BUFFALO MEAT CHILI image

Yield 10 Bowls

Number Of Ingredients 18

2 lb Ground Buffalo meat
1 onion diced
1 yellow or any sweet pepper
6 cloves minced garlic
3T olive oil
2t oregano
2T chili powder
1 or 2t chipotle chili powder or pepper (heat desired)
2t ground cumin
1 t ground coriander
1 bay leaf
pinch of cinnamon
2T sea salt
1T ground black pepper (or salt and pepper to taste)
1t sugar or 1/2 packet Stevia
1 15 oz can of Black Beans (or beans of your choosing)
1 24 oz can San Marzano Tomatoes (diced or whole)
2T tomato paste

Steps:

  • Saute onion and garlic in dutch oven. Add in sweet pepper. Once translucent, add in all other spices with exception of sweetener. Once blended, add can of tomatoes with all juices. Cook over medium heat until juices reduce. Stir in water, tomato paste, and Stevia, continue cooking. After 20 minutes, add in drained beans. Stir and cook. Continue adding water to get choice consistency. Serve when hungry!
