LIVELY HUCKLEBERRY BREAD PUDDING
Huckleberries in north Idaho are Purple Gold! This year was no exception! Our oldest Son and Family live in Colorado. We asked what he would like us to bring from home and of course his answer was huckleberries! If i were going to sell a gallon of huckleberries my price would be $120 a gallon! They aren't easy, but O, my they are so worth it =D While in Broomfield, CO we made this dessert for them! They don't normally eat left overs, but they did make an exception for this!

Steps:
- Line a 9x9x2" pan w/parchment paper, lightly spray w/olive oil.
- Melt butter in pan in microwave, sprinkle brown sugar over melted butter, covering the bottom.
- Arrange 1/2 the bread crumbs, add cubed cream cheese, sprinkle 1 1/2 cups of berries over breadcrumbs and cream cheese, top w/remaining bread cubes, sprinkle 1/2 cup of berries over the top.
- In a large bowl beat eggs, sweet cream, vanilla and huckleberry syrup till light and foamy, pour over bread mixture, cover tightly w/foil, refrigerate overnight.
- Remove from frig. about 1/2 an hour before baking. Bake at 350 degrees for 30 minutes, uncover and bake 30 minutes, until center is firm and surface is lightly browned.
HUCKLEBERRY PUDDING
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
- Combine huckleberry juice, 1/2 cup sugar, and 2 tablespoons flour in a saucepan; bring to a boil. Cook and stir until thickened, about 5 minutes. Stir in huckleberries; cook until tender, about 5 minutes. Pour into the greased baking dish.
- Mix 1 1/2 cup flour, 3 tablespoons sugar, baking powder, and salt together in a bowl. Cut in shortening until mixture forms coarse crumbs. Mix in milk and egg until dough comes together. Spread dough over huckleberry layer.
- Bake in the preheated oven until top is golden brown, 35 to 40 minutes.

Steps:
- Mix flour, sugar and baking powder together in a bowl.
- Mash the huckleberries and then combine them with the eggs, milk, vanilla and flour mixture.
- Place this mixture in a cloth wrapper and tie it securely.
- I believe Ms. Ruby used a cloth flour sack. Immerse this into a pot of boiling water and cook for 25 minutes.
- Untie, slice and serve with sweetened whipped cream.
