9x13 pan of brownies, cut into 1" squares (I just made up a brownie mix)
1/2 gallon of vanilla and chocolate ice cream
4-6 medium bananas, sliced
toppings: nuts, sprinkles, whipped topping, maraschino cherries, hot fudge, etc

Steps:

  • In a trifle bowl, layer brownies, vanilla ice cream, and bananas.
  • Repeat step with chocolate ice cream.
  • Top with your favorite sundae toppings: we used whipped topping, fudge, nuts, sprinkles, maraschino cherries, and extra bananas.
  • Serve immediately

3 (10.8-ounce) packages frozen double-chocolate cake slices, cut into 1" pieces
2 (6 bars) packages original Klondike® bars, cut into 6 small squares
8 ounces dark chocolate-covered pretzels
12 ounces caramel sauce
16 ounces whipped topping

Steps:

  • Place the cake and Klondike bar cubes in a large baking dish and freeze until ready to assemble. Gently crush the chocolate-covered pretzels into smaller pieces. (Don't over-crush, otherwise your pretzels will become dust!) Reserve 2 ounces to decorate the top of the trifle. Place 1/3 of the chocolate cake squares into a large trifle dish. Then, place 1/3 of the Klondike bar cubes on top, followed by 1/3 of the crushed chocolate-covered pretzels. Drizzle 1/4 of the caramel sauce over the pretzels and top with a 1/3 of the whipped cream. Repeat this order two more times, finishing with the whipped topping. Add the rest of the caramel sauce and top with the reserved crushed chocolate-covered pretzels. Freeze immediately. Before serving, let the trifle sit at room temperature for 3-4 minutes (so the cake can thaw slightly.)

1 small prepared jely roll cake, about 8 inches long filled with red jelly
1/4 cup cream sherry or 1/4 cup orange juice
1 1/2 pints French vanilla ice cream
1/2 pint fresh raspberries or 1/2 pint strawberry, rinsed and dried,strawberries should be hulled
1/2 cup Cool Whip
1 tablespoon sliced almonds

Steps:

  • Cut cake into 1/2inch slices crosswise.
  • In a small shallow glass bowl of footed compote line the bottom and sides with the slices.
  • Sprinkle the cake with the sherry.
  • Fill the cake lined bowl with scoops of ice cream.
  • Top with the berries, cool whip and almonds.
  • Serve immediately.

1 quart vanilla ice cream
One 11-ounce package tiny butterscotch chips
One 20-ounce bottle butterscotch ice cream sauce
12 soft macadamia cookies
12 butterscotch hard candies, crushed

Steps:

  • Let the ice cream soften a bit. Work in half the butterscotch chips. When they are incorporated, swirl in some of the ice cream sauce and return the ice cream to the freezer to harden for at least 1 hour.
  • When you are ready to assemble: Take an individual trifle dish and put a cookie into the bottom, breaking it up into pieces to make it fit. Top with some sauce, then a scoop if ice cream, then some chips. Repeat until your dish is full, ending with the ice cream. Pour more sauce over the top, add some more chips, then the crushed candies.

Transform a glut of mixed berries into a delicious, make-ahead dinner party dessert with madeira cake and vanilla ice cream

vegetable oil , for greasing
250g pack good-quality madeira cake , sliced thinly into about 15 pieces
4 tbsp marsala , sweet sherry or brandy
450g frozen summer berries (or ready-frozen ones)
500g pot full-fat, Greek-style yogurt
5 tbsp icing sugar , sifted
2 x 1-litre tubs vanilla ice cream
14 mini meringues
2 tbsp chopped toasted hazelnuts

Steps:

  • Grease then line the base and sides of a deep, 20cm round loose-bottomed cake tin with baking parchment. Cover the base of the tin with slices of cake. Fill any gaps with small pieces, trimmed to size. Spoon over 2 tbsp of the alcohol.
  • Put 300g of the fruit and the yogurt in a processor. Add the sugar, then pulse until smooth, thick and creamy. Spoon half of the frozen yogurt onto the cake mixture, then scatter with half of the remaining fruit and poke it in. Freeze for about 1½ hrs until firm. Put the rest of the yogurt mixture into the freezer too.
  • Let 1 tub of ice cream soften a little, then spoon it on top of the berry layer and flatten with the back of the spoon. Freeze again until firm, then repeat the layers, poking the meringue shells into the top of the ice cream and scattering with the nuts to finish. Freeze for at least 6 hrs, or ideally overnight. Can be frozen for up to 2 weeks.
  • To serve, take the cake out the freezer and chill in the fridge for 30 mins. Defrost times will vary depending on how cold your freezer is. Remove the parchment and slide it onto a cake stand or plate. Leave for another 30 mins to soften in the fridge. Dip a knife in boiling water, dry and slice the cake. Do this before each slice for a good clean cut.
