GARLIC BUTTER SHRIMP PASTA



Garlic Butter Shrimp Pasta image

An easy peasy pasta dish that's simple, flavorful and incredibly hearty. And all you need is 20 min to whip this up!

Number Of Ingredients 10

8 ounces fettuccine
1 pound medium shrimp, peeled and deveined
Kosher salt and freshly ground black pepper, to taste
8 tablespoons (1 stick) unsalted butter, divided
4 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
2 cups baby arugula
1/4 cup freshly grated Parmesan
2 tablespoons chopped fresh parsley leaves

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Season shrimp with salt and pepper, to taste; set aside. Melt 2 tablespoons butter in a large skillet over medium high heat. Add garlic, oregano and red pepper flakes, and cook, stirring frequently, until fragrant, about 1-2 minutes. Add shrimp and cook, stirring occasionally, until pink, about 2-3 minutes; set aside. Melt remaining 6 tablespoons butter in the skillet. Stir in pasta, arugula and Parmesan until arugula begins to wilt, about 2 minutes. Stir in shrimp. Serve immediately, garnished with parsley, if desired.

There are many interpretations of the classic Italian pasta dish, spaghetti al limone, or spaghetti with lemon. Some call for an Alfredo-like sauce made with heavy cream, butter and Parmesan, while others rely on just olive oil, lemon juice, Parmesan and starchy pasta water. This particular recipe, which adds sautéed shrimp, white wine and fresh tarragon to the mix, leans toward the simpler preparation. Without the addition of heavy cream, the sauce has a brighter lemon flavor, which works beautifully with the delicate brininess of the shrimp. Tarragon adds a fragrant note and a bit of complexity to an otherwise fairly straightforward dish. Finally, if there were a time to spring for freshly grated Parmigiano-Reggiano, this would be it. In an uncomplicated recipe like this one, the quality of each ingredient is paramount.

Kosher salt and black pepper
1 pound spaghetti
1 pound large shrimp (18 to 20 count), peeled and deveined, tails on or off
1/4 cup olive oil
2 lemons, zested (about 1 1/2 packed tablespoons), plus 3 tablespoons lemon juice
1 tablespoon chopped fresh tarragon, plus more for serving
1/2 cup dry white wine
3 tablespoons cold unsalted butter, diced
3/4 cup freshly grated Parmesan

Steps:

  • Bring a large pot of salted water to boil. Add the spaghetti and cook according to package directions until al dente. Scoop out 1 cup of the cooking liquid, then drain the pasta and set aside.
  • While the pasta cooks, pat the shrimp dry and season them with salt and black pepper. Combine the olive oil, lemon zest (setting a few pinches aside for serving) and tarragon in a large skillet set over medium heat. When the oil begins to sizzle, cook for 1 more minute, until the zest and tarragon are fragrant but not browned.
  • Add the shrimp to the skillet and spread into an even layer. Cook for about 90 seconds on each side, or until just cooked through. Transfer the shrimp to a plate and set aside.
  • Add the wine, 1 teaspoon salt and a few grinds of black pepper to the skillet, and bring to a simmer, scraping any browned bits from the pan. Cook until the wine has reduced by about half, then set aside, off the heat, until the pasta has finished cooking.
  • Add the cooked pasta and reserved pasta water to the skillet. Cook over medium-low heat for 2 to 3 minutes, tossing often, until the liquid that has collected at the bottom of the skillet has reduced slightly. (The sauce should still be fairly loose at this point.)
  • Off the heat, add the butter and 1/2 cup Parmesan, sprinkling the cheese evenly over the pasta. Toss until the butter and cheese are melted and the sauce is smooth. Add the lemon juice and remaining 1/4 cup Parmesan and toss until the sauce is thick and smooth.
  • Add the shrimp, toss, then season with more salt and black pepper to taste. Divide among shallow bowls and garnish with chopped fresh tarragon, lemon zest and black pepper.

6 ounces 51/60 gulf shrimp, peeled and deveined
One 5-inch portabella mushroom cap
2 ounces garlic butter (homemade or store-bought)
1 tablespoon grated Parmesan
Salt and ground pepper
1 to 2 slices garlic bread, for serving

Steps:

  • Remove the woody stem from and wash the Portabella Mushroom.
  • Sauté the mushroom cap in half of the garlic butter with a pinch of salt and pepper, then remove.
  • Sauté shrimp in the rest of the garlic butter until done, then add cooked mushroom to soak up garlic butter.
  • Plate with the sautéed shrimp on top of mushroom. Squeeze fresh lime onto the shrimp and add parmesan cheese on top with toasted garlic bread and enjoy.

1 (28 ounce) can italian whole tomatoes
1 (28 ounce) can crushed tomatoes
2 (20 ounce) cans cannellini beans, drained
1 cup pecorino romano cheese, grated
1/4 cup pecorino romano cheese (to garnish)
garlic salt

Steps:

  • Open cans of tomatoes and pour into large skillet. Cut up whole tomatoes with knife, releasing juices.
  • Sprinkle with garlic salt.
  • Simmer for 15 minutes.
  • Add drained beans.
  • Boil pasta water and add pasta.
  • Cook acording to package directions
  • Add cheese to sauce & stir, simmer till pasta is done.
  • Drain and add to sauce
  • Sprinkle with extra cheese.

Steps:

  • Cook pasta according to package directions. Meanwhile, combine flour, Parmesan cheese, salt and pepper in a shallow dish. Add shrimp; turn to coat, shaking off excess flour mixture. In a large skillet, melt butter over medium heat; add shrimp. Cook and stir until shrimp turn pink, 3-5 minutes. Remove and keep warm. , In the same skillet, heat oil over medium heat; add shallot. 1/3 cup sweet coconut milk
2 tablespoons lime juice
1 teaspoon garlic, minced
1 teaspoon red chili pepper flakes
1 teaspoon cumin, ground
1/2 teaspoon coriander, ground
1/4 teaspoon white pepper, ground
1 lb shrimp (13-15 with tails will work)
8 ounces wheat, shredded & thawed (Kataifi or shred your own Phyllo)

Steps:

  • Combine coconut milk, lime juice, garlic, chili flakes, cumin, coriander and pepper in a small bowl.
  • Add shrimp and toss. Marinate for 1 hour or more under refrigeration.
  • Preheat oven to 400°F.
  • Unroll the kataifi and separate a small bundle of strands about 1.5 inches wide. Using scissors, cut Kataifi strands to about 8 inches long.
  • For each shrimp, spread a Kataifi bundle on your work surface and wrap it around each marinated shrimp, leaving the tail uncovered. Wrap freeform or tightly compress for a more compact look.
  • His recipe calls for deep frying at 350F for 2 minutes each until brown and crispy, then draining on a paper towel.

2 oz hurricane sauce
1 Tbsp vegetable oil

1 C linguini noodles
5 slices French bread

Steps:

  • Hurricane Sauce: Mix together all ingredients in a sauce pot (excluding roux), bring to a boil, and whip in the roux. Turn heat down and let sauce simmer for 10 minutes. Hurricane Shrimp: Heat saute pan with oil, saute shrimp, add hurricane sauce, and toss well until all shrimp are coated. Garnish plate with scallions and sliced French bread.
