6 cups chocolate ice cream, softened
1/2 cup caramel ice cream topping, divided
1 graham cracker crust (9 inches)
2/3 cup whipped topping

Steps:

  • Set aside 12-16 pecan halves for garnish; chop remaining pecans. In a large bowl, combine the ice cream, 1/4 cup caramel topping and chopped pecans. Spread into pie crust. Cover and freeze for at least 2-1/2 hours. , Remove from the freezer 15 minutes before serving. Garnish with whipped topping, remaining caramel topping and reserved pecans.

1 cup chopped pecans
1 cup lightly packed brown sugar
1 cup oatmeal
1 cup margarine, melted, or use butter
1 1/2 cups caramel ice cream topping
8 cups vanilla ice cream, softened

Steps:

  • Combine first 5 ingredients and spread on a cookie sheet in a thin layer.
  • Bake at 400 degrees until crumbs are golden.
  • Check often to prevent it from burning!
  • Crumble into 1-13 x 9 pan or 2-8x8 pans reserving some of the crumbs for the top.
  • Drizzle 3/4 cup caramel sauce on top of crumbs.
  • Scoop vanilla ice cream on top and spread evenly.
  • Drizzle the rest of the caramel sauce and top with the reserved crumbs.
  • Freeze until firm or overnight.
  • If storing for an extended time, cover well to prevent freezer burn.

1 tablespoon no-trans-fat 68% vegetable oil spread stick, melted
3 cups chocolate reduced-fat ice cream, slightly softened
1/2 cup fat-free hot fudge topping
2/3 cup chopped pecans
3 cups vanilla reduced-fat ice cream, slightly softened
1/4 cup fat-free caramel topping

Steps:

  • In small bowl, mix wafer cookie crumbs and melted vegetable oil spread until crumbly. Press gently and evenly in bottom of ungreased 9-inch springform pan. Freeze 30 minutes.
  • Drop chocolate ice cream by small spoonfuls over crust; carefully spread until smooth. Freeze 1 hour or until firm.
  • Spoon and carefully spread fudge topping over ice cream. Sprinkle with 1/3 cup of the pecans; press lightly. Freeze 1 hour or until firm.
  • Drop vanilla ice cream by small spoonfuls over pecan layer; carefully spread until smooth. Sprinkle with remaining 1/3 cup pecans. Cover; freeze at least 8 hours or overnight.
  • To serve, let stand at room temperature 5 to 10 minutes to soften. Carefully remove side of pan. Cut into 12 wedges. Place each wedge on individual dessert plate; drizzle each with 1 teaspoon of the caramel topping. Store remaining ice cream cake covered in freezer.

3/4 cup graham cracker crumbs (about 5 whole graham crackers, finely crushed in resealable plastic bag)
1/4 cup sugar
6 tablespoons (3/4 stick) unsalted butter, melted
Sauce and filling:
3/4 cup (packed) dark brown sugar
3/4 cup heavy whipping cream
3 tablespoons dark corn syrup
3 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
2 pints (4 cups) premium vanilla ice cream, divided
Ganache topping:
5 1/2 ounces bittersweet chocolate, chopped
1/2 cup heavy whipping cream
1 1/2 tablespoons dark corn syrup
3/4 teaspoon vanilla extract
Pinch of salt

Steps:

  • For crust:
  • Preheat oven to 350°F. Using on/off turns, finely chop 1 cup pecans in processor; transfer to medium bowl. Mix in graham cracker crumbs and sugar. Drizzle butter over; blend until evenly moistened. Press mixture firmly over bottom and up sides of 9-inch glass pie dish (not on rim).
  • Bake crust until golden brown, about 12 minutes (if crust puffs, press firmly back into place). Cool crust completely. Wrap in foil and freeze at least 1 hour. DO AHEAD: Can be made 2 days ahead. Keep frozen.
  • For sauce and filling:
  • Bring first 3 ingredients to boil in heavy medium saucepan over medium heat, whisking until sugar dissolves. Boil caramel 5 minutes, whisking occasionally. Turn off heat; whisk in butter, vanilla, and salt. Cool completely.
  • Slightly soften 1 cup vanilla ice cream in microwave on low in 10-second intervals. Spread ice cream evenly in frozen pie crust; spread 1/4 cup caramel over. Freeze pie until ice cream and caramel are firm, about 1 hour. Repeat with remaining vanilla ice cream in three 1-cup portions and caramel in two 1/4-cup portions. Freeze pie overnight. Cover and reserve remaining caramel at room temperature.
  • For ganache topping:
  • Combine chocolate, cream, and corn syrup in medium metal bowl. Place over saucepan of simmering water and whisk until melted and smooth. Remove from heat. Whisk in vanilla and salt. Cool ganache at room temperature until thick but still pourable, about 30 minutes.
  • Pour ganache evenly over frozen pie. Sprinkle with remaining 1/2 cup pecans. Freeze until ganache is firm, at least 45 minutes. Drizzle decoratively with 1/4 cup reserved caramel. DO AHEAD: Can be made 2 days ahead. Cover and keep frozen. Cover and chill remaining caramel.
  • Let pie stand 10 minutes at room temperature. Rewarm remaining caramel, stirring over low heat. Cut pie into wedges and serve with caramel.

3 1/2 quarts mint-chocolate-chip ice cream
Vanilla Bowl Cake
1 large scoop chocolate ice cream
2 small round white candies such as Mentos and M&Ms, for decorating
Black licorice laces, for decorating
4 chocolate-mint wafer cookies (1 1/2-inch round), for decorating
1 tablespoon chocolate chips, melted and cooled, for decorating

Steps:

  • Line a rimmed baking sheet with plastic wrap. Scoop out 2 1/2 quarts mint-chocolate-chip ice cream (about thirty-five 1 1/2-ounce scoops), and place on prepared baking sheet; refreeze for at least 45 minutes.
  • Meanwhile, soften remaining 1 quart mint-chocolate-chip ice cream; set aside. Line a 12-cup bowl with plastic wrap; freeze briefly, then fill with the scoops of ice cream, rounded side down, to extend beyond rim (fill in gaps with extra).
  • Place cake, flat-side up, over ice cream scoops, then spread softened mint-chocolate-chip ice cream on top using an offset spatula. Cover with plastic wrap, and refreeze for at least 4 hours.
  • Unmold ice cream cake onto a serving platter. Using a 2 1/2-ounce ice cream scoop, carve a niche into the edge of the turtle shell; nestle a scoop of chocolate ice cream into niche for the head. 1/4 c caramel ice cream topping, plus extra to drizzle as a garnish
1 chocolate crust, pre-made or homemade
1/2 c chopped pecans & more for garnish
2 smaller pkgs. cooked chocolate pudding mix (4 serving size each)
3 c milk
some whipped cream or cool whip

Steps:

  • 1. Spread caramel topping over the bottom of the chocolate crust. Sprinkle with the chopped pecans. Refrigerate.
  • 2. In a saucepan, mix together the 2 packages of chocolate pudding mix and the milk. Cook and stir, as directed on the package, to a full boil. Cool 5 minutes, stirring twice.
  • 3. Pour slightly cooled pudding into the chocolate crust. Place plastic wrap on the surface of the pudding (to avoid a "skin") and refrigerate for 3 hours.
  • 4. Remove the plastic wrap and garnish with whipped cream, additional caramel topping, and pecan pieces, as desired. Refrigerate leftovers.

3 chocolate-covered coconut candy bars (1-3/4 ounces each)
12 vanilla or white chips
6 ice cream waffle bowls
6 scoops ice cream of your choice
24 pecan halves
2 chocolate licorice twists, cut into thirds

Steps:

  • Cut a third off each candy piece, reserving large ends for turtle heads (save small ends for another use). Cut a small hole in the corner of a pastry or plastic bag; fill with frosting. On each turtle head, secure two vanilla chips with frosting to resemble eyes. Pipe a dot in the center of each chip for pupil; pipe frosting over top of chips for eyelids. Pipe a turtle shell pattern onto waffle bowls; set aside., Place a scoop of ice cream on each serving plate. 1 cup light brown sugar
1/2 cup granulated sugar
12 tablespoons unsalted butter (1 1/2 sticks), melted and cooled slightly
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
2 cups plus 2 tablespoons bleached all-purpose flour
1/2 teaspoon table salt
1/2 teaspoon baking soda
1 1/2 cups salted and toasted pecans, lightly crushed
1 cup semisweet chocolate chunks
Fudge sauce, store-bought, microwaved for 10 to 20 seconds
Caramel sauce, store-bought, microwaved for 10 to 20 seconds
1 quart butter pecan ice cream
Chocolate sprinkles, for garnish

Steps:

  • Preheat the oven to 325 degrees F and place the racks in the upper-middle and lower-middle positions. Have 2 parchment lined baking sheets.
  • In a bowl, cream the sugars and butter, either by hand or with a hand-held mixer, until smooth and incorporated, about 2 minutes. Add in the egg, yolk and vanilla extract. Mix until incorporated. Add in the flour, salt and baking soda and mix until incorporated. Fold in the pecans and chocolate chunks.
  • Scoop out 1/4 cup of the dough and roll into a ball (or if you have a large ice cream scoop, use that). Place the formed dough balls on the prepared baking sheets, 4 per sheet, and using your hands, press down to flatten. Bake until the edges are slightly golden and the middles are set but still soft, 15 to 18 minutes.
  • Let the cookies cool for 10 minutes. Then flip them over and coat the bottom of half of the cookies with fudge sauce. Then coat the other cookie bottoms with the caramel sauce.
  • Place a generous scoop of ice cream on each of the fudge-lined cookies and top with a caramel-lined cookie, lightly pressing together. Repeat with the remaining cookies and ice cream. Roll in chocolate sprinkles. Eat immediately or freeze for later.
  • Cook's Note: If you freeze the cookies to eat later, just be aware that the cookies get hard. I always like to build 'em fresh if possible so the cookies stay nice and soft.

PUMPKIN TURTLE ICE CREAM CAKE

1 pound Gingersnap Cookies
1 stick Butter, Melted
1 whole Egg
14 ounces, weight Dulce De Leche Caramel
3 quarts Pumpkin Ice Cream
1 bottle Chocolate Magic Shell, 7 Ounce Bottle
¾ cups Candied Pecans

Steps:

  • Preheat the oven to 350 F. Trace the bottom of a 9-inch spring-form pan on a sheet of parchment paper, and cut out the circle to lay in the bottom of the pan.
  • Using a food processor or high-powered blender, pulse the gingersnaps until they reach a fine crumb. Add the melted butter and egg and pulse a few more times to combine.
  • Press the gingersnap mixture evenly over the bottom of the spring-form pan, and up the sides approximately 2 inches. Bake for 10-12 minutes. Then remove the pan from the oven and set it on a wire rack.
  • Once out of the oven, cut a parchment paper strip 4 inches high, and a little over 2 feet long, to line the perimeter of the pan. Tuck the parchment paper strip carefully between the crust walls and the sides of the pan. Adjust the paper ring to fit snugly around the crust then secure the edges of the paper with a paper clip. Press the crust back against the wall of the pan gently if it has slumped a little.
  • Spread the entire can of dulce de leche over the bottom of the crust. Then place the crust in the freezer for 15 minutes to chill. Pull the ice cream out of the freezer at this time to allow it to soften a bit.
  • After 15 minutes pull the pan out of the freezer. Scoop the ice cream into the crust and gently press down using a piece of wax paper. Smooth the top with a spatula. Place the pan back in the freezer to firm up for 30-60 minutes.
  • Then pull the pan out of the freezer. Release the sides of the spring-form pan and remove the ring and parchment paper. Shake the bottle of chocolate Magic Shell vigorously, then drizzle around the edges of the cake. Once the edges of the cake are covered in chocolate, drizzle the Magic Shell in the middle of the cake. Quickly top with candied pecan, before the magic shell hardens.
  • Place back in the freezer until ready to serve.
  • If you plan to wait more than 1 day to serve the cake, wrap it well with foil, followed by a layer of plastic wrap.
