1 cup granulated sugar
1 1/2 cups water
2 large strips fresh orange peel
1 4- inch cinnamon stick
3 whole cloves
1/2 teaspoon grated nutmeg
1 cup cold-brewed iced coffee concentrate
2 tablespoons Orange Spice Syrup
Half and half
1/4 teaspoon freshly grated orange zest
Dash of cinnamon

Steps:

  • In a small saucepan over medium heat, stir together the sugar and water. Using a paring knife, peel two large (about 2 - 3 inches long) strips of peel from a fresh orange. Be careful to avoid the bitter pith (the white part) as much as possible. Add the orange peel, cinnamon stick, cloves, and nutmeg, to the sugar-water mixture and bring to a boil. Reduce heat and simmer for fifteen minutes, stirring occasionally. Remove from heat and allow to cool completely. Pour syrup over a sieve into a small bowl or jar and discard solids.
  • Keeps refrigerated in an airtight container for up to two weeks.
  • Fill a 12 ounce or larger glass with ice. Pour coffee concentrate and syrup over ice, stir in cream, if using. Top with orange zest and a dash of cinnamon. Serve with a straw.

A great tall iced coffee drink...to round off the perfect dinner. It's lovely on a hot summer evening. Don't take my word, try it for yourself...you will not be sorry. You can always alter the amount of liqueur to your own preferences.

2 coffee ice cubes
2 hot chocolate ice cubes
6 oz strong coffee, cold brewed
1 oz godiva original chocolate liqueur
1 1/2 oz orange liqueur (grand marnia)
1 oz butterscotch schnapps
2 1/22 oz milk, chilled
2 tsp orange juice, garnish for rim
2 tsp white sugar, garnish for rim
1 oz whipped cream
1 tsp orange zest
1 tsp chocolate syrup, garnish, drizzle

Steps:

  • 1. Rim your glass with orange juice and then dip it into the white sugar, to cover the rim.
  • 2. Add your ice cubes.
  • 3. Now add the cold coffee and all the liqueurs, mix well.
  • 4. Add your milk and garnish with whipped cream, sprinkle on the orange zest and drizzle with the chocolate syrup.
