10 tablespoons olive oil
¼ cup seasoned rice vinegar
3 tablespoons white sugar, or to taste
2 tablespoons sesame oil
2 tablespoons soy sauce
1 tablespoon toasted sesame seeds

Steps:

  • Whisk olive oil, vinegar, sugar, sesame oil, soy sauce, and sesame seeds together in a bowl until dressing is evenly mixed.

This has been a salad I have used for ladies luncheons that I have catered. But, I have found that when I serve this with a steak...

fresh baby spinach enough for 8 servings
3 small cans mandarin oranges, drained well
1 c slivered almonds
1/2 c sugar
1/2 tsp dry mustard
3 Tbsp white vinegar
3 Tbsp *onion juice
1/2 c vegetable oil
3 Tbsp seseme seeds
arrange spinach, oranges and almonds on 8 plates

Steps:

  • 1. 1.Mix mustard, sugar, salt and vinegar 2.Add onion juice and stir 3.Add oil, slowly whisking constantly until blended 4.Add seseme seeds 5.Beat with mixer 2 minutes
  • 2. NOTE: A little drizzle over the spinach salad is all you need. This is NOT a dressing that you pour over all the salad. This makes a 1 cup amount and should drizzle 8 servings of salad.
  • 3. *Onion juice is found in a tall bottle packaged in a box. It's found in the spice section. It's expensive but will make several cups of this dressing.
  • 4. Many people sprinkle bacon over spinach salad but this would not do with this salad. It's unusual flavor would not be enhanced with bacon.

2 teaspoons white vinegar
1 1/2 teaspoons lemon juice
2 teaspoons finely minced onions or 1 1/2 teaspoons onion juice
1 1/2 teaspoons sugar or 1 1/2 teaspoons Splenda sugar substitute
1 1/2 teaspoons Dijon mustard
1/4 teaspoon dry mustard
1 cup mayonnaise, regular or 1 cup low fat
2 tablespoons chopped fresh parsley
1 hard-boiled egg, diced
salt
14 ounces ham, cut into strips
14 ounces cooked turkey breast, cut into strips
14 ounces swiss cheese, cut into strips
1/2 cup slivered sweet gherkin
1 head iceberg lettuce, shredded
12 -16 pimento stuffed olives

Steps:

  • Combine the first 6 dressing ingredients and stir to dissolve the sugar.
  • Add remaining dressing ingredients and mix well.
  • Combine the ham, turkey, cheese and pickles together in a large bowl.
  • Toss together with the dressing.
  • Divide the lettuce among plates, top with salad and garnish each plate with 2 olives.

This bacon dressing is to be served with Hudson's chicken sandwiches. The recipe for the chicken sandwiches is listed as well. This is a long sought after recipe from the Hudson's dept. store in the early 1900's.

5 slices bacon, diced
1/2 cup finely chopped yellow onion
vegetable oil
2 teaspoons cornstarch, mixed with
2 teaspoons water
1/2 cup white vinegar
1/2 cup water
1/4 cup sugar
salt and pepper

Steps:

  • Fry bacon til crisp. Remove the bacon with a slotted spoon and set aside. Add onion to bacon fat in pan and cook 5 minutes til onion is soft. With a slotted spoon, add onion to bacon. Pour bacon fat into a measuring cup and add vegetable oil to equal 1/2 cup. Add bacon fat to cornstarch mixture and reserve. Combine vinegar, water, sugar, salt and pepper in a small saucepan and heat to a boil. Add cornstarch mixture and cook til thickened (1-2 minutes). Remove from heat and add bacon and onion. Use while warm.

2 tablespoons White vinegar
1 teaspoon Soy sauce
1/3 cup Sugar
1/2 teaspoon Dry mustard
1 l Kosher salt - to taste
2 tablespoons Yellow onion, finely diced
1/2 cup Olive oil blend
2-1/4 teaspoons Sesame seeds, toasted (2 and 1/4 tsp)

Steps:

  • In a blender, combine the vinegar, soy sauce, sugar, dry mustard, salt and onion. Blend very well until the mixture is smooth with no chunks of onion.
  • With the motor running, add the oil in a slow steady stream, and blend until emulsified.
  • Remove from the blender, and stir in the toasted sesame seeds. (store in the refrigerator)

1 and 1/2 c. sugar
2 t. dry mustard
2 t. salt
2/3 c. vinegar
2 t. soy sauce
3 T. onion juice or 1/2 c. chopped onion
2 c. salad oil
3 T. toasted sesame seeds

Steps:

  • In a food processor or blender combine sugar, mustard, salt, vinegar and soy sauce on medium speed for about 20 seconds or until completely blended. Add onion juice or onions. Blend until smooth. With the motor running on low speed add oil slowly in a thin, steady stream. Mix until thickened. Pour into a refrigerator container and stir in sesame seeds.
