This delicious recipe is courtesy of Clay Aiken, from "American Idol." It will definitely be a great addition to any summer get-together!

Number Of Ingredients 6

One 20-ounce can pineapple tidbits with juice
1 cup sugar
6 tablespoons self-rising flour
2 cups grated medium-sharp cheddar cheese
1 sleeve Ritz crackers, crushed
1/2 cup (1 stick) unsalted butter, melted

Steps:

  • Preheat oven to 350 degrees. In a medium bowl, combine pineapple, sugar, flour, and cheese. Transfer to an 8-by-8-inch, 1 1/2 quart baking dish. Top with crushed crackers and drizzle with melted butter. Bake for 35 minutes. Let stand 10 minutes before serving.

4 chicken breasts
1 stalk celery, chopped
1/2 onion, diced
3/4 cup pineapple tidbits
1 cup almonds, sliced
1 (12 ounce) bag croutons, slightly crushed
1 cup mayonnaise
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 400°F.
  • Fry or bake chicken breasts, then cut into bite-sized chunks.
  • Mix chicken, celery, onion, pineapple, almonds, croutons and mayonnaise. Spray 9 x 13 baking dish; add mixture.
  • Sprinkle shredded cheese over top and bake for 10-15 minutes or until cheese is melted.

1 can(s) pineapple chunks, reserve juice
8 oz cream cheese
12 large marshmallows
1 c grated cheddar cheese
1 egg
1/2 c sugar
2 Tbsp self rising flour

Steps:

  • 1. Place pineapple juice in top of double boiler.
  • 2. Beat in egg, sugar and flour. Cook until thickened.
  • 3. Place pineapple in baking dish. Cut cream cheese into small pieces on top of pineapple. Add marshmallows.
  • 4. Pour cooked mixture over all. Top with grated cheese. Cook 10 minutes in a 450 degree oven or until bubbly. Serve hot. It is good with any type of pork dish or as a dessert.

1 lb cooked lobster meat, sliced
2 tablespoons butter
2 tablespoons yellow bell peppers, chopped
2 tablespoons flour
3/4 cup chicken broth
1/4 teaspoon curry powder
1 (8 ounce) can pineapple chunks, drained
1/4 cup water chestnut, chopped
1/4 cup cashew nuts

Steps:

  • Melt butter in saucepan.
  • Sauté bell pepper in butter for 3 minutes.
  • Stir in flour to coat bell peppers.
  • Gradually stir in broth and curry powder.
  • Cook over low heat, stirring constantly until mixture thickens - about 5 minutes.
  • Stir in pineapple chunks, water chestnuts, cashew nuts and lobster pieces.
  • Heat thoroughly before removing to serving platter lined with lettuce.
