TOMATO SALAD, HUNGARIAN STYLE



Tomato Salad, Hungarian Style image

This is a June Meyer recipe & true to Hungarian deliciousness! Love this salad.

Number Of Ingredients 10

3-4 large tomatoes
1 cucumber, peeled
1 large green pepper (chopped) or 2 hungarian banana peppers
italian flat leaf parsley, roughly torn (a handful)
1 minced garlic clove
3 Tbsp white vinegar
1 tsp sugar
6 Tbsp oil (i use canola)
salt & pepper to taste
1/2 large onion (peeled & diced). (i use green onions instead)

Steps:

  • 1. Slice tomates and place in a large bowl. Peel cucumber & then score it (run fork tine along it) & slice. Add peppers, parsley, onion, and toss very gently.
  • 2. Mix the garlic, vinegar, sugar & oil. Pour this over the salad & gently stir. Add salt & pepper to your taste.
  • 3. Let sit, unrefrigerated, for at least 30 minutes. ENJOY!

Number Of Ingredients 10

3 or 4 large juicy fresh tomatoes
1 cucumber peeled, scored with a fork and thick sliced
2 banana peppers sliced or 1 green pepper seeded and chopped
1/8 cup of chopped Italian flat leaf parsley -OR- 1 tsp. of minced fresh dill
1 small peeled onion sliced thin
1 garlic clove minced
3 Tbs. of vinegar
1 tsp. sugar
6 Tbs. of oil
Salt and pepper

Steps:

  • Slice the tomatoes and place in salad bowl. Peel cucumber, score lengthwise and slice. Slice the banana peppers or chopped seeded green pepper. Add the chopped parsley or dill, sliced onion, minced clove and toss together. Add to bowl vinegar, sugar and oil. Toss again, taste and adjust seasoning by adding salt and pepper if needed. Let sit for 1/2 hour to mingle flavors.
