ICE CREAM CONE CUPCAKES

Ice Cream Cone Cupcakes image

How to make Ice Cream Cone Cupcakes! For the swirl icing as pictured you will need disposable piping bags and a Wilton 2D tip or similar. Of course, you can always just skip the swirl and just spread the frosting on top of your cupcakes, too!

Time 1h15m

Number Of Ingredients 18

18 flat bottomed ice cream cones
¼ cup unsalted butter ( softened to room temperature (56g))
¼ cup canola or vegetable oil ((60ml))
¾ cup sugar ((150g))
2 large eggs ( room temperature preferred)
1 ½ teaspoon vanilla extract
1 ½ cups all-purpose flour ((185g))
1 ½ teaspoon baking powder
¼ teaspoon salt
⅔ cup buttermilk* ((160ml))
3 Tablespoons colored sprinkles or quinns (not nonpareils) (optional)
½ cup (1 stick) unsalted butter (softened (113g))
8 oz cream cheese (brick-style, not spreadable) (softened (226g))
1 teaspoon vanilla extract
¼ teaspoon salt
4 cups powdered sugar ((500g))
¼ cup cocoa powder ((33g))
Additional sprinkles for serving (optional)

Steps:

  • Preheat oven to 350F (175C) and place ice cream cones upright in a cupcake pan. I just place my cones directly in each cupcake cavity and don't have problems with it falling over but if you're worried about that, just use foil to support the base of each ice cream cone (you can see I did this in the bottom right cone in the photo in the post as an example).
  • Combine butter, canola oil, and sugar in a large bowl and use an electric mixer to beat until creamy and well-combined.
  • Add eggs, one at a time, beating well after each addition and then stir in vanilla extract.
  • In a separate, medium-sized bowl, whisk together flour, baking powder, and salt.
  • Using a spatula and gently hand-mixing, alternate adding flour mixture and buttermilk to the butter mixture, starting and ending with flour mixture and mixing until just combined after each addition. Halfway through stirring in the flour, add sprinkles, if using. The batter should be smooth and completely combined, but avoid over-mixing.
  • Evenly divide batter into your prepared ice cream cones (I use an ice cream scoop to neatly portion the batter), filling each ice cream cone ¾ of the way full (I fill mine to the first ridge in the cone, see second photo in post. Do NOT overfill) and bake on 350F (175C) for 20-23 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Do not overbake or they will be dry!Always be careful transferring your cupcake pan to and from the oven so that the ice cream cones don't topple over.
  • Allow cupcakes to cool completely before frosting.

Time 2h

Yield 1 melting ice cream cone cake

Number Of Ingredients 7

3 6-inch round cakes, cooled
6 cups vanilla buttercream
Red and white gel food coloring
1/3 cup heavy cream
1 1/2 cups white chocolate chips
1 ice cream cone
Assorted sprinkles

Steps:

  • Trim the tops of the cakes to make them level. Stack the cakes on a cardboard round, spreading buttercream between each with an offset spatula. Set aside 1/2 cup buttercream in the refrigerator for the ice cream scoop.
  • Transfer the layer cake to a turntable. Cover with a thin layer of buttercream (this is the crumb coat). Refrigerate until just set, 10 minutes. Cover with more buttercream, smoothing it with a bench scraper.
  • Hold the icing comb against the side of the cake (with the grooves against the frosting) and slowly rotate the turntable to make grooves in the buttercream. Freeze the cake 15 to 20 minutes.
  • Tint 1 cup buttercream red. Transfer to a piping bag. Pipe into every other groove on the cake. Smooth with a bench scraper, rotating the turntable (if it looks messy, keep smoothing until the stripes are clean). Freeze the cake 15 minutes.
  • Meanwhile, make the ganache: Heat the heavy cream until steaming, then pour over 1 cup white chocolate chips. Let sit for a minute, then stir until smooth. Add a few drops of white food coloring. Pour into a squeeze bottle.
  • Decorate with more sprinkles around the upside-down ice cream cone.
  • Gently squeeze the ganache down the sides of the cake to make drips, then squeeze the remaining ganache over the top; smooth with an offset spatula. Melt the remaining 1/2 cup white chocolate chips in the microwave.
  • Dip the cone in the white chocolate, then in sprinkles. Scoop the chilled 1/2 cup buttercream onto the cake using an ice cream scoop. Insert a lollipop stick into the scoop and cake; use it to support the cone.

PULL-APART POOL CUPCAKE CAKE

Pull-Apart Pool Cupcake Cake image

It's everybody into the pool for this fun summer dessert that requires little more than box cake mix, frosting and colorful supermarket candy.

Provided by Food Network Kitchen

Categories     dessert

Time 4h30m

Yield 24 cupcakes

Number Of Ingredients 14

One 15.25-ounce box vanilla cake mix (plus required ingredients)
Three 16-ounce tubs vanilla frosting
Blue food coloring, as needed
6 ounces blue candy-coated chocolates, such as M & M's
14 ounces white candy-coated chocolates, such as M & M's
One 3-ounce package blue sweetened powdered gelatin (1/4 cup)
1 striped sour candy belt
11 graham cracker bears
2 candy necklaces
1 small jawbreaker
2 gummy ring candies, such as Lifesavers Gummies
1 chocolate chew candy, such as Tootsie Roll
1 white flat taffy candy strip, such as Airheads
1 green flat taffy candy strip, such as Airheads

Steps:

  • For the cupcakes: Line two 12-cup muffin pans with cupcake liners. Prepare the cupcakes according to the package directions. Transfer to cooling racks and cool completely.
  • In a clean mixer bowl, combine 1 1/2 tubs of the frosting and about 1/4 teaspoon blue food coloring. Beat until smooth and no streaks remain, adding more color if needed to make a light blue frosting.
  • Dollop a tiny bit of blue frosting on the bottom of the liner of one of the cupcakes (this will help anchor it to the serving tray), then dollop a generous amount on top of the cupcake. Anchor the cupcake to a serving tray large enough to hold all 24 cupcakes. Repeat with the remaining cupcakes, arranging them in a 4-by-6 cupcake grid with the edges touching.
  • Using an offset spatula, smooth the blue frosting across the tops of the cupcakes, adding more as necessary, so it appears as 1 layer and the individual cupcakes are no longer visible. Smooth the remaining blue frosting on the sides to cover the cupcakes but not the liners.
  • Put the remaining 1 1/2 tubs white frosting in a pastry bag fitted with a large round tip. Pipe the outline of a rectangle in white (about 5 by 7 inches) closer to one short edge of the cupcake grid to make the pool. Pipe around the outline of the rectangle all the way to the edges of the cupcake grid with white, leaving the inside of the pool blue. Smooth the white frosting with an offset spatula.
  • For the decorations: Arrange a row of blue candy-coated chocolates on the white frosting around the perimeter of the pool, then arrange another row of blue candy-coated chocolates around the outer perimeter of the cupcake grid. Fill in between the 2 blue rows with rows of white candy-coated chocolates to make the pool deck. Chill the cake 30 minutes to set the frosting inside the pool.
  • Meanwhile, bring 1/2 cup water to a boil in a small saucepan. Stir in the blue gelatin until dissolved. Combine a mixture of water and ice in a measuring cup to make 1/2 cup. Stir into the dissolved gelatin until the ice melts. Chill the gelatin mixture while the cake chills. After 30 minutes, pour the gelatin into the pool. Chill until completely set, about 2 hours.
  • Cut 2 strips of sour candy belt, each slightly larger than a graham bear, to make beach towels. Lay 1 bear on each towel and arrange them to relax by the pool. Add a drink umbrella over each to shade them from the sun.
  • Cut the candy necklaces open where they tie to make 2 long strips. Cut 2 strips the same size as the length of the pool and arrange them over the gelatin for lanes. Gently pull out and discard the strings, keeping the candies in straight lines. Arrange 3 bears around a jawbreaker in the pool to play a game of volleyball. Stick a bear in each gummy ring candy for floaties and add to the pool.
  • Cut the chocolate chew into 4 pieces crosswise to make legs for the diving board. Cut a 1 1/2-inch piece from the white taffy and attach it to the legs to make a diving board. Set at the deep end of the pool and press a bear at the end, ready to dive in.
  • Cut the green taffy into a rectangle a little larger than a bear. With the back of a paring knife, score lines in the taffy to resemble the puffy parts of a blow-up raft. Stick a bear on the raft and add him to the pool. Stick the remaining bears in the pool to hang out.

Time 2h55m

Yield 12 to 14 servings

Number Of Ingredients 25

4 egg whites
1/2 cup butter
1 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 lemon, zested finely
2 cups sifted cake flour
1 tablespoon baking powder
2/3 cup milk
1 cup (2 sticks) unsalted butter, softened at room temperature
3 cups light brown sugar, packed
4 eggs
2 teaspoons pure vanilla extract
3/4 cup unsweetened cocoa powder
1 tablespoon baking soda
1/2 teaspoon salt
3 cups sifted cake flour
1 1/3 cups sour cream
1 1/2 cups hot coffee
1 egg white, unbeaten
3 tablespoons cold water
3/4 cup sugar
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla
Sprinkles

Steps:

  • Bunch foil around the base of the safety cones and stand them in muffin tins. Set aside.
  • Yellow Cake: Whip the egg whites in a clean bowl until stiff not dry and place in the refrigerator while you make the rest of the batter. Cream the butter and add the sugar. Continue mixing to blend well. Add the extracts and mix well. Sift the flour 3 times with the baking powder then add it to the butter mixture alternately with the milk in 3 additions. Fold in the whites. Pipe or spoon the batter into the cones, filling about 3/4 of the way up. Bake at 350 degrees F for 20 to 25 minutes until batter is firm to the touch in the center. Let cool.
  • Chocolate Sour Cream Cake: Preheat the oven to 350 degrees F. In a mixer fitted with a whisk attachment (or using a hand mixer) cream the butter until smooth. Add the sugar and eggs and mix until fluffy, about 3 minutes. Add the vanilla, cocoa, baking soda and salt; mix. Add half of the flour, then half of the sour cream, and mix. Repeat with the remaining flour and sour cream. Drizzle in the hot coffee and mix until smooth. The batter will be thin. Pipe or spoon the batter into the cones, filling about 3/4 of the way up. Bake until the tops are firm to the touch and a toothpick inserted into the center comes out clean (a few crumbs are okay) about 35 minutes.
  • To make the frosting place all the ingredients except the vanilla in the top of a double boiler (not over the heat yet). Beat with a mixer thoroughly. Place over boiling water and beat continuously until the frosting is stiff and holds peaks. Take off the boiling water and add the vanilla then continue beating until cool. Frost the top and dip/roll in sprinkles if desired.

ICE CREAM CONE CAKES

Ice cream cone cakes image

Wafer cones make an unlikely but perfect case for light custard and vanilla sponge- decorate with buttercream and your favourite ice cream toppings

Provided by Sarah Cook

Categories     Treat

Time 45m

Yield Makes 10

Number Of Ingredients 11

12 flat-bottomed ice cream cones
200g softened butter
200g plain flour
4 tbsp custard powder
1 tsp vanilla paste with seeds
200g golden caster sugar
2 large eggs , beaten
350g butter , softened
350g icing sugar , sorted
2 tsp vanilla extract
sprinkles , wafers, chocolate, glacé cherries, sauces- whatever you like on ice cream!

Steps:

  • Heat oven to 180C/160C fan/gas 4. Sit the cones in a muffin tin to hold them upright.
  • Put the butter, flour, custard powder, vanilla, sugar and eggs in a large mixing bowl. Beat together with an electric whisk until smooth. If you have nimblefingered little helpers, hand round pairs of teaspoons and set them to work filling the cones. If you're making them yourself, spoon the cake batter into a food bag or disposable piping bag, snip off the end to give you a wide hole, then pipe into the cones, filling them ¾ full - this will enable you to get the batter right to the bottom.
  • Bake the cone cakes, still in the muffin tin, for 30 mins until a skewer poked into the centre of the cake comes out clean. Leave to cool.
  • To decorate the cakes, beat the butter until smooth, then add the icing sugar and vanilla, and beat again until well mixed. Put into a piping bag fitted with a big star nozzle, then pipe icing on top of each cake as you would a cupcake. Decorate with sprinkles, cherries, drizzles of sauce - whatever you like.
