Quick, simple, and an excellent offering for a Mexican-themed buffet or cocktail party. Serve with scoop-style corn chips. This makes enough for a crowd, but half can be frozen for later use.

- Saute onion in oil. Add cheeses and stir until smooth. Add seafood and seasonings, stir. Serve in a heated chafing dish with chips.

- 1. In medium microwave-safe bowl combine cream cheese and salsa. Microwave on high for 1 to 2 minutes or until warm, stirring once.2. Stir in crabmeat. Microwave on high for 30 seconds to 1 1/2 minutes or until heated through. Garnish as desired. Serve with crackers.

Steps:
- Heat oven to 450. Lightly spray a small casserole dish, set aside. In small skillet, over med-high heat, add oil, then garlic. Cook, stirring, until browned, about 2 mins.
- Place garlic in medium bowl. Add mayonnaise, celery, green onion, lemon juice, parsley, horseradish, mustard, thyme and red pepper flakes. Mix well. Lightly fold in crabmeat. Season w/ salt and pepper to taste.
- Spoon crabmeat mix into casserole dish. bake about 15 mins, or until light brown. Serve w/ crisp bread rounds, crackers and cut veggies.
