While this tamale pie has very little to do with its south-of-the-border namesake, it's a really delicious recipe all the same.

2 pounds ground beef
2 cups diced poblano peppers
1 teaspoon salt
1 (16 ounce) jar salsa
½ teaspoon dried oregano
1 teaspoon ground dried chipotle pepper
2 (8.5 ounce) boxes dry corn muffin mix (such as Jiffy®)
2 eggs
⅔ cup milk, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided
8 ounces frozen corn, thawed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Cook and stir ground beef in a Dutch oven over medium-high heat until meat starts to brown and release juices, about 5 minutes.
  • Reduce heat to medium and stir in poblano peppers, salt, salsa, oregano, and chipotle powder; cook and stir until seasoned beef is crumbly and no longer pink, about 10 minutes.
  • Mix one package of corn muffin mix in a large bowl with 1 egg and 1/3 cup of milk. Whisk to combine. In a separate large bowl, mix the second package of corn muffin mix with 1 egg, 1/3 cup of milk and half the Cheddar and Monterey Jack cheeses.
  • Spread the prepared corn muffin mixture without cheese into the prepared baking dish. Sprinkle corn over the muffin mix, followed by remaining half of the cheeses, then the beef mixture.
  • Spoon the corn muffin mix with cheese on top of the beef and carefully spread over the top with a fork, leaving about half an inch from the edges of the pan.
  • Bake in the preheated oven for 50-60 minutes, until golden brown.

1 medium onion, chopped
2 cans (14-1/2 ounces each) stewed tomatoes
2 cans (2-1/4 ounces each) sliced ripe olives, drained
1 medium green pepper, chopped
2 to 3 teaspoons taco seasoning

Steps:

  • In a large skillet, cook the beef and onion until meat is no longer pink; drain. Add the tomatoes, olives, green pepper and taco seasoning. Cook and stir over low heat until hot and bubbly. Serve with cornbread.

1 cup chopped onion
1/2 cup chopped green pepper
2 tablespoons butter
5 -6 hot dogs
1 (16 ounce) can pork and beans in tomato sauce
1 (12 ounce) can whole kernel corn (drained)
1 (8 ounce) can tomato sauce
1/4 cup chopped pitted ripe olives
1 garlic clove (minced)
1 tablespoon sugar
2 -3 teaspoons chili powder
1 1/2 cups shredded American cheese
3/4 cup yellow cornmeal
2 cups cold water
1/2 teaspoon salt

Steps:

  • Pre Heat oven to 375 degrees.
  • In a large skillet, cook onion and green pepper in butter til tender but not brown.
  • Cut Hot Dogs into 1/2-inch pieces. Stir into skillet along with beans, corn, tomato sauce,olives, garlic, sugar, chili powder and a dash of pepper.
  • Simmer uncovered, til thickened, about 30 minutes.
  • Add cheese. Stir until melted.
  • Turn misture into a greased 9 x 13 casserole dish.
  • Place 2 cups cold water in a sauce pan. Stir in corn meal and 1/2 teaspoons salt. Cook and stir until very thick (1/2 to 1 minute after mixture comes to a boil).
  • Spoon over the hot mixture forming a lattice design.
  • Bake at 375 degrees for 25 to 30 minutes.

1/2 cup sweet corn, canned, drained
1/2 cup black beans, canned

Steps:

  • Preheat oven to 350 degrees.
  • Mix together cornbread mix, egg substitute and applesauce. Set aside.

1.5 lb ground beef
1 large onion, finely chopped
1 tsp garlic clove, minced
1 tsp seasoned salt
1 pkg chili seasoning mix
1 lb canned tomatoes, undrained and chopped
1.5 c whole kernel corn, cooked
3.25 oz black olives, pitted and drained
1 c yellow cornmeal
1 tsp salt
2.5 c cold water
1/4 c pimento, chopped
1 c cheddar cheese, shredded

Steps:

  • 1. Brown ground beef in skillet, breaking up meat with fork.
  • 2. Add seasonings and tomatoes; simmer 5 minutes.
  • 3. Stir in corn and olives.
  • 4. Combine cornmeal, salt and water; cook, stirring, until thick.
  • 5. Add pimento.
  • 6. Line greased, shallow 2-quart baking dish with part of cornmeal mush.
  • 7. Pour in beef mixture and make a border of remaining mush around edge of baking dish.
  • 8. Bake at 350 about 40 minutes.
  • 9. Sprinkle with remaining cheese and bake 5 minutes longer.

1 can(s) red enchilada sauce
1 can(s) corn
1 box fiffy cornmeal muffin mix
2 c shredded mozzarella
1 small can 4 oz diced green chilies
1 1/2 tsp chili powder
1 tsp cumin

Steps:

  • 1. In a separate skillet brown grown Beef. Drain off fat. Add Cumin and Chili powder.
  • 2. In a pyrex mix up Jiffy Cornbread mix, gently fold in corn and green chilies. Pour into a greased Cast Iron Skillet.
  • 3. Heat oven to 400. Pour cornmeal mixture to bottom of Skillet. Bake for 25 min. or until golden brown. Remove skillet to heat safe counter top. Reduce heat to 350. Poke the cornbread with fork. Pour Enchilada sauce. Add meat Mixture ,then sprinkle evenly with cheese and cover with foil. Bake an additional 20 min.

Steps:

  • In a large nonstick skillet over medium heat, brown the beef and onion; drain.

  • Simmer for 5 minutes, then scrape into a 2 1/2-qt baking dish.

1 onion, diced

1/4 teaspoon pepper
1 -2 tablespoon chili powder (to taste)

1 (16 ounce) can red kidney beans, drained
1 (12 ounce) package corn muffin mix
1 cup evaporated milk
3/4 cup cheddar cheese, grated

Steps:

  • Brown ground beef, onion and green pepper. Drain grease.
  • Add salt, pepper, chili powder, tomatoes and kidney beans to meat mixture.
  • Let simmer while preparing the corn muffin mix.
  • Mix muffin mix per package instructions omitting any egg and using the 1 cup of milk.

1 c buttermilk or sour milk (1 T vinegar or lemon juice to enough milk to make cup total liquid-let this set for 5 minutes before adding to mixture
2 T veg oil

  • Preheat oven to 425. In a large skillet add ground beef and onion. Break up and cook until onion is tender and meat is browned. Drain off fat. Stir soup, tomato sauce, corn, olives, chili powder and pepper to meat mixture. Bring just to boiling and spoon into a 2-quart baking dish. Set aside. In a medium bowl combine cornmeal, flour, baking powder, baking soda and salt. In a small bowl whisk together egg, buttermilk, and oil, Add to cornmeal mixture, stir until batter is smooth. Spread over meat mixture and bake for 35 minutes or until top of crust in nice and brown. Serve warm.
