Southern Hush Puppies are golf ball sized, light and flakey cornmeal dough that is fried golden brown on the outside and soft on the inside served as a side dish to any southern meal. These hush puppies are ready in minutes!

oil (For frying)
3/4 cup flour
3/4 cup Cornmeal
1 Tablespoon Sugar
1 1/2 teaspoons Baking Powder
2 teaspoons Salt
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Paprika
1/4 teaspoon Pepper
1 Egg (Large)
1 cup Buttermilk
4 tablespoons Butter (Cold and cut into small cubes)
Tarter Sauce (for serving)

Steps:

  • Preheat 2 inches of oil in a large skillet to 365 degrees. In a medium sized mixing bowl add the flour, cornmeal, sugar, baking powder, salt, garlic powder, onion powder, paprika, and pepper. Add the egg and buttermilk and stir until combined. Stir in cubed butter.
  • Drop the batter by rounded teaspoonfuls in the hot oil. Let cook until they are golden brown 2-3 minutes. Remove with a metal strainer on a paper toweled lined plate. Serve with tarter sauce if desired.

Same classic hush puppy recipe, just skip the frying in oil and bake these pups. These healthier hush puppies are the perfect party food and pairs well with fish dishes. Bake until golden. Serve with tartar or a remoulade.

Vegetable oil
2/3 cup yellow cornmeal
1/3 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup finely chopped onion
1/3 cup milk
2 large eggs
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 450. Lightly grease a 24-cup mini muffin pan or spray with nonstick cooking spray.
  • In a medium bowl, combine the cornmeal, flour, baking powder, salt and pepper.
  • In a separate bowl, mix together the onion, milk, eggs and butter. Fold the egg mixture into the flour mixture until the flour mixture is just moistened.
  • Spoon 1 tablespoon of the batter into each of the prepared mini muffin cups. Bake for 10 minutes, or until the hush puppies are firm to the touch and golden brown around the edges.

1 cup yellow cornmeal
1/4 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
1 small onion, finely chopped
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.

Here's a healthier alternative to the usual deep-fried hush puppies. I think these look like mini corn muffins, but they taste the way a hush puppy should. Originally from an August 1983 issue of Bon Apetit from "The Cook's Exchange Readers' Best Recipes".

1 cup yellow cornmeal
1 cup all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon cayenne pepper
1/2 cup onion, finely diced
2 eggs, beaten
2/3 cup milk
4 tablespoons canola oil

Steps:

  • Preheat oven to 425 degrees.
  • Spray cups of mini muffin pans with nonstick vegetable spray.
  • Blend cornmeal, flour,baking powder, salt, sugar and red pepper in medium bowl.
  • Stir in onion.
  • Beat eggs, milk and oil in small bowl.
  • Add to cornmeal mixture and stir just until blended.
  • Spoon batter into prepared muffin pan, filling cups 1/2 to 2/3 full.
  • Bake until golden, about 15 to 20 minutes, or until a toothpick inserted into center comes out clean.
  • Serve immediately.

I have not tried this recipe yet but it sounds good! I found it on a package of Martha White Hush Puppy Mix. This bake would go perfectly with fried shrimp or fish.

1 (8 ounce) package hush puppy mix with onion
2 cups boiling water
2 tablespoons butter or 2 tablespoons margarine
3 egg yolks
1 cup buttermilk
1 teaspoon sugar
1/4 teaspoon baking soda
3 egg whites, stiffly beaten

Steps:

  • Heat oven to 375 degrees. Grease a 2 quart glass baking dish.
  • In medium mixing bowl, combine hush puppy mix and water; stir until smooth. Add butter, egg yolks, buttermilk, sugar and baking soda; mix well. Fold in egg whites.
  • Pour into greased casserole.
  • Bake for 50 to 55 minutes or until golden brown and set. Serve warm.
  • Store loosely covered in refrigerator.
