Nice sauce for pasta found in the Sunday paper and adjusted to my liking. Feel free to play around with the amounts of red pepper and oregano depending on your tastes.

3 tablespoons olive oil
3 cloves minced garlic
1 (2 ounce) can anchovy fillets, i substituted anchovy paste,about 2 t
1 (1 ounce) can chopped tomato
1/2 cup pitted black olives, sliced or chopped
1 tablespoon drained capers (small ones)
1/4 teaspoon dried oregano
1 pinch dry crushed red pepper flakes (I like spicy so used about a tablespoon)
salt and pepper
1 tablespoon dried parsley

Steps:

  • Cook garlic in oil about 2 minutes, then add anchovies and mash together.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat and simmer, uncovered, stirring occasionally, till slightly thickened, about 20 minutes.
  • Serve over pasta.

Very easy fast meal to prepare. Sauce is not thick like spaghetti sauce but meant to be thin and soupy. The more peppers you use, the hotter it is. Serve with garlic bread to soak up the juice with your meal and a nice green salad to round the meal out. Add more or less spice, peppers, onion and garlic to your taste. The more garlic and onion the better. Add sliced spicy Italian links if desired.

1 lb penne pasta
2 (28 ounce) cans Italian-style diced tomatoes
1 head garlic, minced
1 large onion, chopped
2 tablespoons butter or 2 tablespoons margarine
serrano pepper (to taste, the more you use, the hotter the sauce)
1 lb fresh mushrooms
1/4 cup red wine
1 tablespoon basil
1 tablespoon oregano
1 large bay leaf
1 lb hot Italian sausage link, cooked according to the package instructions (optional)

Steps:

  • Melt butter in a large frying pan.
  • Add onion and garlic, cook until done but not brown.
  • Add both cans of tomatoes, spices, mushrooms, wine, meat (if using) and peppers to the onion and garlic mixture; simmer while pasta cooks and until peppers are dark green.
  • Cook pasta according to instructions; drain well.
  • Serve sauce over penne.

1 pound ground beef
1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
  • Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

After opening anchovies, always keep them refrigerated, or they become mushy. Use as necessary. Freshly grated cheese may be frozen until needed.

Yield makes 4 servings

Number Of Ingredients 12

3 tablespoons extra-virgin olive oil
2 tablespoons finely minced garlic
1 can (2 ounces) anchovy fillets, undrained
1 can (35 ounces) Italian plum tomatoes, drained and crushed
1/2 cup pitted black olives (preferably imported), coarsely chopped
1 tablespoon drained tiny capers
1/4 teaspoon dried oregano
Pinch of dried red-pepper flakes
Salt and pepper, to taste
2 tablespoons chopped fresh parsley
12 ounces dried linguine, cooked according to package directions
Freshly grated Parmesan (optional)

Steps:

  • 1. Combine the oil, garlic, and anchovies in a small bowl; mash into a paste.
  • 2. Place the paste in a saucepan along with the tomatoes, olives, capers, oregano, and red-pepper flakes. Bring to a boil, reduce heat and simmer, uncovered; stirring occasionally, cook until slightly thickened, about 20 minutes. Season with salt and pepper and stir in the parsley. (Makes about 4 cups of sauce.)
  • 3. Serve the pasta in shallow bowls, topped with the sauce. Pass the Parmesan!
