For those of you who love the taste of curry. I'm not sure where I got this recipe from. It's on an old 3 x 5 index card.

Number Of Ingredients 8

2 (3 ounce) packages cream cheese, softened
1/4 cup evaporated milk (I use the Pet brand for this recipe I like the flavor better)
2 tablespoons lemon juice (fresh no subs.)
1 tablespoon grated onion (very fine)
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/2 teaspoon curry powder
10 ounces shrimp, cooked and deveined finely chopped (I use fresh shrimp and I boil the shrimp in water, 1 teaspoon butter and a dash of garlic powder. Ho)

Steps:

  • Mix all the ingredients in a 1 1/2 quart bowl until smooth.
  • Cover and chill overnight allowing the flavors to blend.
  • Serve with your favorite crackers.

GRILLED SHRIMP WITH COCONUT CURRY DIP AND PEANUTY NOODLES

Cooking spray
2 pounds large or jumbo shrimp, peeled and deveined
Salt and freshly ground black pepper
2 tablespoons salt-free lemon and herb seasoning
1 (14-ounce) can coconut milk
1 tablespoon sugar
1 teaspoon curry powder
1/4 teaspoon ground ginger
2 tablespoons chopped fresh cilantro leaves
12 ounces somen noodles
1 tablespoon reduced-sodium soy sauce
2 teaspoons sesame oil
1/3 cup chopped dry-roasted peanuts

Steps:

  • Heat a stove-top grill pan or griddle with cooking spray and set over medium-high heat. Season shrimp all over with salt, black pepper and lemon and herb seasoning. Place shrimp on hot pan and cook 2 minutes per side, until bright pink and cooked through. In a medium saucepan, stirring with spoon, combine coconut milk, sugar, curry powder, and ginger. Set pan over medium heat and bring to a simmer, for 5 minutes. Remove from heat and stir in cilantro. Cook somen noodles according to package directions. Drain noodles and transfer to a large bowl. Add soy sauce and sesame oil and toss to coat with tongs. Transfer to a serving plate and top with peanuts. Serve half of the shrimp with all of dip and noodles. Reserve remaining shrimp for Island Rice, if desired.

HOT CREOLE SHRIMP DIP

I came across a recipe for hot crawfish dip, and it sounded delicious, but we don't have a lot of crawfish available in my area. However, I'm a big fan of shrimp, so I used that instead. This Creole shrimp dip has become a family favorite. You can increase the heat with your favorite hot sauce or add a bit of acidity with a squeeze of lemon. -Jill Burwell, Renton, Washington

1/2 cup butter, cubed
8 green onions, thinly sliced
1 small green pepper, finely chopped
1 pound peeled and deveined cooked shrimp (61-70 per pound)
1 jar (4 ounces) diced pimientos, drained
2 garlic cloves, minced
2 teaspoons Creole seasoning
1 package (8 ounces) cream cheese, cubed
Chopped fresh parsley
French bread baguette slices or assorted crackers

Steps:

  • In a Dutch oven, melt butter over medium heat. Add green onions and green pepper; cook and stir until tender, 3-4 minutes. Add shrimp, pimientos, garlic and Creole seasoning. Cook and stir until heated through. , Stir in cream cheese until melted; sprinkle with parsley. Serve with baguette slices or crackers.

Found the original recipe in an older Gourmet magazine but have made a few changes along the way. Makes a lot and can be halved. Also it can be made 1 day ahead. Gets very positive comments from guests!!! enjoy

1 lb medium shrimp (cooked and chopped)
8 ounces cream cheese, softened
1/3 cup chutney (chop big pieces)
1/2 tablespoon curry powder (I use med. hot)
2 small garlic cloves, crushed
1/2 cup sour cream
1/4 teaspoon salt (to taste)

Steps:

  • Stir together cream cheese, chutney, curry powder and garlic until smooth.
  • Stir in shrimp, sour cream and salt (if used).
  • Store in fridge.
  • Serve with melba crackers or pumpernickle bread.

My family's Beach Vacation Fun Dip. We eat this at the pool or while playing cards. A recipe to try at least one time and you'll be hooked. This dip will keep in the fridge for 1 week, But I doubt it will last 1 day!

1 (8 ounce) package frozen baby shrimp (thawed and finely chopped)
1/2 cup sweet onion (finely diced)
4 ounces shredded mild cheddar cheese
4 ounces shredded monterey jack pepper cheese
1/4 cup crumbled bacon
3 tablespoons Miracle Whip
3 tablespoons sour cream
1 tablespoon lemon juice
1 tablespoon dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic salt
1 teaspoon chopped parsley
1 teaspoon chopped chives
1 teaspoon basil
1 teaspoon curry powder
2 teaspoons Old Bay Seasoning
2 teaspoons Tabasco sauce or 2 teaspoons texas pete hot sauce
1 teaspoon paprika
1 tablespoon Worcestershire sauce

Steps:

  • Add ingredients, except the Paprika, in the order given and thoroughly mix, with a mixer, on low to med.
  • speed until all ingredients are blended.
  • Refrigerate for 1 hour, or if you like it warm, place the dip in a glass casserole dish and bake for 20 minutes on 350° or until hot & bubbly.
  • Sprinkle top with paprika and serve with celery sticks, Crackers or Pieces of Sour Dough Bread, or even serve it in a Bread Bowl for Parties.
