I'm not sure when I had my first iced lemon coffee, but I remember thinking it was genius! The citrus flavors make it even more refreshing and summery. So start slicing up some lemons and make this simple drink instead. It's keto-friendly, low carb, and paleo.

1 cup cold-brewed coffee
¼ cup ice cubes
¼ cup freshly squeezed lemon juice
1 teaspoon stevia powder, or to taste
1 slice lemon, for garnish

Steps:

  • Combine coffee, ice cubes, lemon juice, and stevia in a glass. Stir. Garnish with a slice of lemon.

1-1/2 qt. (6 cups) water, divided
1-3/4 cups GEVALIA House Blend
1/2 cup sugar
zest from 2 lemons
1/8 tsp. vanilla

Steps:

  • Add 3-1/2 cups water to coffee grounds in 2-qt. pitcher; stir. Cover. Let stand at room temperature 12 hours.
  • Line fine-mesh strainer with coffee filter; place strainer over medium bowl. Pour coffee, in small batches, through filter; let stand until all the coffee is strained before adding next batch of coffee. Discard coffee grounds. Return strained coffee to pitcher. Stir in 2 cups of the remaining water.
  • Refrigerate 2 hours or until chilled.
  • Meanwhile, microwave remaining 1/2 cup water in medium microwaveable bowl on HIGH 1-1/2 min. or until water comes to boil. Add sugar, lemon zest and vanilla; stir until sugar is dissolved. Let stand 3 min.; strain sugar syrup into separate bowl. Discard strained solids. Refrigerate syrup until ready to use.
  • FOR EACH SERVING:
  • Mix 1-1/2 cups coffee and 3 Tbsp. sugar syrup until blended. Serve over ice in tall glass.

3 tsp sugar, to taste
3/4 c cold espresso
1 tsp lemon juice, freshly squeezed
crushed ice
1/2 c club soda or ice water
1 slice lemon
brandy, optional

Steps:

  • 1. Stir the sugar, espresso and lemon juice in a tall glass. When sugar has dissolved, add the crushed ice and soda water to taste. Garnish with the slice of lemon.
  • 2. If using, top with the brandy.
