STEAK SEASONING FOR THE STEAK HOUSE

This is the exact recipe we used at a local steakhouse where I worked for 15 years. It is great on pretty much any meat. You will probably want to use the conversion tool to make smaller batches. However, it will hold for a long time so if you like it make a nice big batch.

Number Of Ingredients 8

3 (1 lb) boxes kosher salt
1 lb onion powder (sifted)
1 lb garlic salt
1 lb celery salt
1 lb paprika (sifted)
1 lb black pepper
1 lb sugar
1/2 lb nutmeg

Steps:

  • Mix well using a commercial mixer with a wire whisk if possible.
  • This makes enough for 1 week in a 200 seat steakhouse.

ALL PURPOSE HOUSE SEASONING



All Purpose House Seasoning image

This is my very own all purpose seasoning blend that I use on a daily basis. Will store on the counter up to 2 months. Will keep in the freezer for up to 12 months. Use anyplace you would use regular salt and pepper. Feel free to experiment with your favorite dried herbs and spices. I also keep smaller batches (just split a recipe) on the counter with 1 strip of dried lemon and another with 1 strip of dried lime in it. Simply peel a strip of the zest and leave it on the counter overnight to dehydrate it. I have yet another with dried mint in it.

1 cup kosher salt, do not substitute table salt
2 tablespoons cracked black pepper, substitute with ground pepper reduce to 1 TBSP
1 tablespoon instant minced onion, crushed
1 teaspoon celery seed
1 1/2 teaspoons instant minced garlic, crushed
1 1/2 teaspoons Old Bay Seasoning

Steps:

  • Crush dehydrated onion and garlic well.
  • Combine all ingredients and pour into a glass jar with a tight fitting lid.

This is the seasoning mix we use on practically everything at The Lady & Sons. Make it up to keep in your pantry so you can add a dash of Deen to any recipe that needs a little somethin' more.

1 tablespoon granulated garlic
1 tablespoon granulated onion
1 teaspoon granulated onion
1 tablespoon basil

1 tablespoon black pepper

Steps:

  • In a large bowl, mix 6 teaspoons House of Blues seasoning with ground beef (1 teaspoon per 8 ounces of beef). Form ground beef into six 8-ounce patties. Grill burger to desired temperature. Toast roll. Top with lettuce, tomato, and onion and cheese.
