1 package (8 ounces) cream cheese, softened
1 teaspoon garlic powder
1 package (9 ounces) frozen creamed spinach, thawed
2 cups diced Swiss cheese
2 unsliced round loaves (1 pound each) Italian or French bread

Steps:

  • In a small microwave-safe bowl, beat cream cheese and garlic powder until smooth. Stir in spinach and Swiss cheese. Cover and microwave on high for 3-6 minutes or until cheese is melted, stirring occasionally., Meanwhile, cut a 4-in. circle in the center of one loaf of bread. Remove bread, leaving 1 in. at bottom of loaf. Cut removed bread and the second loaf into 1-1/2-in. cubes. Spoon hot spinach dip into bread shell. Serve with bread cubes.

This skinny spinach dip is made with Greek yogurt! It's just as creamy and delicious as you'd expect but with less fat and more protein. It comes together in just a few minutes so it's perfect for a party!

2 cups fresh spinach
8 oz low-fat cream cheese or Greek yogurt cream cheese
2 tablespoons plain Greek yogurt
3/4 cup shredded cheddar cheese
1/4 cup shredded parmesan cheese
1/4 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Add the spinach to a large skillet and cook over medium heat for 2-3 minutes, stirring frequently, until the spinach has wilted.
  • Let the spinach cool slightly then transfer to a paper towel and wring out the excess water.
  • Place the spinach on a cutting board and roughly chop.
  • In a large bowl, mix the cream cheese and greek yogurt until combined.
  • Stir in the cheddar, parmesan, garlic powder, & salt, and mix well.
  • Stir in the spinach.
  • Just before serving, microwave on medium heat for 30 seconds and stir. Repeat until heated all the way through.

1 box frozen chopped spinach, thawed and drained
1 (16 ounce) container sour cream
1/3 cup mayonnaise
1/2 package Knorr vegetable soup mix
1/2 cup cheddar cheese
1/2 cup shredded parmesan cheese (NOT the powdered kind)
tortilla chips or salsa

Steps:

  • In mixing bowl, stir together spinach, sour cream, mayonnaise, soup mix, and cheeses.
  • Transfer to casserole dish.
  • Bake at 350 F for 15-17 minutes.
  • Serve with tortilla chips and salsa, if desired.

1 clove garlic, peeled and minced
¼ teaspoon salt

Known in Turkey as caçik, this garlicky mixture of green vegetables, fresh herbs and yogurt can be served as a salad or as a dip with pita and raw vegetables. Traditionally, caçik is made with a number of vegetables, including cucumbers, cabbage and beets.

1 6-ounce bag baby spinach
2 plump garlic cloves, halved, green shoots removed
Salt, preferably kosher salt, to taste
1 tablespoon freshly squeezed lemon juice (more to taste)
2 tablespoons chopped fresh dill
1/2 cup finely chopped parsley
2 tablespoons chopped fresh mint, or 1 teaspoon dried mint
2 to 3 tablespoons extra virgin olive oil
2 cups thickened yogurt or thick Greek style yogurt
1 bunch scallions, chopped (optional)

Steps:

  • Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. When the water comes to a boil, add the spinach and blanch for 10 to 20 seconds. Transfer to the ice water, cool for a minute, then drain and squeeze dry. Chop coarsely.
  • Place the garlic in a mortar and pestle with 1/2 teaspoon salt and mash to a paste (alternatively, finely mince). Combine with the lemon juice and olive oil, and let stand for 10 minutes. Stir in the yogurt.
  • In a medium bowl, combine the chopped spinach, dill, parsley and mint. Stir in the yogurt and garlic mixture, and the optional scallions. Add freshly ground pepper to taste and more salt if desired. Serve with bread, pita or raw vegetables.
